As in a mosaic from afar the picture is clear, but closer up the three varieties of the blend show their identity in steel tanks at 26/28 degrees Celsius. Sponaneous malolactic fermentation. The wine matures for al least 12 months in French oak barrels of second and third use. Finishing in the bottle for 6 months.
