Spur serves a variety of classic steakhouse cuts both on and off the bone. When deciding on a cut of beef, the amount of marbling is important. Marbling the small streaks of fat spread through the meat differs from cut to cut and adds flavour and succulence. The position of the cut also influences the tenderness of the steak. 1. T-Bone Steak The original speciality steak. This cut gives you the best of two worlds: the tenderness of fillet and the juicy flavour of sirloin joined at the bone in a T that can only stand for one thing: TASTY! 2. Chargrilled Rump With the most marbling and a coarser texture, this cut is extra juicy, and exceptionally flavoursome. As far as steaks go, the rump is every meat lover s unsung hero. 3. New York Sirloin Reputed to be the tastiest cut of beef, the sirloin falls somewhere between the fillet and the rump in terms of texture.
