BORDEAUX The city au bord de l eau, French for along the water, became famous for its wines when exportation began with the opening of the English wine market in 1152. In 1855, at the request of the Emperor Napoleon III, the best wines of the Left Bank of Bordeaux were classified by a panel of judges before being put on display for the World Exposition. This classification was by far the most ambitious ranking ever done of an agricultural product. The classification stands today and the Chateaux that were classified are still among the best in Bordeaux. However, many estates were not included in the 1855 Classification despite their production of excellent wines. Today these wines are often identified as Bordeaux, Bordeaux Superieur or even by their designation. Located on the 45th Parallel, Bordeaux is blessed with temperate winters and long, warm summers that are ideal for growing grapes. Additionally, Bordeaux is home to two rivers that have a special influence on grape growing, the Garonne and Dordogne, that eventually merge to form the Gironde estuary. Vineyards located close to rivers tend to have sufficient warmth even in times of cold weather and humidity. Bordeaux boasts an abundance of different soils and climates and the rivers are also a factor in why Bordeaux is home to so many different wine styles. For example, the growth of noble rot - which enables winemakers to make the great sweet wines of Sauternes and Barsac - are a result of the proximity of the rivers. Red wines from Bordeaux are made from a blend of grape varieties including Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, and in some instances Malbec. White wines are traditionally made from a blend of Semillon and Sauvignon Blanc. 3

It has a very attractive bouquet with abundant red cherry and wild strawberry scents that are very well-defined. The palate is mediumbodied with fine tannins, velvety smooth in the mouth with pure redcurrant and strawberry fruit. The oak is a little conspicuous at the moment (around 35% new) but it is very well assimilated on the finish. This is a well-crafted Corton. "Our motto: there are no rules! BURGUNDY Burgundy, known as Bourgogne in France, is one of the most important and highly sought-after wine regions in the world. Burgundy s rich viticulture history dates back to at least the 2 nd Century, when Cistercian Monks began to first notice the distinct aromatic differences produced by each vineyard - or differences in each terroir. It was their observation that would serve as the basis for the modern organization of Burgundy vineyards, which includes nearly 100 distinct appellations. Unlike Bordeaux, Burgundy classifications are focused on geography, not estate. The most prestigious ranking is Grand Cru, followed by Premier Cru, Villages and Vin de Bourgogne. The majority of Burgundy s grape crop is placed on large holdings by independent wine merchants, or negociants, who produce wine with these grapes under their own names. The Côte d Or, the most famous and expensive of Burgundy s regions, containing both the Côte de Beaune and the Côte de Nuits, produces some of the world s best Pinot Noirs and Chardonnays. The Côte de Beaune, with its famous AOCs of Puligny- Montrachet, Meursault, and Corton- Charlemagne, is the home of 7 of Burgundy s 8 white Grand Cru vineyards and is responsible for the production of extraordinary Chardonnays. The Côte de Nuits, with 22 out of 23 of the region's red Grand Crus vineyards, including the world-renowned Vosne- Romanée, is the heart of Pinot Noir territory. His Champagne n 1, which he describes as the most expressive statement of Champagne, has become Krug Grande Cuvée. The n 2, now known as Millésime Krug, is created "based on the circumstances of the year". CHAMPAGNE The world s most celebrated sparkling wine, produced only in the Champagne region of France, is defined by its unique combination of subtly nuanced force, balance and fruit. Romans were responsible for planting the first vine in the cool northeast corner of France around the 5th century. Champagne classically honors the Maison, or Champagne "House", rather than the region. Producers can choose to label their wines as "Grand Cru" or "Premier Cru", if they feel the grapes come from the region s highest-rated and finest vineyards. Champagne is produced using the famed "méthode traditionnelle". This method of production, while used in other countries to produce sparkling wine, was developed exclusively in the Champagne region and involves double fermentation in the bottle. Vintage Champagne, a bottle designated by year, is only produced during the best of harvests and under ideal conditions. Rare and refined, these Champagnes are the best of the best and are enhanced by extended aging on the lees, which provides greater depth of freshness, and the famed "brioche" notes. Typically a blend of Chardonnay, Pinot Noir and Pinot Meunier, Champagne is also produced in special cuvees or blends such as Blanc de Noirs, made with only red grapes, and Blanc de Blancs, only with white grapes. Champagne terroir is particularly important in the vigneron s production method. For example, Chardonnay grown in the Cote des Blancs will generally be crisply acidic and intensely chalky. The same grape grown across the river in Vallée de la Marne will produce a wine that s broader in feel and fuller. Enjoying Champagne with food is highly pleasurable yet commonly overlooked. Even though Champagne is often drunk as an aperitif, it pairs beautifully at the table due to its vibrant acidity, low alcohol and unrelenting vitality.
