Martini, Napa, California $40.00 Cassis, blackberry & kirsch, with hints of licorice & vanilla; best with steak : Sustainable farming promotes winegrowing practices that are socially responsible and environmentally sound. Vineyard practices can include: planting cover crops to provide nutrients, using organic fungicide & pesticides, installing owl, blue bird and bat boxes for rodent & bug control, using sniffer dogs for bug control, installing bee hives to help pollinate vines and keep vines free of harmful insects, planting gardens on vineyard property, using bio diesel in tractors and using drip irrigation. Winery practices can include: using solar power, composting, recycling and printing labels on recycled paper.

Terroir concepts: Terroir farming concepts are centered around the idea that the geography of a winery is what makes the wine special. It s a French concept, the best example of which is the Burgandy region. The characteristics from this region are similar, yet each plot is different because of the terroir. To keep that distinct taste it s in the wineries best interest to maintain the integrity of the soil, air and water in their vineyard. Environmentally Friendly Farming: Wineries strive to maintain the integrity of the soil by putting as few chemicals or pesticides in to the ground as possible. They utilize some of the sustainable concepts. Organic Wines: There are two different concepts to organic wines. Many wines use organically grown grapes, however they will add sulfides to their wines to help with preservation over time. These wines are not fully organic. Fully organic wines are made from organic grapes and contain no sulfides; these wines do not keep or age well and need to be consumed within a specific time. Organic grapes are grown with no chemicals. Biodynamic Farming: Biodynamics treats a farm as complete eco-system. It combines the elimination of chemicals with completely sustainability practices and follows the earth s natural rhythms. Everything must be recycled into a nutrient system so the vineyard leaves no footprint. Viticulture programs: These programs can include concepts like Vertical Viticulture which means hillside vineyards are planted "vertically" following the rise of the terrain, rather than across it. This concept requires the use of a cover crop to hold back erosion. Mechanical tilling of the soil is minimized as is the resulting need for fossil fuels.
