Gold / Joven - Are Blanco Tequila's with the addition of caramel colouring, sugar syrups and oak extracts giving the Tequila it's golden colour. Typically smoother and a popular choice for cocktails. Reposado - Literally translates to mean 'rested'. Mexican law states that to be called Reposado it must spend at least 2 months in wooden barrels. Barrel ageing adds complexity and mellowness to the Tequila. Anejo - Anejo translates to mean vintage or age. According to Mexican law, it must spend at least 1 year in wood Barrels with a maxium capacity of 600 litres. These are tequilas with richness and body. Extra Anejo - These Tequilas must spend a minimum of 3 years in barrel. They are rich and very complex; showcasing flavours of chocolate, caramel, spice and smoke.

The Lowlands offer flavours of caramel, treacle, brandy snap and ginger with creamy palates. In the Islands, including Islays, you will find bold peaty styles filled with spice, smoke, moss and briney characters. Campbeltown Whiskeys intermingle wonderful notes of smokey peat, ash, citrus peels, heather and spices.

To this day both countries fiercely defend that it originated in their country. It is made by distilling wine into a high proof Spirit. Varieties used include aromatic varieties such as Torontel, Moscatel and Albilla and more obscure varieties such as Quebranta and Negra Criolla. Pisco is a highly versatile spirit. Serve it straight up, in a sour or enjoy in our 'Rapa-Nui' cocktail!
