Although it is more costly than the conventional heat-drying method, it preserves the original nutrients and allows for long-term storage. According to a research, while refrigerated fruits lose up to 80% of their nutrients, freeze-drying has little or no effect on nutrient contents such as vitamin C, anti-oxidant and polyphenol.
