Tarts AND pastries Home-made cakes and pastries turn everyday menus into a celebration. They are generally economical and easy to make and, made with good ingredients, they can have an incomparable flavour. In addition, minimal equipment is required: a clean work surface and rolling pin, a blender and a few tins of various shapes and sizes are all that is needed. However, the oven temperature and cooking times must be followed carefully for the recipe to succeed.

Tarte tatin tarte tatin Preparation time: 25 minutes Cooking time: 30 minutes 1 quantity Shortcrust Pastry (p.210) 125 g (4¼ oz) caster sugar For the filling: 500 g (1 lb 2 oz) apples 40 g (1½ oz) butter Preheat the oven to 200 C/400 F/Gas Mark 6. Make the shortcrust pastry, cover and allow it to rest. Take a 20-cm (8-inch) pie dish with a solid base, preferably made of solid metal, and place in it 100 g (3½ oz) of the sugar and 1 2 tablespoons water. Place the dish over a medium heat and make a fairly dark caramel (p.73). Ensure the base of the dish is coated in caramel and allow to cool. For the filling, peel, core and thinly slice the apples. Arrange close together in a ring on the caramel in the dish and sprinkle with the remaining sugar. Dot with the butter. Roll out the pastry to a thickness of 5 mm (¼ inch) and place over the apples, tucking the pastry into the tin all round so that the fruit is completely covered. Bake for 30 minutes, then turn out onto a serving dish so that the caramelized apples are on top. Alsace tart with apples tarte à l alsacienne aux pommes Preparation time: 20 minutes Cooking time: 30 40 minutes 1 quantity Shortcrust Pastry (p.210) Preheat the oven to 200 C/400 F/Gas Mark 6. Prepare an uncooked shortcrust pastry case. Arrange the apples on the pastry. In a bowl, beat the flour, eggs, sugar and crème fraîche until just smooth. Pour over the apples and bake for 30 40 minutes. For the filling: 500 g (1 lb 2 oz) apples, peeled, cored and sliced 50 g (1¾ oz) flour 2 eggs 100 g (3½ oz) caster sugar 100 ml (3½ fl oz) crème fraîche Tarte Tatin 6

Lemon tartlets tartelettes au citron Pithivier pithiviers Preparation time: 20 minutes Cooking time: 25 minutes 1 quantity Basic Pie Dough (p.208) 1 egg 150 g (5 oz) caster sugar 1 unwaxed lemon 60 g (2 oz) butter, softened Preheat the oven to 220 C/425 F/Gas Mark 7 and grease twelve 6-cm (2½-inch) tartlet moulds. Roll out the basic pie dough with a rolling pin and line the moulds with the pastry. To make the filling, beat the egg with the sugar, then add the lemon juice, grated lemon zest and butter. Pour the filling into the tartlet cases and lattice the top of the tartlets with strips of pastry. Bake for 25 minutes, or until golden brown. Preparation time: 1 hour, plus resting time Cooking time: 30 minutes 1 quantity Puff Pastry (p.212) 350 g (12 oz) blanched almonds 175 g (6 oz) caster sugar 1 teaspoon almond extract 1 teaspoon grated lemon zest 3 eggs 175 g (6 oz) butter, softened 1 egg yolk Make the puff pastry. Preheat the oven to 220 C/425 F/ Gas Mark 7. Pound the almonds in a mortar or process in a blender with the sugar, almond extract and lemon zest. Add the eggs, one by one, and the butter. Knead the mixture. Line a 20-cm (8-inch) pie dish or tart tin with half the pastry. Fill with the almond mixture. Cover with another pastry circle, moisten the edges with a little water and press to seal. Brush with the egg yolk to glaze. With a sharp knife, starting in the centre, score patterns on the pastry out to the edges, like the spokes of a wheel. Bake for 30 minutes, or until golden brown. Puff pastry pâte feuilletée Dartois dartois Preparation time: 2 hours, plus resting time 200 g (7 oz) flour, sifted, plus extra for dusting 1 pinch of salt 100 ml (3½ fl oz) ice-cold water 100 g (3½ oz) butter, diced and softened Puff pastry is made with butter and flour, a little water and a pinch of salt. The proportion of butter to flour varies widely, but a good rule of thumb is to use half the weight of butter to that of flour. Puff pastry should be made in a cool place, with all the ingredients kept as cool as possible. In a bowl, mix the flour, salt and most of the water to make a smooth, elastic dough, adding the rest of the water if necessary. Flour a work surface and roll the dough out to a rectangle 5 mm (¼ inch) thick. Put the butter in the middle of the dough and fold over the 4 corners so that they meet in the middle and the butter is completely enclosed. Allow to rest for 10 minutes in the refrigerator. Turn the dough through a right-angle and roll out again into a long rectangle 5 mm (¼ inch) thick, taking care not to let the butter escape. Fold both short ends to overlap in the centre to make a smaller rectangle with 3 layers. Rest again for 15 minutes. Roll out the dough again and repeat the folds. Rest for 15 minutes. Do this 6 more times. Each stage is called a turn. After the sixth turn, the pastry is ready, but the more it is worked, the lighter it will be. Preparation time: 1 hour, plus resting time Cooking time: 25 minutes 1 quantity Puff Pastry (p.212) Butter, for greasing For the almond paste: 125 g (4¼ oz) ground almonds 60 g (2 oz) butter, softened 100 g (3½ oz) caster sugar 1 teaspoon vanilla extract 2 eggs Preheat the oven to 220 C/425 F/Gas Mark 7 and grease a baking tray with butter. Prepare the almond paste by mixing the almonds, butter, eggs, sugar and vanilla together and set aside, covered, at room temperature. Roll the pastry dough out to 5 mm (¼ inch) thick. Prepare 2 strips, one 8 10 cm (3 4 inches) wide, the other 2 cm (¾ inch) wider. Place the larger one on the prepared tray. Spoon the almond paste, which should be quite soft, onto this strip and fold in 1 cm (½ inch) of the edges over the almond paste all round. Put on the second piece of pastry like a lid, seal the edges with water and flute them so that they stand upright. Mark with a knife every 4 5 cm (1½ 2 inches) to show the individual portions of dartois. Bake for 25 minutes, or until deep golden brown. Immediately after baking, gently cut the dartois in slices at the marked portions. Note: The butter should be as soft as the dough, or it will tear the carefully constructed layers. 8 9

CREAM BUNS choux à la creme pâtissière Preparation time: 20 minutes Cooking time: 15 minutes For the choux pastry: 20 g (¾ oz) caster sugar 100 g (3 ½ oz) butter, plus extra for greasing 1 teaspoon salt 120 g (4 oz) flour 4 eggs, beaten 1 quantity Whipped Cream (p.82) Preheat the oven to 220 C/425 F/Gas Mark 7. In a large pan, gently heat 120 ml (4 fl oz) water with the sugar, butter and salt until the butter has melted, then bring to the boil. Quickly add the flour all at once, and beat with a wooden spoon. Reduce the heat and continue to beat the dough for about 1 minute until it comes away easily from the sides of the pan. Grease a plate with butter, turn the mixture out onto it and leave to cool to room temperature. Return the dough to the pan and gradually beat in the eggs until the dough is smooth and glossy. Pipe or spoon egg-sized pieces of choux pastry dough onto a buttered baking tray. Bake for 20 minutes until well risen and golden. When cooled, make a horizontal slit near the top and fill generously with sweetened whipped cream. ÉCLAIRS éclairs Preparation time: 30 minutes Cooking time: 20 minutes 1 quantity Choux Pastry (above) Butter, for greasing 1 quantity Chocolate Crème Pâtissière (p.84) 1 quantity Chocolate Icing (p.87) Make the choux pastry. Preheat the oven to 200 C/400 F/Gas Mark 6 and grease a baking tray with butter. Pipe or spoon the dough into fingers on the prepared tray. Bake for 20 minutes and allow to cool. When cooled, slit the éclairs along the side. Carefully fill them with chocolate crème pâtissière, and top with chocolate icing. Cream Buns 10

Strawberry Tartlets tartelettes aux fraises Preparation time: 15 minutes Cooking time: 15 minutes 1 quantity Basic Pie Dough (p.208) or Pâte Sablée (p.217) 1 quantity Whipped Cream (p.82) or Crème Pâtissière (p.84) (optional) 500 g (1 lb 2 oz) small strawberries, hulled or halve large ones 120 g (4 oz) redcurrant jelly Preheat an oven to 200 C/400 F/Gas Mark 6. Line individual 10-cm (4-inch) tartlet moulds with the basic pie dough or pâte sablée. Cover the dough with greaseproof paper or foil then put baking beans inside. Blind bake the tartlet for 15 minutes or until golden. Discard the paper and the baking beans. Allow the cases to cool. Fill the tartlets with whipped cream or crème pâtissière. Carefully arrange the strawberries on top of the cream. To make a redcurrant syrup, pour the redcurrant jelly and 1 tablespoon water into a small saucepan and heat for 2-3 minutes, or until syrupy. Using a pastry brush, use the syrup to glaze the fruits. Walnut tart tarte aux noix Preparation time: 35 minutes Cooking time: 45 minutes 1 quantity Pâte Sablée (p.217) 250 g (9 oz) thick crème fraîche 100 g (3½ oz) caster sugar 100 g (3½ oz) ground walnuts 1 teaspoon ground cinnamon 1 egg Icing sugar 10 walnuts, halved Preheat the oven to 160 C /325 F/Gas Mark 3. Line a 20-cm (8-inch) tart tin with the pastry, pressing it out by hand to a thickness of 3 4 mm ( 1 8 ¼ inch). To prepare the filling, mix the crème fraîche, sugar, ground walnuts and cinnamon together in a medium bowl. Spread the filling over the base of the tart and bake for 45 minutes, or until golden. Remove from the oven and allow to cool before sprinkling it with icing sugar and decorating with the walnut halves. The tart should be eaten cold. It will keep in the refrigerator for 3 or 4 days. Strawberry Tartlets 13

NORMANDY SABLÉS sablés normands Preparation time: 15 minutes Cooking time: 25 minutes 250 g (9 oz) flour, plus extra for dusting 150 g (5 oz) butter, softened, plus extra for greasing 65 g (2¼ oz) caster sugar 1 egg yolk 1 egg, lightly beaten Preheat the oven to 180 C/350 F/Gas Mark 4 and grease a baking tray with butter. Mix the flour, butter, sugar and egg yolk in a bowl until combined, then turn out onto a lightly floured work surface and briefly knead to make a smooth dough. Roll out to 1 cm (½ inch) thick and cut into triangles. Brush with the beaten egg to glaze. Place the biscuits on the tray. Bake for 25 minutes, or until golden brown. LANGUES DE CHAT langues de chat Preparation time: 20 minutes Cooking time: 20 minutes 80 g (2¾ oz) butter, plus extra for greasing 80 g (2¾ oz) caster sugar 2 eggs 85 g (3 oz) flour Preheat the oven to 190 C/375 F/Gas Mark 5 and grease a baking tray with butter. Beat the butter until creamy. Beat in the sugar and then the eggs, one by one. Stir in the flour. Spoon or pipe fingers of the mixture onto the prepared tray and bake for 20 minutes. The biscuits should be golden brown on the edges, but pale in the middle. Hazelnut TUILES tuiles aux noisettes Hazelnut Tuiles Preparation time: 10 minutes Cooking time: 10 minutes 60 g (2 oz) sliced hazelnuts 2 egg whites 75 g (2½ oz) vanilla sugar, or caster sugar plus 1 teaspoon vanilla extract 50 g (1¾ oz) butter, melted Pinch of salt 75 g (2½ oz) plain flour 1 egg, separated Preheat the oven to 200 C/400 F/Gas Mark 6 and line a baking tray with baking parchment. In a bowl, mix all the ingredients together thoroughly. Spoon halftablespoons of the dough, well spaced out, in small piles on the prepared tray. Bake for 8 10 minutes, or until golden and bubbly. Shortly after they come out of the oven, and while they are still hot, drape the biscuits over the lightly oiled neck of a bottle, rolling pin or other cylindrical object. Once cold and set, place the tuiles in an airtight container to keep them crisp. Note: For plain tuiles, omit the hazelnuts. 15

2 4 6 3 5 7 SHORTCRUST PASTRY pâte brisée Preparation time, 20 minutes, Put the flour into a bowl. Make a well in the middle and plus resting time add the oil, salt and butter. Rub the butter into the flour Makes 400 g (14 oz) until it resembles breadcrumbs. Moisten with the water to bring the dough together. Briefly knead the dough by 250 g (9 oz) flour, plus extra for dusting hand; the more quickly this is done, the better the pastry 1 tablespoon flavourless oil, such as will be. Cover the pastry with clingfilm and leave to rest sunflower or rapeseed in the refrigerator for between 30 minutes and 24 hours. ½ teaspoon salt Bring it back to room temperature before rolling out. 125 g (4¼ oz) butter, chilled and diced, plus On a lightly floured surface, roll it out to a circle 5 mm (¼ extra for greasing inch) thick and use to line a greased 23 cm (9 inch) tart 1 2 tablespoons ice-cold water tin, preferably one with a removable base. The pastry may also be used to line small round or boat-shaped tins (barquettes). To bake the pastry case blind, preheat the oven to 200 C/400 F/Gas Mark 6. Line the pastry case with greaseproof paper and fill with baking beans or uncooked rice. Bake for 10 minutes, then gently remove the greaseproof paper and baking beans or rice and return the pastry case to the oven for a further 10 15 minutes, until it is light golden brown and cooked throughout. NOTE Keep the ingredients and utensils as cool as possible. This will help the pastry to retain a short, crumbly texture. Any leftover pastry can be frozen. COOKED FRUIT OR JAM TART tarte aux fruits cuits, a la confiture Preparation time, 20 minutes Bake a shortcrust pastry case blind. Fill with cooked fruit Cooking time, 25 minutes or jam of your choice. 1 quantity Shortcrust Pastry (see above) 1 quantity Fruit Jam or Compote of your choice (pp.857 9) Cooked Fruit or Jam Tart ANGEL CAKE gâteau mousseline Preparation time, 15minutes Preheat the oven to 160 C/325 F/Gas Mark 3 and grease Cooking time, 45 minutes a 23-cm (9-inch) cake tin with butter. Using an electric whisk, whisk the egg whites to stiff peaks. In a separate bowl, whisk the sugar and egg yolks for 5 minutes until Butter, for greasing pale and tripled in volume. Stir in the flour and lemon 5 eggs, separated zest, and then fold in the egg whites. Pour into the 75 g (2½ oz) caster sugar prepared cake tin and bake for 45 minutes, until risen 125 g (4¼ oz) potato flour and golden. Grated zest of 1 lemon MARBLE CAKE gâteau marbré Preparation time, 20 minutes Preheat the oven to 150 C/300 F/Gas Mark 2 and grease Cooking time, 1 hour a 21 x 11-cm (8 ½ x 4 ½-inch) loaf tin with butter. Beat the butter and sugar until pale and creamy. Beat in the egg yolks, flour, milk and baking powder. In a separate bowl 100 g (3½ oz) butter, plus extra for greasing whisk the egg whites until stiff, then fold into the cake 200 g (7 oz) caster sugar mixture. Divide the mixture in half. Fold the chocolate 3 eggs, separated into one half and the vanilla or lemon zest into the other. 200 g (7 oz) flour Put alternating spoonfuls of the white and chocolate 100 ml (3 ½ fl oz) milk mixtures into the prepared tin, filling it two-thirds full. 1 teaspoon baking powder Bake for 1hour. 60 g (2 oz) chocolate, grated Vanilla extract or grated lemon zest, to taste Ginette Mathiot (1907 1998), Officier de la Legion d Honneur, taught three generations how to cook in France and is the ultimate authority on French home cooking.
