RANGE RANGE Mt Barker Free Range Whole Chicken 5 Recipe: Pot Roasted with Mushroom Rice Serves 4 Ingredients: x.6 Whole Chicken bunch of thyme, 2 tbsp Olive Oil, 4 cloves of garlic crushed, onion chopped, 25g of free range bacon, chopped, 200g ( cup) long grain rice, 25 ml (/2 cup) dry vermouth or white wine, 500ml (2 cups) hot chicken stock (Gluten-free), 300g button mushrooms halved, 2 bay lves. Method:. Preht oven to 200 o 2. Stuff the thyme into the cavity of the chicken, reserving two sprigs for later. Ht a hvy and flameproof casserole pot over medium ht, add the olive oil and brown the chicken on all sides. Remove and set aside. Add the garlic, onion and bacon to the pot and cook for 5-6 minutes until the onion is just browned. Stir in the rice. 3. Add the vermouth or wine and simmer until it reduces by half, then add the stock, mushrooms, bay lves and reserved thyme. Put the chicken on top of the rice mixture, cover the pot tightly with a lid or foil, then bake for 35-40 minutes or until the chicken is tender and the rice is cooked. 4. Let the pot sit, covered, for ten minutes before carving and serving the chicken with rice on the side. WA Lamb Loin Chops Bulk Packs 9 RECIPE: Lamb Loin Chops with Garlic & Rosemary & Lemon Serves Ingredients: 8 Lamb Loin Chops, ½ cup chopped rosemary, 2 tbsp minced garlic, whole lemon - zested, tsp Red Chili Flakes, ¼ cup Extra Virgin Olive Oil, S salt & ground black pepper. Method : In a small bowl, mix together the rosemary, garlic, lemon zest, red chili flakes and olive oil. Place the lamb Loin chops in a large sized reslable bag. Sson the lamb well with salt and black pepper and pour the herb mixture into the bag ensuring all chops are coated well. Cover and refrigerate for 6-8 hours minimum but overnight is preferable. MT Barker Free Range Diced Chicken Leg Fillets 500g 4 9. 9 8 p e r k g RECIPE: Chicken Leg Fillet Butter Chicken Curry Serves 4 Ingredients: 2 x 500 gm packs diced Chicken leg fillets 2 tablespoons olive oil 50g butter 2 tbsp fresh ginger, grated Salt 2 cloves garlic, finely chopped 3 tsp ground coriander seed 3 tsp ground cumin tsp ground cardamom ½ tsp ground allspice ½ tsp chilli powder 4 tbsp tomato paste ½ cups tomato puree 2/3 cup natural yoghurt cup thickened crm Coriander lves Method: In a large non-stick pan, ht ¼ the oil and ¼ of the butter over medium-high ht. Brown ¼ of chicken pieces for about 3 minutes, then remove from the pan and set aside. Rept with the rest of the oil, butter and chicken. Reduce the ht to medium-low. In the oil left in the pan, saute the ginger and garlic for a minute or two, then add the ground spices and cook for a further minute. Add tomato paste to the mixture and cook for another minute. Return chicken to the pan, along with tomato puree, yoghurt and crm. Simmer for 0 minutes or until chicken has cooked through. Taste and add a pinch of salt if necessary. Serve with basmati rice topped with extra yoghurt and scattered with coriander lves. Avon Farm Chicken Tenderloins 0 Ingredients: x 450 gram pack of chicken strips, large avocado sliced, punnet cherry tomatoes washed and sliced in half, /2 red onion sliced thinly, cup green bns rimmed, and blanched in hot water for 2-3 minutes, 4 cups green spinach lves, /2 a cup of toasted pine nuts, Balsamic vinegar, Olive oil, Salt and pepper. Method:. Preht the grill or pan. 2. Pat the chicken with paper towel and coat with oil and sson to taste. 3. Place the chicken on the ht until the chicken turns from a pink color to white along the edge (about 5 minutes). Turnover and cook for another approximate 4-5 minutes. Time will vary with size and thickness of the tenders. 4.While the chicken is cooking place salad ingredients in a large bowl. 5. In a smaller bowl mix the /4 cup balsamic vinegar with /3 cup olive oil and salt and pepper to taste (you can also add a tsp of dijon mustard, or garlic or honey if you like). 6. Serves 4 RECIPE: Crsipy Skin Chicken with Herb Sauce Serves 4 Ingredients: /2 s beef bolar blade, cup red wine, 2 cup water, 2 tsp beef stock (powder), 2 tsp mustard powder, 2tbsp Worcestershire sauce, 2 tbsp tomato paste, 6 bay lf, 8 cloves garlic, 8 shallots, tbsp olive oil, 25g unsalted butter, tbsp cornflour, 2 tsp beef stock (powder), /2 cup water, Salt & Pepper to taste. Method :. Rub beef all over with salt and pepper. 2. Ht a hvy based roasting pan over a medium ht on cooktop. Add olive oil and butter to pan. 3. Brown mt well on all sides. Remove from pan. 4. Place peeled garlic and shallots in pan and cook, stirring occasionally, for 4-5 minutes. Place beef back in pan on top of garlic and shallots. 5. Mix together beef stock powder, red wine, Worcestershire sauce, tomato paste, mustard powder and water. Pour over beef into pan. Place bay lves in pan. 6. Place lid on roaster, ensuring a tight fit. Alternatively, cover top of pan tightly with several layers of foil. 7. Bake at 50C for 3 hours. Remove mt from pan and set aside. 8. Mix together extra beef stock powder, cornflour and extra water. Add to pan juices and cook over a medium ht, stirring until thickened. 9. Remove bay lves. Spoon over mt and serve. Method:.Place chicken brsts skin-side up on chopping board. Using knife, poke 30-40 holes in skin. Turn brsts over, poke 6-8 holes in other side. 2. Cover chicken with plastic wrap & tenderise to an even thickness of approx.5cm. 3.
