SAKURA ABOUT JAPANESE WHISKY Japan is the second largest producer of single malt whisky after Scotland. Home to rich natural resources and climates that match that of some of Scotland s most distinguished distilleries, Japan has all the right elements to mimic the conditions for producing a wide range of styles including both Islay and Speyside allowing them to produce some world class whiskies. Japanese whisky has frequently won highly coveted awards such as the Worlds Best Single Malt and Worlds Best Blended Whisky to name a few. What is really impressive and one of the main reasons for their continued success is that unlike Scotland where each distillery will focus on a particular style of whisky, distillers in Japan will create lots of different styles of whiskies so the blends all come from in house casks. THE INFLUENCE OF WOOD ON WHISKY Many of the characteristics and flavours of whisky are picked up from the wooden casks that it spends its life maturing in. Historically any type of wood may be used to make casks but today the law states all casks should be constructed of oak. Selected for its toughness, wood plays a crucial role in the development of malt whisky, with its porous qualities that allow oxygen in and out of the cask & its tight grain structure that prevents leaking. Oak is easy to work and it can be bent by heat without splitting. Wood naturally is full of occurring oils called vanillins. It is these oils that are drawn out of the cask by the spirit and over the period of maturation they add to the whisky s flavour appeal. Just 5,000 of these sought-after bottles will be available worldwide. And the rumour mill suggests less than 200 bottles made their way to UK shores. Yamazaki Bourbon barrel / 48.2% (Japan) 45.00/90.00 A Hanyu from the distillery's final vintage: 2000. Shortly after producing this spirit, it closed and it is only thanks to former distillery manager Ichiro Akuto that these whiskies have seen the light of day. This is a masterpiece of wood management, combining layers of oak and woody spice with delicate fruitiness. Hakushu Bourbon barrel / 48.2% (Japan) 45.00/90.00 A long-trailed whisky from Hakushu that has finally reached our shores - - matured in first fill bourbon barrels to give a massively fruity dram. Hanyu 2000 final vintage 15yo / 46.5% / (Japan) 50.00/100.00 A special release from Ichiro Akuto - a single cask bottling of whisky from the final year of Hanyu distiller's operation. Bottled at 15 years of age and at cask strength without colouring or chill-filtration. A little slice of distilling history. Karuizawa spirit of Asama / 48% (Japan) 55.00/110.00 An exclusive release bottling of Karuizawa for TWE, part of a vatting of 77 European sherry casks. The casks used for this Spirit of Asama were filled in 1999 & 2000 and was bottled in 2012. Kirin 18 / 43%/ bourbon cask (Japan) 20.00/110.00 Unknown outside Japan, the Fuji Sanroku which means "at the foot of Mount Fuji", is a great 18 year old single malt producted in Fuji Gotemba distillery owned by Kirin Group. Very surprising for the richness and depth of its fruity and woody aromas, Fuji Sanroku is a whisky to be savored.

Kavalan soloist bourbon cask / 57.1% Taiwan 19.00/38.00 A perfect showcase for the quality of Kavalan's Taiwanese made and matured spirit - a single cask bottling from a first-fill bourbon cask. Distilled on 29 August 2009, this is rich and fruity with lots of woody spice. Yamazaki puncheon / 48% Puncheon cask Japan 19.00/38.00 A special edition Yamazaki from Suntory, aged in a 480-litre puncheon cask, which allows the whisky to mature much more slowly than the standard 230-litre hogshead. Glenglassaugh 30yo / 44.8% (Highland) 30.00/60.00 The first expression to be released by the new owners, Glenglassaugh 30 Years Old is a rich and complex whisky which has been matured for over 30 years in our coastal warehouses. Bottled at 44.8%, this is a refined single malt with elegant sherry cask characteristics complimented by luscious fruits and oak spice. Arran the Illicit stills smugglers series vol. 1 56.4% (island) 18.00/36.00 The first release in a new series from the Arran distillery! The Smugglers' Series Volume 1 ("The Illicit Stills") is an homage to the history of less-than-legal distillation on the Isle of Arran in the 18th and 19th century. The single malt Scotch whisky is crafted from a selection of their malts, including unpeated and heavily peated stock, whisky matured in old bourbon barrels and whisky fully-matured in Port pipes! A fantastic expression - 8,700 bottles were produced. Arran the Illicit stills smugglers series vol. 2 / 55.4% (island) 18.00/36.00 The second bottling in the Smugglers' Series from the Arran distillery (the first one proved rather popular indeed!). This one has been matured in a combination of rum casks and first-fill bourbon barrels - - 8,700 bottles were produced. Super Nikka Revival ltd edition / 43% (japan) Super Nikka was first launched in 2 by Masataka Taketsuru as a tribute to his wife. This 2015 Revival replicates the original flavour profile, which is heavier and peatier than today's bottling. 9.00/18.00 Kilchoman 2010 single cask PX 58.3% (Islay) 14.00/28.00 A single cask from Kilchoman, selected by The Whisky Exchange team a d exclusive to us. It has been finished in Pedro Ximénez sherry casks, giving it a big, fruity backbone that compliments the powerful smoke of Kilchoman's spirit.

Benrinnes 20 yo time series - 50% (Speyside) This 20-year-old Benrinnes has been released as part of The Whisky Exchange's Time series. Matured in a bourbon cask, this has notes of meadow flowers, fruit and gentle spice. Balvenie 17 yr double wood /43% (Speyside) Another fantastic invention from the workbench of Balvenie Malt Master David Stewart a 17-year-old version of the best selling DoubleWood. Still initially matured in 'whisky oak' casks before being switched to sherry wood to finish, the extra years give it extra depth without being overpowering. 13.00/26.00 14.00/28.00 Balvenie 12 yr single barrel /47.8% (Speyside) 9.00/18.00 A 2013 addition to The Balvenie's range, as a younger sibling to the 15 year old single cask. This is exclusively matured in first fill bourbon casks and each bottle is part of a batch that is at most 300 bottles - all taken from the same cask. Amrut fusion / 50% (India) 8.00/16.00 Amrut Fusion gets its name from the fact that it uses two barleys: Indian and Scottish - with the latter being peated for good measure. Fusion has been picking up awards ever since it first appeared in 2009, and in 2012 was named the best whisky for a Rob Roy in the Ultimate Cocktail Challenge in New York.

Suntory Toki / 43% (Japan) 15.00/30.00 Toki is a blended whisky from Suntory's three distilleries: Yamazaki, Hakushu and Chita. This is a round and sweet blend with notes of peach and custard, and a slightly spicy finish. Suntory Kakubin black label / 43% (Japan) 10.00/20.00 Black Label is the higher strength release of Suntory's Kakubin. A blend of whiskies from Yamazaki and Hakushu, this is malty with notes of honey and a hint of pepper. This is designed to be enjoyed in a highball with soda. Suntory Kakubin - 40% (Japan) 10.00 /20.00 Kakubin Yellow Label is Suntory's flagship blended whisky. Produced since 1937, its name means 'square bottle'. A blend of bourbon-cask whisky from Yamazaki and Hakushu, this is a classic example of lighter Japanese whisky and is great in a highball with soda. Michter s 10 year old bourbon - 47.2% (USA) 19.00/38.00 Michter's 10 Year Old Bourbon is aged for a decade in new charred America n white oak barrels, with each bottling being from a single cask. Big and bold with a sweet flavour profile.

WHISKIES FINISHED IN WINE CASK Ichiro s malt wine wood reserve - 46% Ichiro's Malt Wine Wood Reserve includes malt distilled at the now-closed Hanyu distillery. This was matured including a finishing period in French oak ex-wine casks vatted and bottled at Chichibu. 30.00/60.00 Kavalan Cancert master Port cask finish / 40% 5.00/10.00 A port-finished whisky from Taiwan's Kavalan, marrying their fruity young whisky with extra maturation in wine casks to create a balance of rich and fresh flavours. Balvenie 21 yr port wood /47.8% (Speyside) An additional period of maturation in 30 year-old port pipes has given this aged Balvenie an extra level of depth and concentration of flavour, adding potent fruit and smoke notes to the silky-smooth full-bodied palate. Rich, indulgent, after-dinner Speyside at its best. Balblair 1991 Crozes Hermitage wood / 45% (Highlands) A 1991 vintage Balblair which has been finished in casks which previously held Crozes-Hermitage Wine. The Balblair has been aged for just over 17 years before being transferred for its final 40 months of maturation. This period of maturation has added a fruity side to the whisky without dulling its original peppery nature. 22.00/44.00 22.00/44.00 Kavalan soloist vinho barrique / 57.8% (Taiwan) 30.00/60.00 An interesting experiment from Kavalan, using first-fill American wine casks for maturation after planing and retoasting the wood. Measured wine influence with some classic American oak flavours of toffee, vanilla and soft spice. Linkwood 1998 Cote Rotie wood finish / 45% (Speyside) 18.00/36.00 Gordon & MacPhail's Private Collection consists of whiskies finished in varying types of wood. This 1998 Linkwood was distilled on 14 December 1998 and bottled in October 2015, after a finishing period in ex-côte Rôtie wine casks. Tomatin 2002 Cabernet-Sauvignon Finish / 46% (Highland) 14.00/28.00 One of three limited-edition releases from Tomatin in September 2016, this was distilled on 25 January 2002. Aged in hogsheads for the first nine years, it was finished for the final five in Cabernet-Sauvignon-wine casks. This whisky is full of red-fruit and honey flavours.

JAPANESE WHISKY Shinshu Mars Situated between the north and south Japanese alps, Mars Shinshu is Japan s highest whisky distillery, at nearly 800 meters. The Hombo family have been distilling for more than a century and they added whisky to their repertoire in 1949 in Kagoshima. That was the southernmost whisky made in Japan until 1984, when all whisky production was moved to the current location in Nagano. Mars maltage cosmo / 43% Mars Komagatake 2011/ the revival / 58% Mars Komagatake Rindo single malt / 52% 16.00/32.00 12.00/24.00 18.00/36.00 Chichibu Started in 2008 helmed by the whisky s namesake Ichiro Akuto. The Akuto family have been making alcohol in Saitama for over 300 years. Ichiro s grandfather started making whisky soon after the war in the 1940 s at Hanyu Distillery not until the 1980s did production focus on malt whisky s. The slowdown of Japan s economy in the 90s ultimately lead to the closing of Hanyu in 2000. Ichiro rallied in 2008 and is truly a 21st century whisky maker embracing the heritage and heart of the Scotts balanced by the precision of the Japanese. BW6 paired with Chevrotin des Aravis - 17 Fresh and Fruity, with smoke & a maritime character, paired with washed rind goat cheese. Wild herbs & flowers and a nearly sweet taste. BR6 paired with Mimolett - 17 Light and fresh, showing the distillery s classic mix of coastal character & orchard fruits with a sweet dry honey & vanilla lingering palate, paired with mimolett. A hard & brittle cheese with a firm & oily texture, vivid orange colour & very nutty flavour.
