People have always drunk whisky neat [ ] it is just one of the few myths that have sprung up around whisky, revolving around how to drink it, when to drink it, at what age you can start to appreciate it, and what sex you have to be. These need to be swept away, because when you examine them they are all negative. None encourage people to drink whisky, they only give reasons why NOT to drink it. Our heritage at The Craigellachie is steeped in whisky. In 1866, the Strathspey Railway became part of The Great North of Scotland Railway, which was followed by the building of several distilleries along the line including Craigellachie Distillery. The construction of the railway was fundamental to the future success of the whisky industry in Speyside but more importantaly to the growth of the tiny hamlet of Craigellachie. Craigellachie Distillery, now owned by John Dewars & Sons, was built in 1891 by Alexander Edward and Peter Mackie. Edward was a visionary and one of the most legendary and enigmatic distillers of the late 1800's. After the completion of the distillery, Edward went on to build several villas and soon realised that there was the potential of turning Craigellachie into a destination getaway. He became determined to create a first class hotel The Craigellachie. And he didn't stop there. He then went on to establish Aultmore in 1896 and Dallas Dhu in 1898.

We all know that every day we're getting that little bit older... the two day hangovers, the head rush after you've stood up too fast and those faint cracking noises from your knees that seem to be getting louder each day. "The Cocktail" rose to prominence in pre-prohibition America, with the first documented definition referring to the creation as a "stimulating liquor, composed of spirits of any kind, sugar, water and bitters". In 1893, The American Bar at the Savoy in London introduced cocktails to Europe and a number of legendary hotels the world over quickly followed suit. Hotel bars were truly responsible for the world's first romance with cocktails and with this in mind, The Quaich Bar team has hand picked a list of classic libations from legendary bartenders and thrown in a few contemporary creations of their own. THE whisky CLASSICS QUAICH CHAMPAGNE COCKTAIL { 18.00} The classic brandy based champagne cocktail is the epitome of elegance. We take Apricot Brandy, bitters, brown sugar, ABERFELDY 12 for a highland twist and top up with champagne. OLD FASHIONED As cocktails became more desirable, the tried and trusted recipes laid down by luminaries such as 'Professor' Jerry Thomas and legendary Scottish bartender Harry MacElhone made way for intricate creations; curaco, absinthe, and a range of other liqueurs were added by adventurous bartenders. The result? Swathes of people asking for drinks to be made 'in the old-fashioned way' - spirit, sugar, bitters and water. Our hotel team personally recommend: AUCHENTOSHAN three wood { 10.95} COPPER DOG { 6.95} LAGAVULIN 16 { 10.95} WOODFORD RESERVE { 9.95} MANHATTAN { 9.95} GLENDRONACH 12 and Italian vermouth, together with a dash of bitters, are carefully stirred over ice to give you this sweet classic. CHURCHILL { 9.95} Joe Gilmore created this drink in honour of Sir Winston Churchill, by carefully mixing his favourite dram - JOHNNIE WALKER black label - with lime juice, triple sec and vermouth. SAZERAC { 9.95} The Sazerac was created in 1838 by Antoine Peychaud in New Orleans. Originally a cognac based drink, it was made using Peychaud's very own family bitters recipe and served in an absinthe rinsed glass. At the end of the 19th century cognac was less readily available, so the base spirit changed to American Rye whisky. BLOOD AND SAND { 9.95} MACALLAN gold and Cherry Heering are matched with Italian vermouth and orange juice. This drink was created for the premiere of Rudolph Valentino's bull fighter film, of the same name, in 1922. The red cherry liqueur representing blood and the orange, sand. THE gin CLASSICS RAMOS GIN FIZZ { 9.95} Henry Ramos created this classic in New Orleans in 1888 but kept the recipe under lock and key until the prohibition. We've used TANQUERAY with double cream, egg white, lemon & lime juice. The story goes that he made the formula widely available as an act of civil disobedience, encouraging the public to learn this concoction at home. Saying this, the cocktail is known to traditionally be shaken for 14-15 minutes with 6 bar "shakers" to each bartender. GIMLET { 8.95} Having been the preferred antiscorbutic of the British Navy in the 19th century, this cocktail is simple in its creation - we use DAFFY's gin and lime juice. Simple. MARTINI { 9.95} The quintessential gin drink, we stir our Martini's in the traditional manner. Our hotel team personally recommend: NO.3, dry vermouth, grapefruit twist EDEN MILL oak, dry vermouth, blue cheese HENDRICKS, elderflower liqueur, dry vermouth, cucumber FIRKIN islay cask, dry vermouth, lemon twist WHITE LADY { 9.95} TANQUERAY, triple sec, lemon juice, gomme and egg white. This version of the classic White Lady was created by Harry MacElhone in 1923 at his own Harry's New York bar in Paris, France. According to Joe Gilmore, this was one of Laurel and Hardy's favourite drinks. NEGRONI { 8.95} Named after Camillo Luigi Manfredo Maria Negroni (don't expect us to repeat that!) this drink was created when he asked bartender Fosco Scarselli to fortify his Americano (Campari, Italian vermouth, soda) with gin. Obviously you would get rid of the soda. This is a favourite amongst bartenders - let's be honest, only good people like Campari - and for this classic we've used EDEN MILL hop. CORPSE REVIVER #2 { 9.95} BOTANIST, dry vermouth, triple sec and lemon juice served in an absinthe rinsed glass. First recorded in 1930 by Harry Craddock this perfectly balanced concoction of dry, sweet, sour and bitter was regarded as the "hair of the dog" that would cure you of your hangover. OUR bar TAILS KING OLIVER { 9.95} A twist on a Ramos Gin Fizz, this cocktail uses TIA MARIA as it's base rather than gin which we've named after the famous New Orleans jazz musician, King Oliver. We mix this classic with Cherry Heering, lime juice, double cream, egg white, orange blossom water and top with ginger ale. SMOKIN' KINGS { 9.95} Taking inspiration from King Edward VII who was notorious for smoking a copious amount of cigars a day - we've paired wisps of sweet smoke from SMOKEHEAD with a refreshing citrus burst of Kings Ginger (created to revive and stimulate the King), triple sec, orange juice and egg white for a velvety texture. Turns out ginger and smoke are the perfect pair - no wonder he never stopped. CHARTREUSE SOUR { 8.95} We take a classic sour recipe and use green CHARTREUSE as the base to create this delicious herbal number. You've got to try it it's the best thing since bloomin' sliced bread! Plus..it's herbal it's good for you right? Throw away that peppermint tea now! LITTLE RED CORVETTE { 9.95} This is not sacrilegious it's just pure deliciousness. ABERLOUR 10, cloudy apple juice, raspberry syrup and elderflower liqueur topped with prosseco. Ps. We love Prince. STORMS AT DUSK { 9.95} Looking for something different? GLENFIDDICH 15, triple sec, chamomile syrup and grapefruit juice served over an ice shard of frozen berries that will create a fruity sweetness as it melts. SPEYSIDE The Scotch Whisky Association divided Scotch whisky into five regions in order to create understanding and education of the different aromas and flavours created by distilleries. Covering a vast area of Scotland from Stirling to the western Isles to Orkney, this is the largest whisky region in Scotland. HIGHLAND This also includes the Island whiskies due to them not being officially recognised as a region of its own so, understandably there is a vast array of whiskies. Typically you will find fruity aromas in the southern distilleries, a peaty taste in the west, the northern ones often have a spicy taste and to the east they tend to be sweeter and smoother. The Highlands were initially separated from the Lowlands by a political line (an imaginary line from Greenock to Perth) designed for tax purposes. There are only four working distilleries left in this region. LOWLAND Records show that there have been 215 distilleries producing whisky in the lowlands since 1741. Chances are that this does not include all the illegal stills. Distillers earned the region a bad reputation in the 18th and 19th centuries by flooding the market with poor-quality spirit. Already impacted by the rise in popularity of blends suffering in comparison with their more characterful Highland rivals Lowland malt distilleries were dealt further blows by tax hikes, the First World War and the onset of Prohibition in the US. A handful survived and produce the perfect aperitifs - light and balanced with citrus, cereal and grassy notes.

Once upon a time this region was the whisky capital of Scotland with over 34 distilleries at one point. CAMPBELTOWN A thriving region for Scotch whisky, these distillers became greedy and mass produced whilst also cutting corners at a difficult time with Prohibition in the US. Consumption massively declined. Blenders also stopped favouring the whiskies produced in this region and Campbeltown disappeared as a prominent whisky region almost overnight and by the end of the 1920's there was only one distillery left in production. But don't worry, there are three distilleries now producing five fantastic and distinctive whiskies. Hurrah!

The bread and butter of the Scotch whisky industry BLENDED SCOTCH Approximately 90% of Scotch whisky sold globally is blended scotch. Blends are notorious for being consistent which takes skill and time to perfect. Blenders don't simply stick to a recipe. They need to understand flavour, have detailed knowledge about distilleries including how each spirit reacts to wood and to also constantly know what whiskies are available to them. They need to be able to adapt in an ever changing industry. Distilleries come and go, yet some of the most famous brands of blended scotch have been on the market for over 100 years and blenders of today are challenged to recreate those very blends possibly using different malts and grains to what their founding blender used. Most of these blending pioneers were grocery and wine merchants. Andrew Usher, John Walker, John Dewar and the Chivas Brothers to name a few.
