Mix the rolled oats, flour and baking powder together and add to the mixture. Mix well. Using two teaspoons, form the dough into little heaps and place them, a slight distance apart, on a baking sheet covered with baking parchment. Bake for 10-12 minutes in a preheated oven at 200. Cornflake Wedges 150 g cornflakes 100 g chocolate coating 70 g butter 2 dessertspoonfuls honey 2 eggs 40 g raisins or prunes (dates) Half a lemon (orange) 40 g plain flour 30 g chopped almonds 30 g pistachios 25 g cornflour Preheat the oven to 180 (fan oven about 150-160 ). Line a baking sheet with baking parchment. Melt the butter in a saucepan and add the honey. Wash the lemon and finely grate the rind. Squeeze the lemon and reserve the juice. Crush the cornflakes finely, for instance in a food processor or with a rolling pin. Mix the lemon peel, eggs, raisins or prunes, chopped almonds, pistachios, lemon juice, cornflour and flour into the melted butter and honey. Allow the mix to stand for about 20 minutes. Then spread the mix evenly over the baking sheet and bake in the oven for about 25 minutes. Allow to cool before cutting into triangles. The wedges may be covered with chocolate coating if desired. Breaded Bananas 4 medium bananas, not too ripe 2 eggs Flour, cornflakes, butter and sugar For best results, first peel the bananas and halve them lengthways. Toss them carefully in flour. Then dip them in the beaten egg, making sure both sides are coated. Finally, toss them carefully in cornflakes. Heat a generous quantity of butter in a small frying pan and fry the coated bananas on both sides. To finish, sprinkle with sugar and brown both sides again lightly. The sugar will develop a delicious caramel flavour. 22 23
