Absolutely NONE of the fun we have had this year could have happened without the hard WORK of our volunteers. Whether you were on the board, or just stepped up to offer a hand when it was needed, we are so thankful for each of you. So, please join us as we enjoy some Friendship and Aloha together, and applaud not only our volunteers, but highlight the many ways volunteers can be awesome! We will also vote on the slate for the 2016-2017 Hui O Wahine Executive Board during the luncheon, so please throw your name and talents into the ring! I TRULY never thought I would ever be the President of a spouses club, and while I know I have been far from the perfect President, I also know that this year has been the most amazing learning and growth experience for me. Volunteer Highlight Lynette Davidson Nobody can do everything, but everyone can do something. ~Author Unknown Lynette Davidson joined our Hui August 2015. She hails from Tallahassee, FL. One of her favorite things to do on island is going to the beach with her family and friends. Lynette Davidson embodies this idea. She became aware of our need to have someone take over the Hui O Wahine Reservations while Jan Ferido tended to her family for a few weeks. Lynette stepped right up to fill in for Jan. Our Hui O Wahine members continued on, oblivious to any changes. Lynette took the time to get the reservation request sent out and logged for our Hui events. She welcomed us with her sweet smile at the front door to collect our nametags and pay for lunch. She diligently kept a record of payments received for our Treasurer, Katie Robertson. Lynette enjoys her three children, ages. Most of us might rightly imagine her day (and nights) are full to the brim with activity, yet Lynette balanced more on her full plate to answer the call for help. Lynette the Hui O Wahine would like to express our heartfelt gratitude for stepping in to help out with the Reservations. The Hui O Wahine Hui O Na Wahine Mock Dining In rocked it! We had a great time supporting the Hui O Na Wahine s Mock Dining In. We rocked the night away in 80 s style as Robert Palmer and his ladies all Addicted to Love! Where did they get those guitars? Retired Military Spouse Group The Retired Military Spouse Group is the newest Hui group on the island with 35 members so far and growing! This is a group for both wives of retired service members, as well as female retired service members. The intent of the group is to build friendships among ladies from all services, who have their past military lives in common and have made Oahu their permanent post-retirement home. We look forward to sharing all sorts of adventures (dinners, hikes, conversations, movies, lunches, etc.) with other Oahu retired military spouses. Additionally, it is our vision that members of the group taking turns coordinating or hosting gatherings, every month or so. Please join our Facebook Page at: https://www.facebook.com/ groups/473271209532994/. This will be the venue for each of us to post upcoming events, questions, comments, and invitations for the group. The Facebook page is also our best resource for suggesting spontaneous gatherings, such as movies, hikes, dinners, and etc. The next formal group event is a couples get-together. Are you taking the abundance of year-round fresh pineapple for granted? Pineapple Mojitos (Food & Wine) Ingredients: Pineapple Recipes Bacon Wrapped Pineapple Bites Ingredients: 12 bacon slices, cut in half 24 pineapple chunks Directions: Preheat oven to 400-degrees. Line baking sheet with baking parchment or aluminum foil. Wrap each pineapple with piece of bacon, secure with toothpick and place on lined baking sheet. Bake until bacon is crispy, approximately 20-25 minutes. Pineapple Syrup 1 1/2 pounds peeled fresh pineapple chunks 2 tablespoons packed dark brown sugar Mojitos 1/2 pound diced fresh pineapple (2 cups) 1 cup lightly packed mint leaves, plus sprigs for garnish 2 cups white rum 3/4 cup fresh lime juice Ice 1 1/4 cups chilled club soda Lime wedges, for garnish Directions: MAKE THE SYRUP In a saucepan, bring the pineapple, brown sugar and 4 cups of water to a boil. Simmer over moderately low heat, stirring, until the pineapple is very soft and the mixture is reduced to 2 1/2 cups, 40 minutes. Strain the mixture into a heatproof bowl, pressing on the solids; discard the solids. Let the syrup cool; you should have about 1 1/3 cups. MAKE THE MOJITOS In a pitcher, muddle the pineapple and mint leaves. Stir in the rum, lime juice and 1 cup of the pineapple syrup. Pour into 8 glasses and add ice. Top with club soda and garnish with mint sprigs and lime wedges. MAKE AHEAD The syrup can be refrigerated for 2 weeks. April 2016 7 of 12
