The base of each bract & the large, fleshy base (or artichoke heart) are edible & delicious. The smaller, immature heads are the most tender. Beautiful plants become large, 4-5' tall & wide, & unharvested buds open into gorgeous thistle-like flowers. Full sun to part shade. These are perennial plants that can produce for several years. Carciofo Romanesco (80-90 days) Classic Roman variety with bronze-streaked foliage & sweet, flavorful, purple-tinged buds. Green Globe Heirloom (78 days) The purple-tinged, deep green buds develop into 3-5" wide, thick, flavorful heads, about 3-4 per plant. Bak Choi/Bok Choy (early spring only) One of the most popular Asian vegetables. Tasty leaves with slight mustardy flavor. Harvest at any stage. Great in stir fries, soups, noodle & meat dishes, and salads (young leaves). Green Joi Choi hybrid (40-50 days) Large, fast-growing, vigorous plant; tolerates a wide range of temperatures; bright green leaves 12-15" tall. Award winner. (JJL) Cabbage (early spring only) Hwa King (70-80 days) Chinese (or Napa) type with a more delicate flavor than regular cabbage. Use in salads or stir-fry.
