What others say about this ebook: Review 1: I learned to cook from this book when I was a teenager, and it was the one I would turn to for years when I created suppers as a vegan. It was super important to me, and sparked a whole lifetime of healthy eating. I recently had a chance to read it again, after 20 years of trying lots of healthy dietary approaches. This book, as much as I loved it in the 90s, is a product of its time. When this book came out, my city was just starting to get its first organic food stores, and people were getting introduced to health food ingredients and how to avoid heavily over-processed convenience food. Vegan and low fat diets were really popular. The things about this book that are great: -the author's enthusiasm. You can really tell she practiced what she wrote about. -the emphasis on healthy eating, and eliminating processed and junk foods. Everything is prepared from scratch, lots of fresh food. -good ideas for meals, lots of suggestions for menus and what to pair with what to make a meal. -it's full of recipes, and is a pretty comprehensive approach to eating vegan. -it's full of good information about cooking methods and ingredients. -the recipes are often simple and are meant to showcase the flavours of the fresh ingredients. For this reason, many of the meals don't take a lot of time to prepare, if you're okay with tasting the flavours of the vegetables and grains and beans with not a lot of adornment. -the recipes have both raw and cooked foods, and would be really easy to adopt for someone just starting to eat more fresh food. (I find raw veganism too extreme) What I have learned since reading this book: Vegan diets have a lot to offer, and people need the fresh produce, the wide variety of plant foods. Factory farmed animal foods are not only bad for the body, but an environmental disaster that causes tons of pollution on the planet. Strict vegan diets are cleansing, but not building. I had great energy for the first little while on a strict vegan diet, but then I was hungry all the time and began to feel run down. I think veganism has a lot to offer the community in its emphasis on eating lots of vegetables and fresh food, but the successful vegans are the ones who are not strict, and who include some high quality seafood, homemade chicken stock or other animal foods from time to time. (For me, I sure felt a lot of benefit from eating some high quality, grass fed liver!) This book was written when saturated fat and cholesterol were thought to be unhealthy, and there are comments throughout the recipes about avoiding them. While this isn't an extremely low fat cook book, the butter and eggs that the book avoids are traditional fats that people have used for thousands of years, and we know now that they are necessary to build our health. Soy foods are not for everyone. I sure ate a lot of tofu and soy when I was a vegan, but I avoid it now. There are many recipes in this book using soy, as well as some other foods that I would tend to avoid now, like egg replacer, powdered vegetable stock cubes, fructose sweeteners, and wheat bread. I have found lots of wisdom in preparing whole grains properly before cooking, like soaking them 4 / 7
and sprouting them in order to increase their digestibility. This book was written before knowledge about sprouting grains was widespread, and while it has many great whole grain dishes and casseroles, I would now take the time to soak the grains overnight before using them. If I was to prepare the recipes from Marilyn Diamond's vegetarian cookbook today, I would include all the great vegetable dishes, I would sprout and soak the grains, and I would use home made chicken broths instead of the water and vegetable broth powder, raw dairy instead of the nut milks (sometimes-- I actually really like nut milk), and I would bake with eggs instead of egg replacer. I still do lots of things vegans do-- I make my own sprouts and make home made juice and vegetable soups, and I am pretty strict with avoiding sweeteners. The way I cook now would probably be considered more like French cooking, with delicious sauces using cream and homemade stock, lots of seasonings, fresh and seasonal ingredients from the garden, and very little snacking between meals. Though I don't make the desserts that the French do, or eat baguette daily. :-) Anyway, I sure do appreciate the role that Marilyn Diamond's book has played in my life and I thought I would write a review for it to help someone out there who is just starting out on their health journey and wants some information from others who have tried lots of stuff and learned much in the process. If I was to recommend a vegetarian approach to a beginner cook, I would say to check out the Moosewood cookbooks, because they emphasize fresh ingredients and have great flavour combinations but they are higher in protein and fat and therefore are more satisfying. If I was to recommend a good all around cookbook, honestly something like an old Joy of Cooking is wonderful, or Fanny Farmer, or Nourishing Traditions is great, too. I am glad to see that Marilyn Diamond has also allowed herself to experiment, grow and change. What she is doing now is very different from what she was doing when this book was published. But we all grow and change and it is a waste of our energy to look to the past. I sure appreciated her efforts in publishing this book, her devotion to health, and she basically taught me how to cook, so I can't ignore that. Best wishes and health to all. I have used it for many years, probably 15 or more, and I am extremely careful when I share it with neighbors. All of the "stedda" recipes involving tofu, and the twice baked potato/ squash recipes are worth the price of this book. Review 5: My old hardcover copy of this book is from 1990. I am not surprised that some people found the nutritional information a bit outdated, but the value of this book is the recipes. She has a lot of recipes that are semi-standard vegan recipes now (such as tofu salad--meaning not egg salad) with a little twist. She has some advice about cooking and really good directions. tweaks, many of these recipes can be made to fit more modern nutrition standards. This book was the first place I'd ever seen almond milk mentioned, and a recipe for making it is included. Back when this book was published, I had never heard of almond milk and it wasn't available in most stores. Even soy milk and rice milk were not readily available in regular grocery stores. While I never really followed the nutrition guidelines in this book, it contains a few recipes that became family favorites over the years, such as: "I Used to Love a Fried Egg" Sandwich (nothing like a fried egg but my kids liked it), the corn chowder recipe, Sweet Carrots au Naturelle (probably not that healthy, and I haven't made it for years, but I used to make this a lot and people seemed to like it), Carrot Hash Browns (until looking through this book today, I didn't remember where this recipe came from, but I still occasionally make a variation of this once in a while). Anyway, I liked this cookbook back in its day. It was one of the first family-friendly vegan cookbooks that I owned. I probably wouldn't follow the nutrition advice in it, though, as others have mentioned. I was looking for a digital version of this cookbook, but $14.99 (which is the price as of the writing of this review) is a little steep for a digital copy of a book I already own and that is rather outdated now.
