Experience life as a culinary student as you learn the essentials of professional cooking knife skills, kitchen terminology, safety and sanitation. You will work in state-of-theart kitchens making dishes such as multi-colored fresh pasta, ravioli and bass baked in banana leaves. WORLD CUISINE In this exciting hands-on camp, you will learn basics such as kitchen safety, sanitation and knife skills. You will tour the exotic flavors of South America and India, and the colorful tastes of the Caribbean, Mediterranean and South East Asia. This class is a creative international approach to cooking that ensures an exciting culinary journey. ADVANCED CULINARY Take the next step in your culinary education! Build on the skills and principles you learned in basic culinary camp to make more complicated dishes sausage meat, stuffed chicken ballotine, bass with fresh Thai curry, vegetable terrines, cold soup and more. Pre-requisite: BASIC BAKING AND PASTRY Think dessert is the best part of the meal? You won t want to miss this comprehensive introduction into the world of professional baking and pastry. Work in our industrial pastry kitchens and our specialized chocolate and sugar kitchen as you learn the basics of baking like yeast dough and meringue, to fruit tarts, éclairs, quick breads and cakes. ADVANCED BAKING AND PASTRY Sweeten up your dessert-making skills with this intensive week-long camp. Kendall culinary faculty will show you how to make delectable mousse-based cakes, ice creams, chocolate decorations, savarin, molten chocolate desserts and more! You ll also attend an advanced sugar pulling and blowing demonstration. Pre-requisite: Basic Baking and Pastry UP TO $ 10O OFF * IF YOU REGISTER EARLY! BACKPACK TO BOARDROOM is a fun and educational camp that focuses on various business concepts and skills required in today s business world. You will learn leadership, teamwork, business/ social etiquette and the art of networking. Campers will gain an understanding of different career paths in both the business and hospitality industry using hands-on techniques and experiences. FOOD PHOTOGRAPHY AND STYLING Learn the art of commercial photography by photographing and styling food photos that can be used for advertisements, menus, or cookbooks and your first professional portfolio. Photos will be shot in professional kitchens, farmer's markets and Chicago-based photography studios. KENDALL ULTIMATE CULINARY CHALLENGE In the Ultimate Challenge camp, you will learn basics such as kitchen safety, sanitation and knife skills; then you will be split into smaller groups. Your team will use creativity, newfound culinary skills and ingenuity to create a delicious meal. Our faculty chef and assistants will serve as team coaches and help to create a main course consisting of proteins, starch and seasonal vegetable. Your team will work together to create a family meal and then be critiqued on presentation, timeliness, teamwork and use of the secret ingredients. At the end of this camp, you will leave confident in your culinary ability and be inspired to cook. *$100 off total class fee if you register before December 31, 2017 or you can receive $50 off of the total class fee for applications received before February 28, 2018.

SPEND YOUR SUMMER WITH US! Kendall College s Teen Camps immerse you in the world of culinary arts, event planning or college prep for one week or the entire summer. Learn, play, eat, explore and experience all that Kendall and Chicago have to offer. Beyond the skills learned in the kitchen or classroom, campers will also enjoy Chicago in the evenings before returning to their accommodations. Whether it be going to the theatre, touring Chicago by bus or boat, playing at Dave and Buster s or WhirlyBall or eating at a fine dining restaurant, teens will definitely expand their horizons. All campers who attend Summer Culinary Camp are awarded a $1,000 Scholarship towards tuition at Kendall College. The scholarship is awarded evenly over the first three quarters of full-time enrollment. OVERNIGHT ACCOMMODATIONS Campers will stay in apartment-style student housing in the heart of Chicago just steps from great cultural institutions, shopping and entertainment from Millennium Park to the historic Magnificent Mile to the Art Institute of Chicago. The units feature high-quality furnishings, spectacular views of the city and 24-hour security. Camp counselors will also stay on-site in the dorm to enforce safety, security and curfew.
