To: All Applicable Flight Crew Members From: Rick Berry; Director of Inflight Services & Employee Relations Date: May 2, 2017 Subject: Memo 17-006: Galley Configuration for Aircraft 688 (Challenger) OVERVIEW This memo was drafted to inform all applicable crew members of galley configuration for aircraft 688 (Challenger) based on the approved Standard Stock List (SSL). STANDARD STOCK LIST (SSL) Inflight Services and the Sales Department, along with input received from Flight Attendants, Pilots, and our customers, have developed a SSL for AC688. The list outlines all the standard items the aircraft will be catered with. When a customer contacts the Sales Department about a potential charter on the AC, this is the list the customer will be asked to review. If the customer has any requests for non-standard items, that information is provided to the Sales Department and in turn Operations and Inflight Services, who will, as needed, coordinate with the applicable crew members on how to procure the customer s request. GALLEY CONFIGURATION The galley on AC 688 has been configured to properly secure the commissary items per the SSL. These are the approved locations for these items. The front section should be used for the ice that is served to the customers during the flight. The second section is larger and should be used for items that need to be chilled such as beer, bottles of Fiji water, a bottle of milk, etc. At the end of the day, any item that was placed in the ice to be chilled should be removed and placed in the AC s sink to dry. If it is a perishable item, such as milk, it should be refrigerated at FBO, if able. Crew members should avoid leaving items in the ice bin overnight. Any item that was placed on ice must be removed from the ice bin and placed in the sink at the end of the trip assignment. Perishable items should be discarded. Crew members should make all reasonable efforts to have the ice bins drained and dried at the end of the trip to avoid leaving water to become stagnant. At the end of the day/end of the trip, all unused coffee still in the thermos should be discarded. Coffee left in the thermos could become moldy if not properly disposed of which will result in the thermos having to be replaced. The coffee should not be poured into the sinks or lavatories on the AC. Crew member should dispose of the coffee inside the FBO or ask for assistance. COMMISSARY RESTOCK FORM The Commissary Restock Form outlines each item on the Standard Stock List, the proper quantity,
