What is Labor Day? Labor Day can mean a multitude of things to many people, but most look at the holiday as a day off and the end of summer. Celebrated in the United States since 1894, Labor Day is a day that is recognized to pay tribute to working men and women. There is much controversy as to who came up with the idea of celebrating Labor day, but it is believed that labor unions themselves celebrated the first labor days in the United States. Based on the idea of day for workers to unit, most historians credit Peter McGuire, general secretary of the Brotherhood of Carpenters and Joiners and a cofounder of the American Federation of Labor. However, some credit Matthew Maguire, later the secretary of Local 344 of the International Association of Machinists in Paterson, NJ. The idea spread across the country and some states designated Labor Day as a holiday before the federal holiday was actually created. Workers unions chose the first Monday in September simply because it was a halfway point between Independence Day and Thanksgiving. The first Labor day parade was held on September 5, 1882 in New York City. From The Kitchen with Executive Chef David Noto Inspired by the hints of fall, Chef David Noto suggested this Honey Mustard Glazed Chicken Recipe to be shared with all of our guests. We love to use this recipe for a summer picnic on the Front Lawn or an evening reception at the Firepit. Now we d like to share it with you. Honey Mustard Glazed Chicken Yield: Serves 6 Amount Measure Ingredient 1 Tablespoon Olive Oil 1/2 Whole Onion, Chopped 1 Whole Chicken Portioned 1 Teaspoon Paprika 1 Tablespoon Lemon Juice 1/3 Cup Dijon Mustard 1/4 Cup Honey 1 /2 Teaspoon Curry Powder 1/4 Teaspoon Kosher Salt 1/4 Teaspoon Freshly Ground Black Pepper Directions In a skillet heat olive oil over medium-high heat and add onion. Sauté until translucent. Sprinkle chicken with paprika and salt and pepper to taste and add to skillet. Sauté chicken until nicely browned on both sides, about 5 minutes per side. Place chicken in oven at 350* and cook to an internal temp of 165* Meanwhile, in a small bowl mix together lemon juice, mustard, honey, and curry. Add to skillet mixing well while scraping off brown bits. Spooning sauce over top of chicken, serve immediately.
