November Hours of Operation Clubhouse & Pro Shop facilities closed on Mondays Now that all leagues have concluded, I would like to congratulate Peggy Williams for being crowned Female Player of the Year and former EKU collegiate standout Patrick Williams for taking home Male Player of the Year honors. Furthermore, I would like to thank all the ladies for a fun-filled evening at the season ending banquet. You girls rock! We look forward to hosting the guys on November 11th. We will also be having fantastic weekly specials for Members to enjoy. Our latest Club Event, Rat Pack Night, was a great success with live music, specialty drinks, and delicious food. We are really looking forward to our Christmas Party and hope everyone will participate, as it will be one of our biggest events to date. Lastly, I can t stress enough my appreciation for your help in growing our Club. As you know, we have great prizes up for grabs until the new year. Please help us by encouraging your neighbors, friends, and co-workers to join the best Club around, and you will be entered to win! Nominations to fill this spot will be received beginning November 15, 2014, and will conclude November 30, 2014. After this year, two at-large board memberships will rotate annually. The successful candidate in this election will serve a three-year term commencing on January 15, 2015. You will be receiving an announcement letter via mail from our current Chair of the Arlington Association Board of Directors, Barry Poynter, within the next week. Page 8 Recipe of the Month Zucchini Tomato Casserole Ingredients Stop by the Club House and check out our NEW 2014 EKU Golf Team display! 1 1/2 cups grated cheddar cheese 1/2 teaspoon dried oregano 1/3 cup grated parmesan cheese 1/2 cloves garlic, minced 1/2 teaspoon dried basil Salt and pepper to taste 2 medium zucchinis, thinly sliced 5 plum tomatoes, thinly sliced 1/4 cup butter 2 tablespoons finely chopped onion 3/4 cup fine bread crumbs Directions 1. Preheat oven to 375 degrees F. Lightly butter a 9x9-inch pan. 2. In a large bowl, combine cheddar, parmesan, oregano, basil, and garlic. Season with salt and pepper, and set aside. 3. Arrange half of the zucchini slices in the pan. Sprinkle 1/4 of the cheese and herb mixture on top. Arrange half of the tomatoes, and top with another 1/4 of the cheese mixture. Repeat layers. 4. Melt butter in a skillet over medium heat. Stir in onions, and cook until soft and translucent. Stir in breadcrumbs; cook until they have absorbed the butter. Sprinkle on top of casserole. Cover loosely with foil, and bake in a preheated oven for 25 minutes. Remove foil, and bake until the top is crusty and the vegetables are tender; about 20 minutes. L-222
