The wood-burning oven What it is. Since ancient times the wood-burning oven has been used to bake bread and other foods. Its origin is lost in time but leads us back to the origin of bread. The only way to bake it was by means of a wood-burning oven. As well as bread, other foods can be cooked such as, in first place pizza followed by roast meats, pastries and cakes. The wood-burning oven provides the food with a cooking and above all with a wholesome flavour that cannot be achieved with other types of cooking. How the real wood-burning oven works. There are two cooking systems available using the same wood-burning oven: The PIZZERIA system. With a hot oven and open oven door, you leave a little burning wood on one side of the oven. On the other side you cook the pizza, focaccia, bruschetta etc. directly on the oven s cooking surface. The PANIFICIO system. You heat the oven to the desired temperature, burning all the wood inside. You put the food that is to be cooked in the oven, close the door and wait until it is cooked. With this system you can cook roast meats and fish, bread, whole roasted pig and pastries. 2

Its shape has been studied to obtain a uniform heat distribution with a minimum wood consumption. The cooking surface is in pressed, baked refractory slabs that have a high thermal resistance and are resistant to abrasions caused by cooking utensils. Particularity: the oven floor can be replaced, after years of continuous work, from the inside leaving the refractory vault intact. The steel cable supplied, keeps the prefabricated parts of the oven united during the normal thermal expansion. The small door is in refractory material with an airtight closure to avoid heat loss (it is possible to remove it during functioning). The small hood in refractory material is for conveying the fuel smoke to the chimney (outlet 200 or 250 ) The insulation, made of top quality insulating materials (vermiculite-clay foam and rock wool), creates a useful thermal driving force for the cooking and at the same time avoids expensive heat loss. An optional thermometer, will be mounted on the front part of the oven. Which solution is the most suitable for your needs? Ovens for pizzerias with galvanized metal and painted linings - Rectangular version Available already assembled and ready for use (to be unloaded with a crane truck) or to be reassembled on the spot. Technical characteristics of the ovens with metal linings: 1) It is possible to deliver the oven already assembled or reassemble it on the spot in 8 hours, if possible moving it inside the pizzeria with a forklift. 2) Utilization of top quality insulators that don t overheat the external walls of the lining. Ovens for pizzerias with gas burners Our firm has introduced a new working instrument that allows you to increase productivity and reduce running costs: the gas burner. The latter can work alongside or even substitute the normal wood combustion. It can be assembled on new ovens or already existing ones. 1) Burner. Placed inside the cooking chamber, it produces the flame. Built in material that is resistant to high temperatures, to oxidation and to sudden changes of temperature. 2) Control panel. Situated under the oven, it houses all the parts that render the combustion safe and clean. 3) Electric switchboard. This allows you to turn on and turn off the burner and to control the temperature. To set the desired temperature, regulate the thermometer. Clean. The chimney will always be clean and soot at its opening will be practically inexistent. Economical. The gas oven consumes only 1.5 cubic metres of methane gas per hour. Reliable. All the details of the burner derive from industrial burners. Optimal cooking. The cooking will be uniform and similar in every way to that with wood. Safe. It has been tested by the most authoritative boards of approval. 7
The revolving floor wood-burning oven gas burning oven The Di Fiore firm that has been producing prefabricated wood-burning ovens for pizzerias for over 45 years, has widened its production by introducing a wood-burning oven with a rotating floor that offers an unbeatable performance. The revolving floor allows the pizza chef to introduce the pizza near the front door with less effort and greater productiveness. The control panel, that is simple to use, allows you to regulate the rotation speed as you please. The cooking floor will always be hot and it will allow you to cook hundreds of pizzas without having to wait. The rotary oven is recommended for those who have problems of space and for those who have to cook more than 300 pizzas per evening. It is also available with a gas burner. The cooking will be uniform with no more burnt pizzas. The fuel consumption is greatly reduced thanks to the shape of the refractory vault and the special thermal insulation. All the mechanisms that permit the rotation of the cooking floor are faraway and protected from the heat. 8
