Order a copy of your credit report annually from the three credit reporting agencies. Make sure the reports are accurate and include only accounts that have been authorized by you. Pay attention to billing cycles, if a bill fails to appear on time, it may have been taken from the mail. If this happens, contact the creditor. Carefully safeguard all credit card, bank, and other financial statements. When disposing of these records the use of a paper shredder is recommended. Always make Internet purchases through a secured web path or website. Be wary of anyone calling to "confirm" personal information. Keep an eye out for recently requested credit cards, checks, or ATM cards that will be mailed to you. If they are late, report them to the company as soon as possible. Provide your Social Security number only when absolutely necessary. Ask to use other types of identifiers when possible. Remove your Social Security and driver's license number from your personal checks or other forms of identification. As a consumer, you have the right to prevent your name and personal information from being distributed to companies, marketers, or government agencies. EGGS BENEDICT 8 pieces of bacon or 4 pieces of Canadian bacon 2 tbsp. chopped parsley 4 eggs 2 tsp. white or rice vinegar 2 English muffins Butter Blender Hollandaise 10 Tbsp. unsalted butter 3 egg yolks 1 Tbsp. lemon juice 1/2 teaspoon salt Dash of cayenne or tabasco METHOD 1. Heat a large skillet on medium low heat. Add the bacon or Canadian bacon. Slowly fry, turning occasionally, until browned on both sides, and if using bacon, much of the fat is rendered out (about 10 minutes). Use tongs or a fork to remove the bacon from the pan, set on a paper towel to absorb the excess fat. 2. While the bacon is cooking, bring a large saucepan two-thirds-filled with water to a boil, then add the vinegar. Bring the water to a boil again, then lower the heat to a bare simmer. 3. Blender hollandaise. Melt 10 Tbsp. unsalted butter. Put 3 egg yolks, a tablespoon of lemon juice, 1/2 teaspoon salt in a blender, blend on medium to medium high speed for 20-30 seconds, until eggs lighten in color. Turn blender to lowest setting, slowly dribble in the hot melted butter, while continuing to blend. Taste for salt and acidity and add more salt or lemon juice to taste. Transfer to a container for pouring and set it in a warm but not hot place. 4. Poach the eggs. Using one egg at a time, crack egg into a small bowl and slip it into just simmering water. Once it begins to solidify, slip in another egg, until all four are cooking. Turn off the heat, cover the pan, and let sit for 4 minutes. (Remember which egg went in first, you'll want to take it out first.). Gently lift out with a slotted spoon. Note that the timing is a little variable on the eggs, depending on the size of your pan, how much water, how many eggs, and how runny you like them. You might have to experiment with your set-up to figure out what you need to do to get the eggs exactly the way you like them. 5. As soon as all the eggs are in the poaching water, begin toasting English muffins. Assemble: butter one side of English muffin. Top with 2 slices of bacon/ 1 slice of Canadian bacon. Trim bacon to fit muffin. Put a poached egg on top of bacon, pour hollandaise over and garnish. EAT RED FOR BETTER HEALTH! Apples, tomatoes and cranberries all help keep the doctor away. Tomatoes Eating lycopene-rich foods such as tomatoes more than five times a week over an 11-year period reduced coronary disease risk by 26% in study patients. Lycopene is an antioxidant compound that gives tomatoes their color. It's best to eat tomatoes cooked, because the heating process allows lycopene to be better absorbed. Apples An apple a day can reduce LDL (bad) cholesterol by as much as 40% percent, according to a new, small Ohio State University study. Also, the Iowa Women's Health Study, found a link between apple eating and a lowered risk of dying from heart disease. Munch on the fruit rather than drink the juice; the peels house the most antioxidants. Cranberries Drinking 3 cups of cranberry juice daily can raise HDL (good) cholesterol levels by 10% and reduce heart disease by 40%, a study at the University of Scranton in Pennsylvania showed. Plus, the juice decreased diet-caused atherosclerosis (clogging of the arteries) by preventing plaque from forming. If you can't quite stomach three glasses, one or two also have benefits.
