WHAT PARMONÌE ARE Parmonìe are Parmigiano Reggiano leaves, born from the skillful hands and from the recipe of Remo Bronzoni, the historic baker of the village of Bibbiano, in the district of Reggio Emilia, where thousands of years ago the Parmiggiano Reggiano, the most famous cheese of the world, was born. Parmonìe looks like chips, but without sharing with them their raw material: the ingredients are Parmigiano Reggiano DOP, aged for 24 months, olive oil, flour, salt and yeast. They are not fried, but baked. Produced without any added chemicals, preservatives, they are conserved in transparent bowls in a protective atmosphere, so that to guarantee the freshness and the aroma of the product for more than six months. Parmonìe have passed the control of the Consortium for the Protection of Parmigiano Reggiano and they have obtained the authorization to use the denomination Parmigiano Reggiano DOP leaves, baked and flavored with olive oil as well as 24 months aged Parmigiano Reggiano Parmonìe. Armonie Alimentari Srl has been autorized to use the brand Bibbiano la Culla. The brand indicates that the Parmigiano Reggiano used to produce Parmonìe is supplied by one of the cheese factories of the territory of Bibbiano, a land strongly characterized by the presence of steady fields, with more than 60 different essences per square meter of surface. They are fields generated in the conoid of the river Enza, whose rich waters they are nourished by. This brand is destined to the 70 000 Parmigiano Reggiano wheels that are produced in the territory of Bibbiano (the 2.3% of the global annual production equal to 30 000 Parmigiano Reggiano wheels) and, in fact, it satisfies the wish of variety innate to the demand of food products. In a total respect for the laws on the denomination of protected origin (DOP), it validates even more the product of the cheese factories. Last but not least, Bibbiano la Culla is an important sign of identity for this territory, where all the village system (district, companies and citizens) vouches for the production of the cheese and of its derivatives in Bibbiano.
