We were one of the first domaines to begin and we started on August 31st and while you're never entirely sure at the time you make the decision, in retrospect I am very happy we chose to start early. It's almost difficult to believe but even August 31st was 104 days after the flowering and given that 100 is the rule of thumb, we still had plenty of ripening time because the growing season started so early. We had reasonably good potential alcohols at between 11 and 12.2% but more importantly, excellent phenolic maturity and between 5 to 6 grams of acidity. The crop was mostly quite clean and on the left bank we had normal yields but on the right bank they were a bit lower than normal, partially because of early season hail in certain sectors and also because the berries were quite small. I like the 2011 vintage a lot and while it's not as classic in style as 2010 or 2008, the wines are still very Chablis in character and that is what is important." I have mentioned this before but it bears repeating so readers will not be surprised: for several years now Fèvre has elected to bottle its entire range, including the grands crus, under the Diam cork. Note further that effective with the 2008 vintage the label for the Vaulorent no longer indicates Fourchaume on it; previously it said "Fourchaume - Vignoble de Vaulorent". - Allan Meadows, Issue 48 2011, www.burghound.com Vintage 2012: Régisseur Didier Séguier describes 2012 as a "vintage that was very much in doubt until almost the very end of the growing season. We endured a rough start as the early season frost had a huge negative impact in the most precocious sectors which of course includes the grands crus. On both April 1
16th and 17th we had temperatures down to -6 C (<21 F). This caused general losses of between 5 and 10% and up to 30% in Valmur and Les Clos. Then a relatively poor and highly extended flowering caused plenty of shatter because of cool temperatures and wet weather. This provoked the associated result of having a high incidence of shot berries which further reduced yields. Then in both June and July there was hail in some sectors though most of the damage was on the right bank, especially in Fourchaume and Preuses. Conditions were largely wet through the beginning of August but then they turned extremely hot and dry which had the effect of accelerating the maturities and in particular to burning up the acidity in the fruit. We attacked the harvest relatively early, which is to say on the 20th of September because we wanted to preserve the acidity and also because the right bank was definitely mature due to the low yields. Moreover, because we have a very high proportion of old vines they also generally give lower yields that are mature sooner. As is almost always the case we started picking in Vaudésir. Because of the extended flowering, maturities were also heterogeneous and thus we picked from the 20th to the 2nd of October. The fruit was very clean and potential alcohols were in the 12.5 to 13.5% range with plenty of tartaric acid. Post-malo phs were between 3.05 and 3.15. These indicators were all to the good but the yields were painfully low at between 18 to 35 hl/ha in the 1ers and grands crus though the villages level vineyards gave us almost normal quantities. One of the interesting aspects that I have noted in my time here is how our organic viticulture has had the effect of consistently giving us better acidity levels. Consider that we even have some of our 2012s that have more overall acidity than their 2010 counterparts. As to the wines, they remind one of a hypothetical blend of 2009 and 2010 because they have the richness of the former allied with the acidity of the latter. There is plenty of dry extract and an intense minerality. Interestingly the 2012s share one similarity with the 2011s and that is a marked salinity. I think the 2012s are terrific because they bring plenty of Chablis character to bear without being excessively austere." The 2012 Fevre Chablis is an excellent expression of AC Chablis and is nipping at the heels of the premier cru s. The wine has a super fresh nose with lemon, spice and white peach. Saltwater, floral notes and subtle spice nuances characterize the aromas that slide gracefully into rich, concentrated and relatively refined medium-bodied flavors that display excellent delineation on the solidly powerful and mineral-driven flavors. This is also exceptionally rich and concentrated yet the medium weight flavours remain light and pure with absolutely no trace of heaviness on the mouth coating and stunningly persistent finish. Here too there is impressive size and weight to the solidly well-concentrated big-bodied flavors that possess an opulent mid-palate before ending in a mineral-driven and intensely saline-infused finish that just goes on and on. A mildly exotic nose that is ripe yet airy showcases aromas of orange peel, peach and hints of roasted nut and iodine leads to rich, even opulent medium plus weight flavors that are delicious, round and strikingly persistent on the mouthcoating finish. Perhaps the freshest of any of these grand crus to this point, which is interesting as Vaudésir tends to always be one of the very ripest of the GCs given how the configuration of the vineyards collects heat. While the nose is certainly ripe, it is also airy and elegant with floral, spice and orchard fruit aromas complementing the quinine and citrus notes that can also be found on the powerful, muscular and borderline robust flavours that somehow manage to remain refined and deliver the considerable dry extract with grace on the explosive finish. This is generous on the mid-palate but it s almost breathtaking as to how fast the finish tightens up. Impressive. (92-94 points) Allan Meadows, Burghound. 5
