Cool Whip Jell-O Salad 1small tub of frozen cool whip 1 small carton of cottage cheese 1 large box of lime or orange Jell-O 1 small can crushed pineapple (drained) chopped nuts are optional Stir everything together and allow to set overnight Creamy Green Jell-O Salad 1 small box of lime Jell-O 1 cup boiling water 1 cup 7 up or sprite 4 oz. softened cream cheese 1 small tub frozen cool whip 1. Combine Jell-O and water until dissolved. Blend in cream cheese-no lumps. 2. Add 7 up and refrigerate until slightly jelled. 3. Fold in cool whip and chill overnight. Mint Chocolate Sandwiches 1 (3 oz.) pkg. Cream cheese Room temperature few drops of green food coloring ½ teaspoon peppermint flavoring about 3 cups powdered sugar 1. Blend cream cheese with coloring and flavoring in the mixer. 2. Add powdered sugar as much as possible. 3. Switch to dough hook and knead in the remainder. Should be like play dough. 4. Roll into a flat sheet between two sheets of plastic wrap. Place on a cookie sheet and frost the top side with melted chocolate. Cook and then invert onto another cookie sheet. Frost the other side with melted chocolate. Cool and then cut into 1 inch squares.
Tortillas 3 cups flour 1 1/2 teaspoon baking powder 1/4 cup shortening 1 1/2 teaspoon salt water? 1. Cut the shortening into the dry ingredients with a pastry blender 2. Add enough water to make a soft dough. Start with 1/2 cup. 3. Roll out thin. 4. Fry on a hot griddle (no grease) until golden spots appear. (Makes 6 large shells) Mexican Chicken Salad 4 cups chopped cooked chicken 2 cups shredded cheddar cheese 1 can kidney beans (drained and rinsed) 1 can chopped green chilies 1 medium onion (cooked a little or use some green onions) 4 Tablespoons of chopped green pepper 1/2 cup sliced olives 1/2 cup sour cream 1/2 cup mayonnaise 1 envelope taco seasoning mix head of lettuce washed and shredded 2 tomatoes chopped Pita bread or tortilla shells optional 1. Cook chicken or use canned chicken. If using canned chicken, brown it a little in oil. 2. Blend the sour cream mayonnaise and seasoning mix well, and then add all the other ingredients listed above. 3. Serve with lettuce and tomato. Use tortilla shells or pita bread or eat plain. Sweet and Sour Sauce for Chicken Chow Mein 1/3 cup red wine vinegar
1/2 cup water 1/2 cup brown sugar 1 Tablespoon cornstarch 6 ounce pineapple juice (small can) 3 Tablespoons soy sauce Vegetables like: onion, carrots, celery, mushrooms, broccoli, water chestnuts, green peppers, zucchini, etc. Cook meat (chicken or pork) and vegies. Mix up sauce, pour over and stir 3-5 minutes until thickened. Pizza Dough 1 tablespoon yeast 1 cup warm water 1 teaspoon salt 1 teaspoon sugar 2 Tablespoons oil 2 to 2 1/2 cups flour 1. Dissolve the yeast in warm water. 2. Mix in all the other ingredients. 3. Knead dough for about 5 minutes. Roll out the crust. Makes 2 pizzas. Egg Drop Soup 5 cups water plus 5 chicken bouillon cubes or 2 large cans chicken broth 1/2 teaspoon salt 1/2 teaspoon MSG (optional) 1 package of frozen mixed vegetables sliced celery sliced green onions 1/4 cup cold water 1 1/2 Tablespoon cornstarch 1 egg beaten 1. Heat the broth to boiling. Add vegetables and simmer until celery is tender. 2. Mix the cornstarch and water. Stir gradually into the broth to thicken it. Boil 1 minute. 3. While soup is boiling, slowly pour the egg into it stirring with a fork, to form shreds of egg.
Dessert Crepes 1 cup flour 1/4 cup sugar pinch of salt 3 eggs 1 1/2 cup milk 2 Tablespoon oil 1 teaspoon vanilla 1. In the mixer add the flour, sugar, and salt. 2. Add eggs, one at a time, beating thoroughly. 3. Gradually add the milk, oil, and vanilla. 4. Beat until smooth. 5. Cook in electric frying pan at 375 until just golden. 6. These make large thin crepes. 7. Add your favorite fillings such as nuttella, cherry or blueberry pie filling, ice cream, fresh fruits, meat fillings, strawberries, jams, etc. Fruit Salsa with Cinnamon Chips 2 medium Granny Smith apples 1 cup strawberries sliced 1 kiwi, peeled and chopped 1 orange 2 Tablespoon brown sugar 2 Tablespoons apple jelly Peel, core, slice and chop the apples. (Or use food processor) Chop up the kiwi and strawberries. Place fruits in a bowl. Zest and juice the orange. Add the orange zest and juice with the brown sugar and apple jelly and mix gently. Chips Lightly spray tortillas with cooking spray or water. Sprinkle with a cinnamon and sugar mixture over the tortillas. Cut each one into 8 wedges: place in a single layer on a baking sheet. Bake at 400 for 8-10 minutes. Cool and eat with fruit salsa. Vanilla Pudding ½ cup sugar
2 Tablespoons cornstarch 2 cups milk 2 beaten egg yolks 2 Tablespoon margarine 1 ½ teaspoon vanilla 1. In heavy saucepan combine sugar and cornstarch. Stir in milk. Cook and stir constantly over medium heat until thick and bubbly. Cook two minutes more. Remove from heat. Gradually stir 1 cup of hot milk mixture into the egg yolks. Add this mixture back to the milk in pan. Bring milk back to a gentle boil. Reduce heat. Cook 1 minute more. Remove pan from heat. Stir in the butter and vanilla. Cream Puffs 1 cup water ½ cup butter or margarine 1/8 teaspoon salt (pinch) 1 cup flour 2 eggs at room temperature Medium saucepan combine water, butter, and salt. Bring to a boil. Add flour all at once, stirring vigorously. Cook and stir until mixture forms a ball. Remove from heat. Cool 3-5 minutes. Add eggs, 1 at a time, beating well with a spoon after each addition until the dough no longer looks slippery. Drop 12 heaping tablespoons of dough onto baking sheet. Bake in oven 400 for 30-35 minutes or until golden. They should feel firm to the touch.
