The FSRA faculty seek funding to purchase a 25 gallon brewing system for use in the two FOOD labs in the Human Ecology Building. The system would be used to develop and test beer and hard cider recipes, develop new courses in beer and hard cider brewing, teach students pilot and small batch beer and hard cider brewing processes and to brew small batches of student developed beer and hard cider for use in the Sodexo Pub events on campus. Partnering opportunities with local brewpubs, breweries and the Hartwick College Craft Food and Beverage Center will be explored.

Proposal Section I: Narrative A. Micro-beer breweries and hard cideries are opening and growing rapidly in the local area, and across the state and the nation. An online search found limited opportunities locally and state-wide to learn beer and hard cider brewing techniques. Acquiring a 25 gallon brewing system will enable the development of courses in beer and hard cider brewing techniques. This purchase could establish SUNY Oneonta as a college in NY to attend to learn about brewing and to gain actual hands on brewing practice. B. This grant request contributes to SUNY Oneonta s Strategic Plan 2015 in Scholarship, Service and Strength. a. Scholarship: This grant request will result in the development of new courses in beer and hard cider brewing. Students in the courses will study, learn and apply brewing techniques. One course could be in basic beer brewing techniques. A follow-up course could have students develop and test their own beer recipes. An additional course could focus on hard cider brewing as well as the development and testing of hard cider recipes. b. Service: The products produced in these courses could be included in Sodexo pub events on campus. The products could also be included in local beer and hard cider events and thereby support local charitable and civic organizations but increase opportunities for town/gown collaboration. The course students could work with local businesses on beer and hard cider recipes for use in their businesses. c. Strength: An online search found few existing opportunities for education in beer or hard cider brewing. Implementing this program at SUNY Oneonta could establish our college as a place to learn both techniques and offer unique opportunities to partner with the Craft Food and Beverage Center being developed at Hartwick College. C. Supporting data is derived from Online search for existing beer and/or hard cider brewing courses or educational opportunities identified few options in NYS. The establishment of the Craft Food and Beverage Center at Hartwick College. High student enrollment in FOOD236: Beer, Wine and Food indicates a strong interest in the subject area. Oneonta students have gone on to work in the beverage industry including brewing, selling and marketing of beverage products. Former and current Oneonta students have approached the FSRA faculty with interest in brewing techniques and technology. Sodexo started holding pub events on campus and the ability to develop a line of Red Dragon products for use at those events would enhance them considerably.

The growth of new breweries and brew pubs locally including Roots, Doblers, Council Rock, another start-up in Oneonta coming soon and a brewpub under development in Norwich D. Measurement of the success of this grant can be accomplished through a. The establishment of course(s) in beer and cider brewing techniques. b. Student enrollment in those course(s). c. Student produced beverage products served at Sodexo pub events on campus. E. Implementation a. Grant approved, equipment ordered and received b. FSRA faculty work with student Matthew Kellner to brew at least one 25 gallon batch of beer fall 2016 to test processes and start to develop foundations for brewing course. Qualitative analysis will be conducted through food science and sampling methods to determine whether the product meets standards for use at a Sodexo pub event. c. FSRA faculty work with student Matthew Kellner to brew at least one 25 gallon batch of beer spring 2017 to practice processes and firm the foundations for brewing course. Product will be offered to Sodexo to serve at a pub event. d. FSRA faculty will develop and submit brewing course proposal in fall 2017. e. FSRA faculty will work with student Matthew Kellner in fall 2017 to develop follow-up course in recipe development and testing. Local brewpubs and breweries will be invited to participate in course development and the recipe creating and testing process. f. Agreements will be forged during fall 2017 with Sodexo to serve student produced beverage products at campus pub events. g. New brewing course will be offered spring 2018 or fall 2018 based on faculty resources. A follow-up course in recipe development and testing will be proposed. h. Local brewpubs and breweries will be offered the opportunity to partner with Oneonta students in the follow-up course on recipe development and testing. Work will begin with the Craft Food and Beverage Center at Hartwick College to collaborate with the Center and local business to increase local economic activity and employment opportunities for Oneonta students. Lowes Oneonta (607) 433 4000 Section III Consultation Tom Rathbone, Director of Facilities, was informed of this proposal and that the brewing system would be used in the FOOD labs (HECO 142 & HECO 139) which have water, drainage, exhaust fans and fire suppression systems necessary. He didn t find any concerns. Further consultation will occur with Terry Zimmer and Dale Couse to ensure project implementation with minimal impacts on existing operations. The system rolls into place for use and then can be rolled into storage when not in use.
