12/26/2015 bakedzitiwithveggies Veggie Packed Baked Ziti Meat Free But Delicious Meal In One This may seem high in Points, but keep in mind it includes the sides. *Points+ Value: 8 Calories: 301 Fat: 12 Carbs: 31.1 Fiber: 4.6 Protein: 16 Servings: 4 Ingredients: 4 ounces uncooked ziti 1 tablespoon olive oil 2 cups chopped yellow squash 1 cup chopped zucchini 1/2 cup chopped onion 2 cups chopped tomato 2 garlic cloves, minced 1 1/2 cups (6 ounces) shredded part skim mozzarella cheese, divided 1 1/2 teaspoons dried basil 1/2 teaspoon dried oregano 1 teaspoon Mrs. Dash Garlic and Herb or Original 3/4 teaspoon salt, divided pinch ground red pepper 1/3 cup part skim ricotta cheese 1 large egg, lightly beaten Cooking spray DIRECTIONS: Cook pasta according to package directions for al dente, omitting salt and fat; drain. Preheat oven to 400. Heat a large skillet over medium high heat. Add oil to pan. Add squash, zucchini, and onion; sauté 5 minutes. Add tomato and garlic; sauté 3 minutes. Remove from heat; stir in pasta, 1/2 cup mozzarella, basil, oregano, Mrs. Dash, red pepper, 1/2 teaspoon salt, and pepper. Combine ricotta, remaining salt, and egg. Stir into pasta mixture. Spoon into an 8 inch square glass or ceramic baking dish coated with cooking spray; sprinkle with remaining mozzarella. Bake at 400 for 15 minutes or until bubbly and browned. Cooking Tips: Be sure to follow instructions for tomatoes and garlic. They don't need to cook as long as the squash, zucchini and onion. Picky Eater Tips: Cook some extra pasta and chop up some extra tomatoes. Put tomatoes and a pinch of garlic powder and salt in microwave safe bowl, cover with plastic wrap and cook on high for 1 minute. You want tomatoes to be soft, so put back in if needed for another 20 seconds. Taste for seasoning, then mash with a fork. Add more garlic powder or salt if needed. In microwave safe serving bowl, put pasta, top with tomatoes and 1/2 cup mozzarella cheese. Microwave again for 30 seconds or until cheese melts. Slow Cooker Orange Beef Freezer to Slow Cooker Fake Out/Take Out We are introducing a new concept today. Many freezer to slow cooker meals require seperate bags within the main freezer bag; So buy a box of super inexpensive "food storage" bags for the "iinner bag storage" to save money on the more expensive freezer bags. *Points+ Value: 6 Calories: 259 Fat: 7.7 Carbs: 10.8 Fiber: 4 Protein: 31.1 Servings: 6 Ingredients: 2 pounds beef round shoulder Sauce: 1 cup orange juice 2 teaspoons minced garlic 3 Tablespoons soy sauce 2 teaspoons dark sesame oil 1 beef stock cube 1/8 cup sugar Veggies: 3 medium bell peppers, cut in strips (any variety of colors) 1 medium sweet onion, sliced 1/8 cup chicken stock (optional) To Thicken (optional): 2 Tablespoons cornstarch 4 Tablespoons water Directions: Put the orange juice, soy sauce, sesame oil, stock cubes and sugar in a small bowl. Allow to rest while slicing into 1/4 inch thick strips (against the grain). Return to sauce and break up stock cubes; stir sauce until smooth. To Freeze: Label a one or two gallon freezer bag with name of recipe, date, and cooking instructions. Put peppers and onions in separate storage bag. Pour sauce into a sandwich bag and seal tightly. (Note: If you are using a 2 gallon freezer bag, you can put sauce in a small tupperware container.) To labelled freezer bag, add beef strips, then prepared bag with onions/peppers as well as prepared sauce bag. To Cook: Add contents of sauce bag and beef strips to slow cooker. Cook on low for 4 6 hours. You have two choices for cooking the peppers and onions. Either 1) Add peppers then turn slow cooker to high the last 45 minutes of cooking OR (our preferred method) 2) About 10 minutes before serving time, place the onion and peppers in a baking dish large enough to easily hold them and add about 1/8 cup of water or chicken broth. Cover the container with microwave safe plastic wrap, and poke a few holes in the plastic wrap. Microwave the bell peppers and onions for five to six minutes, stirring the peppers and onions about halfway through the cooking time. To Serve: If sauce is too thin, stir together 2 Tablespoons cornstarch and 4 Tablespoons water until smooth. Add to slow cooker, stir, then cook for 2 minutes on high, stirring occasionally. Add peppers and onions, then stir. Serve over rice. Cooking Tips: My tips on this one are to read the instructions and follow them. The only other thing I will add is to make sure that peppers and onions are desired crispness when you take them out of microwave (if using this method). Don't skimp on the beef stock cube.
