cava & sparkling production cava & sparkling All Cava is made in the método tradicional (as Champagne), then fermented in deep underground caves. This is where the name Cava comes from. This takes time, but results in some wonderful and complex wines and great variety. spanish wines have never been in better shape, now one of the world s most exciting wine regions. from traditional sherries and rioja right through to young wine makers making modern wines in lesser known up and coming regions, there s so much quality. we are proud to offer nothing but spanish wine across the board. Cava can come from many different regions of Spain, but 95% comes from Penedes in Catalunya. Not all Spanish sparkling wine falls under the cava umbrella, as some producers do decide not to have the word cava on their wines for various reasons. So this is a Spanish sparkling wine section really. all our cava and sparkling wine producers make environmentally friendly wines with small scale production, many still by hand.
