Black Bean and Corn Taco Bake 1 rotisserie chicken, taken off the bone and cut into bite-size pieces 1 jar of black bean and corn salsa 10 small flour tortillas, cut into pieces 2 cups shredded cheddar or Mexican blend cheese Mix the chicken, tortillas, cheese and 1/2 jar of salsa together and pour into a greased baking dish. Claire only uses 1/2 jar of salsa, but I thought it needed more so I poured the rest of the salsa over the top. Cover with foil. Bake at 350 for 30-45 minutes or until hot. Serving Suggestion: salad, tortilla chips and salsa

Pizza Bowties with Italian Sausage 1 lb. Italian sausage 1 lb. Bowtie pasta 2 cans Fire roasted tomatoes, lightly drained 1 green pepper, chopped 1 onion, chopped 1 clove garlic, minced (my tomatoes had garlic so I skipped this) 1 tsp. basil 1 tsp. oregano 1/2 cup mozzarella, shredded 1/2 cup Parmesan Cook the pasta according to the package directions. Brown the sausage with the onion, garlic and green pepper. Drain and rinse under hot water. Put the meat back in the skillet and add the tomatoes and seasonings. When the pasta is cooked and drained, mix it with the sauce and cheese. Serves 6-8 people. Serving Suggestion: salad

Cheesy Eggs and Ham Eggs the amount depends on how many people are eating and how hungry they are Ham lunchmeat, torn into pieces American cheese slices I think I used 2 for 5 eggs. That made it plenty cheesy for me. Salt and Pepper Butter Scramble the eggs and toss them in the skillet. After they've cooked a few minutes add the ham pieces, letting them get hot in the skillet, then stir them into the eggs. Toss in the cheese pieces when the eggs are just about done cooking. The cheese will melt into the eggs quickly. Serve with toast or biscuits. Serving Suggestion: fresh fruit, toast

Chicken and Dressing Casserole 3 cups of cooked chicken, approximately 1 box of cornbread stuffing mix 1 can chicken broth 3 Tbs. butter 1 1/3 cups milk 1 can cream of chicken soup Put the chicken in the bottom of a baking dish (13 9 or nearly that size). In a large bowl, melt the butter in the microwave. Add the chicken broth and stir in the stuffing mix. Set aside while you mix the milk and cream soup together in a separate bowl. Pour the milk/soup mixture over the chicken. Top with the stuffing mix. Bake at 350 degrees for 45 minutes to one hour. I think it's best baked uncovered, but my kids revolt if it gets too brown so I usually cover it for most of the time and then let it brown up near the end of cooking. Serving Suggestion: Warm Applesauce with Toasted Marshmallows, favorite steamed veggie

Warm Applesauce with Toasted Marshmallows Pour the apple sauce into a small baking dish. If your apple sauce doesn't have cinnamon, just stir some in. If you have other things in the oven, go ahead and pop it in to heat for a while, then pull the apple sauce out of the oven and sprinkle with marshmallows. Put it back under the broiler for a minute to toast the marshmallows. Or you can sprinkle the marshmallows of the apple sauce before you heat it. Put it in the oven at 350 degrees for about 15-20 minutes. The marshmallows will toast slowly as the apple sauce heats.

Italian Beef Sandwiches in the Slow Cooker 1 large roast (fat trimmed if needed) 1 package Good Seasons Italian dressing 1/4 cup vinegar 1 Tbs. sugar 1-2 cans chicken broth (I used 1) 1 tsp. garlic powder 1 package brown gravy mix (mixed with 1 cup water) 1 green pepper, sliced 1 small jar pepperoccinis with juice (I used half the jar you see in the picture) Poke the meat with a fork or knife and put it in the crockpot. Mix all the ingredients and pour over the meat. Let it marinade overnight or cook it right away on low for 8-10 hours. Or, be like me and don t fix it until lunch time then crank it up on high and cook it for 5-6 hours. Shred the meat and serve on hoagie buns with the peppers and sauce for dipping. Serving Suggestion: Oven Fried Potatoes, baby carrots

Oven Fried Potatoes potatoes, cleaned and sliced very thin olive oil, just a Tbs. or 3 seasoned salt In a large bowl, drizzle olive oil over the potatoes. Sprinkle with seasoned salt and stir until well combined. The amounts just depend on how many people you are feeding. Four decent sized potatoes should feed 6 people. Place in a single layer on a baking sheet. Bake at 425 degrees for about 20 minutes, or until tender and browned. You can flip them over with a spatula and let them brown on the other side too if you want them crisper.

All Veggie Vegetable Soup large can of tomato juice potatoes, carrots, parsnips, onion chopped any other veggie you d like to add (diced tomatoes, corn, cabbage, green pepper etc) salt and pepper to taste 5 cups water Put the juice and water in a large pot. Add the chopped veggies and cook until tender. Season with salt and pepper. Serving Suggestion: cornbread

Butter Pecan Crunch Cake Butter Pecan cake mix 1 stick butter, melted 2/3 cup milk 1 egg 2-4 Tbs. cold butter *see note* 1/2 cup pecans or walnuts 1 cup toffee chips Measure 1 cup of cake mix and put it in a bowl. Set it aside for later. Beat the remaining cake mix, melted butter, milk and egg with an electric mixer till well combined. Pour into a greased 9 13 pan. Cut the cold butter into 1 cup of dry cake mix with a pastry blender or fork to make crumbs. Stir in toffee chips and nuts. Sprinkle on top of the batter. Bake at 350 degrees for 30 minutes or until a toothpick comes out clean. *I used 2 Tbs. of butter for the crumb topping, but I think it needed more butter. A reader shared that she used 4 Tbs. and it worked great.
