IN RIMINI, THE BEST BARISTAS COMPETE FOR THE TITLE OF ITALIAN CHAMPION TO REPRESENT ITALY IN THE WORLD The aroma of coffee will invade the 39 th SIGEP. On show will be the very best of world production of the precious raw material, together with trade professionals. This will be the ideal setting for the performance of all the competition finals dedicated to coffee, and which can be traced back to the prestigious international circuit of the WCE (World Coffee Events), promoted by the SCA (Speciality Coffee Association). In Rimini dozens of baristas selected from all over Italy will compete for the championship title in the Italian Barista Championship, Italian Latte Art Championship, Italian Coffee in Good Spirits Championship, Italian Brewers Cup Championship, Italian Cup Tasting Championship, Italian Ibrik Championship and Italian Roasting Championship. CIBC: 20/21.01 Selections Saturday 20 Sunday 21 CIBC Italian Barista Championship Cafeteria valid for the WBC (World Barista Championship) The competition consists in preparing, within a maximum time of 15 minutes, 4 espressos, 4 coffee and milk-based beverages, hot and 4 espresso-based customized non-alcoholic drinks, to be served to a panel of expert judges/ tasters. The rules of the competition are the same as those of the WBC (World Barista Championship), a veritable Barista Olympics. CILA: 22.01 CILA Italian Latte Art Championship valid for the WLA (World Latte Art Championship) In this type of competition, the competitors must show dexterity and artistic spirit. The participants will have to overcome various stages before the six best competitors reach the final. Here, in a maximum time of 10 minutes they will have to prepare 4 artistic coffee and milk-based beverages, two coffee-based and two milk-based. Different techniques can be used: decoration and free pour ; two espresso macchiato must also be prepared using the free pour technique, with identical design, to be presented to 2 visual judges, 1 technical judge and a head judge. 4 4
IBRIK: 21.01 Sunday 21 Italian Ibrik Championship valid for the WCIC (World Cezve /Ibrik Championship) The competition highlights the preparation of coffee using the Ibrik, a pot specifically designed to prepare a particular type of coffee widely consumed in parts of Eastern Europe, the Middle East and North Africa. The pot, which can be made of metal, brass, copper or ceramic, is equipped with a long handle and a rim specifically designed to serve coffee. CIGS: 22.01 ITALIAN CUP TASTING CHAMPIONSHIP CIGS Italian Coffee Championship in Good Spirits valid for the WCIGS (World Coffee in Good Spirits Championship) The Coffee in Good Spirits is a fascinating speciality which combines the world of coffee and that of bartending, to create classic or fantasy drinks. In this type of competition, the competitors have 10 minutes to prepare two Irish coffees and two cocktails, hot or cold, made with hot coffee and spirits CUP TASTING: 23.01 Tuesday 23 Italian Cup Tasting Championship valid for the WCTC (World Cup Tasting Championship) In this competition the competitors will demonstrate their ability to distinguish the differences in taste between different cups of Specialty Coffee. Using taste and smell, and applying all their attention and expertise, the competitors will have to identify, as quickly as possible, the cup containing a coffee with a different taste within a set consisting of 3 cups. For each round, 8 sets of 3 cups each will be placed on the table.
BREWERS CUP: 23.01 Tuesday 23 BREWERS CUP Italian championship valid for the WBRC Preparation method common in the Nordic countries, the United States and Asian countries which is also gaining in popularity in Italy. The coffee will be brewed by the competitors using so-called pourover manual methods, i.e., filtration systems whereby the barista pours hot water over the coffee powder which is retained by a filter. The participants, who will prepare three drinks each to be served to 3 sensory judges, will try to not only obtain a good cup of coffee but also prepare it correctly with a solid value to be measured by the judges using a refractometer. ROASTING: 20/21/22.01 Italian Roasting Championship valid for the WCRC (World Coffee Roasting Championship) The roasting competition, which made its international debut in 2013 in Nice, consists of a packed program lasting three days altogether and based on: classification of green coffee, roasting and tasting of roasted coffee. The technical panel, under the supervision of an international judge, will be required to oversee and award a total score to the competitors at the end of the three days. 6
BARISTA & FARMER INSTALLATION HALL SOUTH BARISTA & FARMER Unveiled at SIGEP the daily program of the fourth edition Barista & Farmer is the first international talent show devoted entirely to the world of coffee excellence. A unique and innovative education & competition project for the promotion of coffee culture, from harvesting in plantations in the countries of origin, through all stages of processing, using various different technologies, right up to the experience of tasting and all consumption opportunities. The participants in Barista & Farmer, all very high-level, will be involved in a comprehensive project that starts with the coffee plantation harvests, includes all the stages of coffee production and the range of technologies used and ends with coffee tasting opportunities and a look at the variety of ways coffee is enjoyed. They will attend the Barista & Farmer Academy, a special multidisciplinary school where they will follow SCA training modules on agronomy, botanics, raw coffee, coffee roasting and coffee extraction under the direction of Alberto Polojac, along with a large number of other experts with considerable international experience. Work and learning will be interspersed with opportunities for fun and relaxation, with themed games and competitions. And after the successful 2016 event hosted by Brazil (the first being held in in Porto Rico in 2013 and the second in Honduras in 2015), Lavazza will be among the main partners and sponsors of the event for the second time running. On the theme of what it means to make a sustainable coffee, Lavazza will play a major role in the Tierra! Project developed in 2002 in conjunction with the charity the Rainforest Alliance, which aims to improve the social, environmental conditions and production techniques of some coffee producing communities. One of these is Brazilian Lambarì, which hosted the last Barista & Farmer event won by Nikolaos Kanakaris, a 32-year old Greek barista from Athens. The format was created by Francesco Sanapo, multi-award-winning champion barista, and organized by SIGEP - Italian Exhibition Group, in partnership with World Coffee Events and in collaboration with Tierra! by Lavazza. 7
