CHOCOLATE CHIFFON CAKE Laura Zanin INGREDIENTS 120 MINUTES 12 SERVINGS Chocolate Chiffon Cake: 6 uova grandi + 1 albume / 6 large eggs plus one additional egg white 200g farina / 200g sifted cake flour 25g cacao amaro / 25g unsweetened cocoa powder 300g zucchero / 300g granulated white sugar 2 cucchiaini di lievito per dolci / 2 teaspoons (8g) baking powder 1g dbicarbonato di sodio / 1g baking soda 1/2 cucchiaino di sale / 1/2 teaspoon salt 120ml olio di girasole / 120 ml flavorless oil (vegetable, corn, canola, or safflower oil) 180ml caffè / 180 ml freshly brewed coffee or water, at room temperature Glassa al cioccolato - Chocolate Glaze: 180g cioccolato al latte o fondente / 180g semi sweet chocolate, chopped 60g burro / 60g butter, diced 2 cucchiai di sciroppo di glucosio / 2 tablespoons light corn syrup (liquid glucose or golden syrup) Panna - Mocha Filling: 50g zucchero / 50g white sugar 15g cacao amaro / 2 tablespoons (15g) unsweetened cocoa powder 1 cucchiaino di polvere istantanea di caffè / 1 teaspoon instant coffee powder 400ml di panna da montare / 400 ml cold heavy whipping cream TAGS #Cake #Chiffon #Chocolate #ChocolateChiffonCake 1

1 2 3 Separate i tuorli dagli albumi, ricordandovi di aggiungere un albume in più, e metteteli in due ciotole differenti. Preriscaldate il forno a 165 C in modalità statica. Separate the eggs while from the egg yolks. Place the egg yolks in one bowl and the whites (along with the extra egg white) in another. Preheat the oven to 325 F (165 C). Montate gli albumi a neve fino a quando non si saranno rassodati. Make a well in the center of the flour mixture and add the wet ingredients and whisk until smooth. 3

Tagliate orizzontalmente la torta in tre parti. Cut the cake in three parts horizontally. 5

19 20 21 Spalmate 1/3 della panna montata sul primo strato. With a spatula spread 1/3 of the cream on the first layer. Posizionate l'altro pezzo di torta e ripetete. Take the middle layer and place it over the other and repeat. Then place the last layer. Prendete il composto sciolto a bagnomaria e versatelo in cima alla torta, aiutandovi poi con una spatola per coprire bene tutto intorno. Take the chocolate glaze and pour it over the top of the cake and push it over the sides. 22 23 24 Finite di decorare con la panna rimanente. Al termine ponete la torta in frigorifero.
