Lay onion and pepper rounds on a plate and brush generously with oil and vinegar mixture. Rub remaining mixture all over steaks. Let marinate 5 to 15 minutes. Lay steaks on an oiled barbecue grill over a solid bed of hot coals or high heat on a gas grill. Set onion and pepper slices alongside. Close lid on gas grill. Cook steaks 5 minutes and turn over. Top steaks evenly with Kerrygold Dubliner Cheese and continue cooking until done to your liking in center of thickest part (cut to test), about 5 to 7 minutes longer for medium-rare. Cook onion and pepper slices, turning once, until lightly browned on both sides, about 6 to 10 minutes total. Transfer steaks to plates. Separate onion into rings and place on steaks, along with pepper slices. Let rest in a warm place 3 to 5 minutes before serving. Add salt to taste.

Boursin Artisan Burger Serves 4 Ingredients 1 box Boursin Cheese Pepper, softened 8 leaves of romaine lettuce 4 thick slices of tomato 8 slices of artisan-style bread 1 pound ground beef, divided into 4 equal patties 2 tablespoons butter 1 cup sliced onion Kosher salt & Black pepper Preparation Step 1 Melt butter in a small sauté pan over medium heat. Add onions and a pinch of salt and a few cracks of fresh pepper. Cook, stirring occasionally until onions are deep golden brown, about 10 minutes. Reserve. Step 2 Meanwhile, season burger patties with salt and pepper and grill to desired doneness, about 4 minutes on each side for medium-well done. Step 3 Spread 4 slices of bread with half the container of softened Boursin Cheese. Place on top of the cheese a slice of tomato and 2 lettuce leaves. Place grilled burger on top of the lettuce and spread Boursin Cheese on top of the burger. Add grilled onions to top of the burger, and top with second slice of bread. Enjoy!
