Slow Cooker Chicken Cock-A-Leekie Soup Yield: 4-5 Servings Time: 15 minutes hands on, 7-8 hours cook time 1 bone-in chicken breast 2 leeks, sliced and cleaned 2-3 carrots, chopped ¼ cup barley ½ onion, chopped 1 bay leaf ½ tsp. thyme 1 32 oz. box chicken broth Salt and pepper to taste Dried prunes, diced, for topping Place chicken breasts in the slow cooker. Add leeks, carrots, barley, onion, bay leaf and thyme to slow cooker. Pour chicken broth over all ingredients. Cook on high for 5-6 hours or low for 7-8 hours. Remove chicken breasts and take meat off of bones. Return meat to the soup. Serve with diced prunes. Pressure Cooker Version Add all ingredients, except prunes to the pressure cooker pot. Set for 30 minutes cook time. Do a quick pressure release. Remove chicken and shred. Return chicken to pot and stir to combine. Serve topped with diced prunes.. Serving Suggestion: Bread, Salad Notes: Use remaining onion as a salad topper.

Corned Beef and Cabbage Yield: 3 Servings Time: 5 minutes hands on, 6-8 hours cook time 1 ½ lbs. corned beef brisket with spice packet Apple juice ¼ head of cabbage, chopped Place the brisket in the slow cooker. Sprinkle the spices from the spice packet over the brisket. Add just enough apple juice to over the brisket. Cook on low for 6-8 hours. The last hour of cooking, add the chopped cabbage. Serving Suggestion: Irish Soda Bread Notes: Remaining cabbage would be great for coleslaw to go with Zingy BBQ Chicken.

Zingy BBQ Chicken in the Slow Cooker Yield: 3 Servings Time: 5 minutes hands on, 7-8 hours cook time 3 boneless, skinless chicken breasts ½ cup BBQ sauce ½ cup Italian dressing Place the chicken in the bottom of the crockpot. Mix together the BBQ sauce and the dressing and pour over the chicken. Cook on high for 5-6 hours or on low for 7-8 hours. Pressure Cooker Version Add all ingredients to the pressure cooker pot. Set for 15 minutes cook time. Do a quick pressure release. Serving Suggestion: Potato Salad, Cucumbers and Onions Potato Salad Yield: 3-4 Servings Time: 20 minutes hands on, 20 minutes cook time 3 potatoes, peeled and chopped ¼ cup chopped onion ¼ cup chopped sweet pickles 2 eggs, hard boiled and chopped 1 stalk celery, diced ½ cup Miracle Whip 1 ½ tsp. sweet pickle juice ½ tsp. yellow mustard ½ tsp. paprika Salt and pepper, to taste Boil the potatoes in a 3-quart saucepan until they are tender, about 20-25 minutes. Drain and run under cool water to stop the cooking process. Put the potatoes in a large bowl and add all other ingredients. Taste for salt and add more if needed. Refrigerate several hours before serving. Cucumbers and Onions Yield: 4-5 Servings Time: 10 minutes hands on 2-3 cucumbers, peeled and sliced ½ onion, peeled and sliced ½ cup sugar ¼ cup vinegar Mix up the sugar and vinegar and pour it over the cucumbers and onions.

Bean and Cheese Burritos using Slow Cooker Freezer Beans Yield: 8-10 Servings Fill Your Freezer! Time: 10 minutes hands on, 7-8 hours cook time + soaking time ½ lb. dry pinto beans ½ lb. dry black beans 5 cloves of garlic, crushed 1 onion, diced ½ jalapeno, seeds removed and diced ¾ tsp. cumin 1 Tbsp. salt 1 ½ tsp. black pepper 4-5 cups of water Cheddar cheese Tortillas Soak the beans overnight, rinse and add to slow cooker. Add remaining ingredients to slow cooker. Cook on high 5-6 hours or on low for 7-8 hours. Drain. Mash. Wrap ½ cup mashed beans and cheese, to taste, in a tortilla. Extra beans can be frozen in 1-2 cup quantities. Use in tacos, burritos, quesadillas or as side dish. Pressure Cooker Version Rinse and soak beans overnight. Drain and add to pressure cooker pot along with remaining ingredients. Set for 30 minutes cook time. Do a natural pressure release. Drain, reserving some of the water, and mash. Add in reserved water to reach the desired consistency, if needed. Wrap ½ cup mashed beans and cheese, to taste, in a tortilla. Extra beans can be frozen in 1-2 cup quantities. Use in tacos, burritos, quesadillas or as side dish. Serving Suggestion: Chips and Guacamole, Microwave Corn on the Cob Microwave Corn on the Cob Yield: 1 Serving Time: 5 minutes hands on, 10 minutes cook time 1 Tbsp. butter, per person 1 ear of corn, per person Salt, to taste Put corn in a microwavable dish. Top with butter and sprinkle with salt. Microwave for about 10 minutes.

Chicken Tetrazzini Yield: 3-4 servings Time: 10 minutes hands on, 7-8 hours cook time 1 ½ cups of cooked chicken 4 oz. spaghetti noodles, broken in half and cooked 4 oz. sour cream ¼ cup chicken broth 1 can cream soup, chicken or mushroom Mozzarella cheese for the top Stir all ingredients together, except cheese. Pour into greased slow cooker. Cook on low 7-8 hours or high 5-6 hours. Top with cheese during the last 20 minutes of cooking. Serving Suggestion: Honey Crisp Kale Chopped Salad Honey Crisp Kale Chopped Salad Yield: 3 Servings Time: 10 minutes hands on 2-3 cups kale ½ large honey crisp apple, diced 1 ½ tsp. apple cider vinegar 1 ½ tsp. lemon juice 1 Tbsp. honey 1 ½ tsp. olive oil Salt and pepper, to taste Chop kale with a sharp knife and pace in a large bowl. Add the apple to the bowl. Drizzle remaining ingredients over the kale and apple. Season with salt and pepper. Toss to coat.

Honey Pork Chops Yield: 3 Servings Time: 10 minutes hands on, 7-8 hours cook time 3 boneless pork chops ¼ cup honey 2 Tbsp. cider vinegar Pinch of ground ginger 1 clove garlic, minced 1 Tbsp. soy sauce Dash of pepper Place pork chops in the slow cooker. Whisk together remaining ingredients and place over pork. Cook on high for 3-4 hours or on low for 5-6 hours. Pressure Cooker Version Add ½ cup chicken broth. Add all ingredients to the pressure cooker pot. Set for 20 minutes cook time. Do a quick pressure release. Serving Suggestion: Fried Rice Oven Style, Asian Broccoli Salad Fried Rice Yield: 3-4 Servings Time: 10 minutes hands on, 30 minutes cook time ½ cup white rice A bit of oil ½ can beef broth Brown the rice in the oil on top of the stove. Add the beef broth after the rice is toasty. Remember not to stir the rice after adding the broth. Bake at 375F degrees for 30 mins.

Asian Broccoli Salad Yield: 4 Servings Time: 20 minutes hands on 1 pkg. Chicken flavored ramen noodles ½ cup slivered almonds ½ head broccoli, chopped into small pieces ¼ red onion, diced ½ red bell pepper, chopped ½ cup sunflower seeds ½ cup oil ¼ cup sugar ¼ cup vinegar 1 packet ramen noodle seasoning Break ramen noodles in small pieces. Set seasoning packets aside for later. Toast broken noodles and almonds in shallow pan at 350F degrees for 10-15 minutes. Stir several times during toasting. Combine broccoli, onion, red pepper, sunflower seeds, and toasted noodles and almonds in large bowl. Whisk together oil, sugar, vinegar and seasoning packets in a small bowl. Pour over the salad right before serving and toss to coat.

Magically Delicious Cereal Treats Time: 15 minutes hands on, plus cooling time 3 Tbsp. butter 4 cups miniature marshmallows 6 cups Lucky Charms Cereal Green and white M&Ms, green chocolate melts, green sprinkles (optional) Brown butter in a large pot over medium-high heat, stirring continuously. Butter will turn an amber color and become fragrant. Add the marshmallows to butter and stir until melted. Remove pot from heat and add cereal. Stir until coated. Pour the cereal mixture into a greased 9x13 pan. Press cereal evenly into dish using a greased spoon. If decorating, melt the chocolate melts in the microwave per package directions. Spoon or pipe over the treats. Add sprinkles and M&Ms. Let set completely before slicing into bars.
