WINE LIST Crafting a wine list is an art (and a bit of science) into itself. First, there are the usual suspects: red versus white; old versus new worlds; light versus medium-to-full-body. Then, there are the deeper questions of which the answers require greater contemplation: Should we throw in a Rosé? How many Piemonte wines should we have with respect to how many Tuscan wines we have? What about wine by the glass selection? Do we classify the list into region, country or price? Yet, the central question that we always come back to remains: Are the wines we select compliment well with the dishes in our menu? If I drink this full-bodied Barolo Riserva Otto Destefanis (superb wine, by the way), would its ripe fruit note flatter the buttery texture of the Chianina beef? If we have a seafood dish as an appetizer, would the acidity of the Gavi de Gavi go well with the Vongole juice? And the questions go on and on till we get it right, for we believe wines are better consumed with food as the two enhance each others flavours. As you flip through these pages, you will see that some are perfect match to the food, while some reinforces on the taste that the food may not have.
