Camp Hope Recipes Little Lunch Pizzas Untensils Needed: Fork Toaster or microwave oven Cookie Sheet 1 English Muffin for each child Pizza Sauce Pepperoni or Canadian Bacon Shredded Cheddar and or mozzarella cheese Measuring Spoons Pot holders Spatula May use an oven or a microwave: 1. Split English muffin with a fork, then toast. 2. Top each muffin half with 1 tablespoon pizza sauce, 1 tablespoon shredded cheese and one or two pepperoni. 3. Microwave 30 second then check. Microwave 10 more seconds or until cheese is melted. 4. Remove muffin halves from plate with spatula. Cool slightly Srambled Eggs 2 eggs per person 1 tablespoon of water or milk per eggs 1 tablespoon of butter or cooking spray grated cheese for taste (optional) salt and pepper to taste sliced ham and/or bacon for taste 1. Spray or grease a microwave safe bowl with cooking spray or butter. 2. Crack eggs and pour a tablespoon of milk into the bowl. Whisk them together with a fork. Add any goodies such as ham, cheese, etc. if you wish. 3. Place in microwave and cook for 30 seconds on high. Use caution since the bowl may be hot, so wear oven mittens. Remove, as they will be partially formed. Use your fork to stir them gently, so that the uncooked blends in with the still loose egg. Set the eggs back in the microwave. 4. Microwave the eggs for 10 second intervals until you get the more solid, than liquidy egg. Be sure to not overcook. 5. Serve and enjoy

Serve on wholewheat bread. Heat beans in microwave or pork n beans can be eaten cold. (Can do as a hobo lunch place one can of tuna, one can of beans, a fork, and an orange inside a bandana. Tie its corners securely and attach onto a sturdy stick. Pretend you are going on a hike and find a place to have your hobo lunch.) Fruit Salad Apples Oranges Grapes Kiwi Wash fruit and cut up. Mix in coconut and marshmallows. Peanut Butter Caterpillars Recipe 1 pc of grape 1 pc of banana (ripe) 2 Tbsp. of peanut butter Peel the banana then slice them. Attach them back together by spreading peanut butter in between. Attach the grape for its head. RICE KRISPIE TREATS Makes 2 dozen 1/4 cup margarine 10 ounces marshmallows (4 cups mini marshmallows) 6 cups Rice Krispies 1. Melt margarine in microwave safe bowl in the microwave for 40 seconds. Add marshmallows, microwave for 10 seconds, stir, and continue stirring every 10 seconds while cooking until marshmallows are melted. 2. Add cereal and stir until well coated. 3. Using buttered spatula or waxed paper, press mixture evenly into 9 x 13 inch pan coated with cooking spray. 4. 4. Cut into squares when cooled. Variation: Add 1/4 cup peanut butter to melted marshmallow mixture just before adding cereal. Stir until smooth. Then continue with above steps. MyPlate Burritos Ingredients needed: 10 to 12 inch flour tortillas Mayonnaise Mustard Slices of Ham and/or Turkey Black beans, cooked and drained On a tortilla spread mayonnaise or mustard if desired. Corn, cooked and drained Shredded cheese Shredded lettuce Black Olives Dill and Sweet Pickles Place slices of ham or turkey on tortilla. Load with beans, corn, cheese, lettuce, olives, pickles. Fold up one end and roll sides in.

Ingredients needed: 1 24 ounce unsweetened applesauce 1 tablespoon cinnamon red hot candies 1/8 teaspoon ground cinnamon. 1. Combine applesauce, candies and cinnamon in bowl. 2. Octopus Dogs 1 can of chili 6 pieces of hotdogs 6 pieces of hotdog buns Mustard Ketchup Make vertical slits on the hotdogs, leaving an inch intact. Make eight legs like the octopus. Boil the hotdogs. Slice the buns open and place chili in it. Place the hotdogs, make sure to spread its legs. Serve at once. Pudding Fruit Salad Equipment: 2 Mixing bowls and spoon. 1 can mixed fruit salad 1 can of pineapple 1 banana 1 box of instant pudding 1. Drain fruit and keep juice. 2. Place fruit in bowl, if there are big chunks you can cut up, otherwise you can leave whole. 3. Mix juice of fruit with instant pudding and stir until thick. 4. Pour pudding over fruit and stir. 5. May refrigerate or eat immediately. Other foods to have: Raw vegetables, ranch dressing, milk or juice.

Allow to simmer and stir often to allow noodles to cook and juices to penetrate the meat. Vegetable Salad Ingredients; Iceberg and Romaine Lettuce Tomatoes Onions Carrots Croutons Grated cheese Salad Dressing 1. Cut up lettuce and vegetables and mix well together. Add cheese and croutons. 2. Top with dressing and serve.

Homemade Pimento Cheese Sandwiches 2 cups Grated Cheddar Cheese, mild and sharp 1 can of chopped black olives 1 small jar of pimentos 1/4 teaspoon of pepper ½ cup mayonnaise Whole wheat bread In a bowl combine grated cheese, black olives, pimentos and pepper. Mix well. Fold in mayonnaise. May add more if dry. Spread on bread. Ham Rollups Ingredients Needed: Slices of ham or turkey Mayonnaise Dill pickles Toothpicks Take a slice of ham or turkey. Spread mayonnaise on top. Place whole pickle. Roll ham. Slice in to 2 in slices. Place tooth pickets to keep together. Fruit Pizza Cookies Equpiment: Mixing bowl, spoons, knives, bowls for fruit. Ingredients needed: Sugar cookies (purchased or homemade) 1 8 oz. Cream cheese, softened 1 7 oz Jar marshmallow cream blueberries strawberries peaches kiwi In a medium bowl, blend the marshmallow creme and cream cheese. Spread the mixture over the baked cookies. Top with fruit. Chill until serving.

PART PIZZA PART QUESADILLA This snack sandwiches cheese, sauce, and toppings between two flour tortillas. Your kids can cut the finished pie into slices like a traditional pizza that are just right for sharing. Two 6 inch flour tortillas 1/4 cup grated cheddar cheese 1/4 cup grated mozzarella cheese 2 slices thinly sliced smoked turkey or ham 1 tbsp. pizza or spaghetti sauce Sliced tomatoes, black olives, peppers (optional) 2 6 to 8 inch flour tortillas 1. Place one tortilla on a sheet of waxed paper and sprinkle with half of each cheese. 2. Cover with turkey or ham, a tablespoon of sauce and optional toppings. 3. Sprinkle with the remaining cheese and cover with the other tortilla. 4. Set on a microwave safe plate, cover with a sheet of waxed paper, and microwave on High for one and a half minutes or until the cheese has melted. 5. Let cool for two minutes, the cut into wedges. PUDDING IN A BAG! You Need: Boxes of Instant Pudding (1 box for 2 children) Milk (according to instructions on pudding box) Ziploc bags (1 for each child) Measuring cups 1. Pour half a box of pudding into each child's Ziploc bag. 2. Measure enough milk to make half a box of pudding and allow children to add it to their pudding in the bag. 3. Seal the bag (make sure it's really sealed!!) 4. Children can squish the bag around with their hands, mixing the pudding with the milk. 5. When all of the pudding is mixed, cut a small hole in the corner of the bag and let the kids suck the pudding out!

Pancakes 3 cups of flour; sifted 1.5 Tbsps of baking powder 1 tsp of salt 2 pieces of eggs (large) 2 cups of milk (whole) 2 Tbsps of oil Combine flour, salt, and baking powder inside a bowl. Combine milk with eggs; mix them well and add onto the flour mixture. Incorporate well and slowly add the oil. Variations: Add two tablespoons sugar and two teaspoons cinnamon OR Add fresh or frozen blueberries. Serve with Smokies Peaches with a Sunshine Smile Recipe 1 can of halved peach 2 3 cups of low fat cheese curd (Cottage Cheese) Lettuce Arrange the lettuce onto a plate or bowl. Spoon cheese curd onto the lettuce like the rays of the sun. Place the halved peach, with its round facing up, as the sun. Gently press the raisins onto peach, forming its face. Daisy Apple Recipe 2 Tbsp. of raisins (or currants) 2 Tbsp. of peanut butter (crunchy or creamy) 1 pc of apple (McIntosh); cored and seeded Peanuts (for garnish) Save some raisins to be used for the face. Combine the rest of raisins with peanut butter; push inside the hollow of the apple. Form a smiley atop the mixture with the saved raisins then arrange peanuts around the peanut butter. Refrigerate till chilled then serve. Note: Omit peanuts if to be eaten by small children and also to children allergic to peanuts.

Hoagie buns Sliced lowfat cheese Lean luncheon or deli meat Shredded carrots, lettuce, or sprouts Olives Cherry tomatoes Miscellaneous condiments (mustard, reduced fat mayonnaise, etc) Toothpicks (or broken spaghetti pieces) Clean work surface and hands Make hoagie sandwich, using desired ingredients. On one end of the sandwich, use toothpicks or broken spaghetti pieces to position olives for eyeballs and cherry tomato for nose. Arrange shredded carrots, lettuce, or sprouts on top for hair. If desired, stick a small piece of lunch meat out of the "mouth" for a tongue. Cream Cheese Sandwich Recipe 2 Tbsp. of cream cheese 1 3 tsp. of nuts (walnuts, pecans, or almonds); chopped 1 3 tsp. of grated carrots (cucumber, bell pepper, celery; diced) 1 3 tsp. of fruits (orange, apple, pear); diced 1 3 tsp. of raisins (or chopped dates) 2 pcs of bread slices Stir (cream) cheese inside a bowl till creamy. Add any preferred ingredients while adding little milk. Mix thoroughly till smooth. Spread onto the bread like a sandwich Banana Smoothie Ingredients 1 frozen banana 1/2 cup nonfat yogurt 1/2 cup fresh orange juice 1/4 cup blueberries, washed Instructions Combine all ingredients in a blender and blend until smooth. Serves 1.

Wagons Recipe 2 pieces of celery (stalks) 16 pieces of carrot slices (rounds) 12 pieces of toothpicks 1/2 cup of peanut butter (or ranch dressing or cheese spread) 20 pieces of raisins Cut the stalks (crosswise) to 2 pieces, about 3 inches long. Pierce toothpicks onto the sides and attach carrot slices on the ends; cover raisins on the tips. Fill any preferred spread onto celery. Peaches with a Sunshine Smile Recipe 1 can of halved peach 2 3 cups of low fat cheese curd (Cottage Cheese) Lettuce Arrange the lettuce onto a plate or bowl. Spoon cheese curd onto the lettuce like the rays of the sun. Place the halved peach, with its round facing up, as the sun. Gently press the raisins onto peach, forming its face. Funny Face Carrot Salad Recipe 2 pieces of carrots (fresh) 1 can of pineapple (small, crushed) 1/2 cup of yogurt (vanilla) Raisins Peel the carrots and roll some (long) shavings; save for the hair. Grate the carrots. Drain the pineapples. Toss grated carrots and pineapple; add yogurt. Transfer salad on the plate and make the (smiling) face, using the raisins. Use the carrot for the hair.

Banana Hot Dog Sandwich Recipe 1/2 pc of banana (ripe) 1 pc of hotdog bun 2 Tbsps of Peanut butter (creamy) Toast the bun then spread the (peanut) butter onto it. Add the banana. Snake Hot Dogs Recipe 1 pc of hotdog 1 pc of hotdog bun Make slits, horizontally, onto the hotdog that goes halfway or more. On its (other) half, make opposite slits. Microwave the hotdog 30 seconds and serve it in the bun along with cheese or chili. Cat s Eyes Recipe 1/2 cup of peanut butter 8 pieces of crackers (Ritz) 1 piece of banana; sliced to 8 pieces 8 pcs of raisins Spread the (peanut) butter onto the crackers then place one banana slice on top. Place raisin on the center, forming a cat s eye. Do the same to the rest. Place inside the refrigerator till chilled. Serve along with crackers or veggie dippers.

Place the pear atop the leaf (upside down). Make the bunny with the narrow portion for its face, its eyes will be the raisins, its nose will be the candy and its ears will be the almonds. Crispy Corn Dogs Recipe 10 pieces of frankfurters; pat dry 1 cup of Flour 1 1/2 teaspoon of baking powder (Calumet) 1/2 teaspoon of salt 3 Tablespoons of shortening 2 Tablespoons of cornmeal (yellow) 1 piece of beaten egg (large) 3/4 cup of milk (whole) Oil (for frying) Combine cornmeal, flour, Calumet, salt, and sugar inside a bowl. Add 2 tablespoons of shortening; cut using the fork till it seems like crumbs. Combine milk and egg inside a bowl; add onto the flour mixture and incorporate well. Open the bag, and have kids add ham, cheese, onion, green pepper, tomato, salsa, and mushrooms. Squeeze out as much of the air as you can, and seal the bag.
