WINE LIST DEAR GUEST With advice and expertise from local wine expert Susy Atkins, we have endeavoured to put together a comprehensive wine menu, which gives a varied selection of styles, both new and old world. We hope you enjoy the selections and Susy s top recommendations are in GOLD. SUSY S COMMENTS: I ve delved deeply into a diverse world of exciting grapes and styles and have come up with an inspiring range, whether it s a new-wave, fashionable Spanish white like Verdejo, or a fine New Zealand sparkler such as Cloudy Bay Pelorus, or one of the top South West English wines, made on our doorstep. They are all premium wines, but I believe, offer particularly good value. I have chosen them because they are excellent to pair with food. Corton Pougets Grand Cru Domain Louis Jadot - A deep red wine with delicate aromas of raspberries, minerals, earth and oak vibrant and concentrated with a firm tannic finish. 2010 135 1997 120 ITALIAN RED Tenuta San Guido Sassicaia Bolgheri, Tuscany - The 2009 Sassicaia is unusually big, rich and opulent. Layers of fruit saturate the palate as the 2009 explodes from the glass with a heady melange of dark berries, plums, menthol, liquorice and new leather. This is an especially racy Sassicaia. 2009 250 USA RED Rochioli Pinot Noir California - This very fine Pinot has an inviting, heady scent of red cherry and plums, then a super-smooth, sleek, ripe texture and a lovely nutty hint. Truly gorgeous stuff and a treat with steak, duck or goose. 2013 75 CHAMPAGNES Pol Roger Cuvée Sir Winston Churchill - The world s most drinkable address A classic clean, crisp bone dry champagne, good acidity with biscuity flavour. Dom Perignon Moet et Chandon Brut - The structure is overlaid with citrusy and biscuity flavours with a light clean crisp finish. Laurent Perrier Grand Siecle Brut - Subtle hints of honey, hazelnuts and almonds. A powerful champagne with a deliciously fresh finish. 2002 225 1999 165 NV** 116 BLANC DE BLANC Ruinart Blanc de Blanc - A fine example of a Blanc de Blanc, aromatic, finely balanced and very elegant. NV** 75 DESSERT WINE Château D Yquem, Sauternes - Floral, lemon, apple and cream with dried pineapple and apricot. Full bodied, but very focused and refined. It starts slowly and then Wham! it goes on and on. Spicy, dried fruits and spices. Full bodied, Medium-sweet. So long and exciting. 2005 430 (1/2 Bottle)

CABERNET SAUVIGNON The classic profile of Cabernet Sauvignon tends to be full-bodied wines with high tannins and noticeable acidity that contributes to the wine s aging potential. In cooler climates, Cabernet Sauvignon tends to produce wines with blackcurrant notes that can be accompanied by green bell pepper notes, mint and cedar which will all become more pronounced as the wine ages. In more moderate climates the blackcurrant notes are often seen with black cherry and black olives notes while in very hot climates the blackcurrant flavours can veer towards the over-ripe and jammy side. In parts of Australia, particularly the Coonawarra wine region of South Australia, Cabernet Sauvignon wines tend to have a characteristic eucalyptus or menthol notes. 87 14 69 63 Brends Hotels, Cabernet Sauvignon, Australia - Easy drinking wine bringing out the blueberry and plum flavours and a soft oak finish. La Joya Grand Reserva Cabernet Sauvignon, Chile - Aroma of black fruit and crème de cassis with hints of clove and nutmeg. This wine has great volume and intensity of fruity flavours and spices. Monty s Hill Cabernet Shiraz, Australia - On the nose there are initial smokey notes along with blackberries and raspberries with a hint of black pepper. The palate is big, rich and full with flavours of cherries, black plums and bramble. Esk Valley Cabernet Sauvignon/Merlot - If you thought New Zealand only made serious white wine, try this extraordinarily good, finely balanced and ripe blend from the North Island hot spot of Hawke s Bay. Beautifully made and one for red meat. 2014 20 2014 27 2013/14 24 2012 37 MERLOT While Merlot is made across the globe, there tends to be two main styles. The International style favoured by many New World wine regions tends to emphasis late harvesting to gain physiological ripeness and produce inky, purple coloured wines that are full in body with high alcohol and lush, velvety tannins with intense, plum and blackberry fruit. While this international style is practiced by many Bordeaux wine producers, the traditional Bordeaux style of Merlot involves harvesting Merlot earlier to maintain acidity and producing more medium-bodied wines with moderate alcohol levels that have fresh, red fruit flavours (raspberries, strawberries) and potentially leafy, vegetable notes. 21 3 Concha Y Toro Mountain Range Merlot, Chile Central Valley - Soft juicy style of merlot easy drinking with a plumy character and good body. Antoine Moueix, St. Emillion Grand Cru, France, Bordeaux - A wine with a ruby colour and a complex aroma with a taste of cinnamon. The wine is dry and medium bodied. 2014 22 2012/13 40 1 Canyon Road Merlot, USA - Dark fruits with hints of mocha and spice. 2013/14 23 SHIRAZ The style and flavour profile of wines made from Shiraz is influenced by the climate where the grapes are grown with moderate climates (such as the northern Rhone Valley) tending to produce medium to full-bodied wines with medium-plus to high levels of tannins and flavours of blackberry, mint and black pepper notes. In hot climates (such as the Barossa Valley of Australia), Shiraz is more consistently full-bodied with softer tannin, jammier fruit and spice notes of liquorice, anise and earthy leather. In many regions the acidity and tannin levels of Shiraz allows the wines produced from the grape to have favourable ageing potential. 68 79 88 53 51 Grand Cepages, Syrah, France - Deep purple red in colour with spicy pepper notes and cassis on the nose. Penfolds Koonunga Hill Shiraz, Australia - Opulent red berries, spice and violet characters are captured in this classic shiraz. Boschendal Pavillion Shiraz Viognier, South Africa - Sumptuous dark red fruits with hints of spice and pepper. Good length finish. Kloovenberg Shiraz, South Africa - A great example of shiraz from SA. Dark fruits dominate the palate backed up with a smokey, spicy flavour, rich and full bodied. Hanging Snakes Shiraz-Viognier, Australia - Very ripe and rich, with a heart of sweet blackcurrants, plus nuances of liquorice and chocolate, this South Aussie red finishes on a fresh, not heavy note. PINOT NOIR When young, wines made from Pinot Noir tend to have red fruit aromas of cherries, raspberries and strawberries. As the wines age, Pinots have the potential to develop earthy and savoury aromas that can contribute to the complexity of the wine. 58 84 13 17 Babich, Pinot Noir, New Zealand, East Coast - Fragrant and supple with spicy cherry flavours, a delicate light bodied wine. Cloudy Bay Pinot Noir, New Zealand - Aroma of dark plums and spice enhanced by liquorice and hints of smokey oak. Ropiteau, Bourgogne Pinot Noir, France, Burgundy - Elegant, sumptuous and layered, with juicy red plum and cherry notes. Rongopai Marlborough Pinot Noir, New Zealand - Aromas of strawberry flan with cedar spice and savoury notes comprise the bouquet ending with an earthy savoury finish. The flavour is very fruity with good concentration. 2014 29 2013/14 47 2013 35 2013 30 TEMPRANILLO Tempranillo is very often used on its own in Spain, and is a fine grape with flavours of strawberry and cherry and has a good structure. It is also often blended with other varieties, such as Grenache and Carignan (known in Rioja as Mazuelo), or aged for extended periods in oak where the wine easily takes on the flavour of the barrel. 48 2 Solar Viejo Rioja, Reserva, Spain, Rioja - As the wine opens up the ripe fruit flavours begin to awaken; bringing aromas of plums, black and red cherries, liquorice, old spice and cinnamon. Monologo Crianza, Spain - It is an approachable aged oaked Riojo with aromas of ripe red fruit and liquorice and vanilla. 2011 33 2013 25

EXPLORER REDS A selection of fine wines made from other red grapes or blends of grapes. 71 122 5 57 49 52 61 25 15 44 27 23 11 12 La Joya, Carmenere, Chile, Colchagua Valley - Carmenere originated in France where it is little used or loved but has become an integral part of the Chilean wine scene, powerful with rich dark fruit this wine is a real winner. Finca Flichmann, Malbec, Reserva, Argentina, Mendoza - Argentina has become the spiritual home of Malbec where it produces rich, fruity softly tannic intense purple wines, and this is no exception to that rule. The ultimate steak wine. L Instant Truffier Malbec, France, Cahors - From Cahors where Malbec is native and an interesting alternative to our Argentinian example of this variety, it is robust and lively with fine peppered tannins. Beso, Bobal, Crianza, Spain, Utiel Requena - Whilst having a powerful presence this wine displays a real feminine quality with its complex flavours of cedar and mint. The Bobal grape is indigenous to the Utiel Requena region of Spain. Pommard Les Perrieres, France, Domaine Jean-Michel Gaunoux - Vibrantly bright with a touch of mahogany. The nose is complex with red berry fruit and hints of spices. Beaujolais Les Iris, France - The palate is soft and approachable with vibrant acidity and a mouth-watering floral, morello cherry finish. Chateau Du Moulin-A-Vent, Beaujolais, France - The finest Beaujolais, like this Moulin-A- Vent, are seriously good a joyful glass of juicy, tangy red fruit with floral notes and a hint of spice. A superb match with ham, patés, sausages and pork. Heritages, Cotes du Rhone Village, France, Rhone Valley - Predominantly using the Grenache grape, this wine is a blend of a number of varieties such as Syrah and Mourvedre as are all Cotes du Rhone wines. This wine is smooth and easy to drink. Fleur De Fleurie, France - Made from the gamay grape. It is a light, fresh and fruity style of wine with lots of juicy strawberry flavours. Chianti Reserva Castellani, Italy - Dry and harmonious with notes of dark chocolate and black cherries. Clos De L Oratoire, Chateauneuf du Pape, France, Rhone Valley - A complex nose of strawberry jam, blackcurrant and light hints of coffee. Full, supple with a silky palate. Cotes de Brouilly, Les Roches Bleues, Beaujolais, France - Sweet glaze fruit on the nose along with liquorice and hints of mixed spice. Fiulot Barbera D Asti Piedmont, Italy - Here s a red with lovely balance, soft and easy, but with a fruity note of red cherry and blackberry, perfect with lighter meat dishes and cured meats. Chateau Du Trignon Vacqueyras, Rhone Valley, France - Vacqueyras is a terrific Rhone appellation, delivering plenty of ripe peppery wines like this one. A lot like Chateauneuf Du Pape but less pricey. Look out for rounded, not heavy, redcurrant fruit and a good twist of black pepper. CHARDONNAY The Chardonnay grape itself is very versatile, with many of the flavours commonly associated with the grape being derived from such influences as terroir and oak. It is vinified in many different styles, from the lean, crisply mineral wines of Chablis, France to New World wines with oak, and tropical fruit flavours. In cool climates, Chardonnay tends to be medium to light body with noticeable acidity and flavours of green plum, apple and pear. In warmer locations the flavours become more citrus, peach and melon while in very warm locations more fig and tropical fruit notes such as banana and mango come out. 9 92 6 41 8 60 65 35 10 Grand Cepages, Chardonnay, France - On the nose the cool climate gives the wine aromas of apple and pineapple. On the palate a rich texture of fresh fruit flavours contribute to a long finish. Penfolds Koonunga Hill Chardonnay, Australia - Full flavoured and creamy with flavours of melon and peach and a hint of vanilla. Hahn Winery Chardonnay, USA, California - Bright, sunny, fruit-driven premium West Coast chardonnay, full of peachy, pineapple flavour and smooth and rounded. Pair it with chicken or salmon. Branko, Chardonnay, Italy - A complex nose and palate with stone fruit, textured toasty flavours and a long finish. From one of the top white wine makers in Italy. Laroche, Chablis, France, Burgundy - Apples, pears and hazelnuts abound in this full flavoured wine. Puligny Montrachet, France - This beautiful chardonnay from Ropiteau is clean, refreshing and bright. The elegant nose is filled with lemon and stone fruit, balancing the rich tropical palate. The expansive finish carries notes of apple, flowers and honey. Domaine Ponsot, Rully Blanc, France, Burgundy - This classic style of white Burgundy from this young up and coming wine producer. Since Jean Baptiste took over from his father in 2005 this estate has gone from strength to strength. Ropiteau Bourgogne, Chardonnay, France - A marvellous nose of fresh fruit and white blossoms. An excellent dry white wine showing good balance between freshness and fruit. Laroche Chablis 1er Cru Vaudevey, France, Burgundy - Intense and elegant, fruity with notes of almond on the nose. The mouth shows a perfect balance with a long lasting and harmonious finish. 2013 23 2013 25 2013 36 2010 36 2014 36 2013 60 2011 38 2013 34 2008 42 PINOT GRIGIO Pinot Gris, or Pinot Grigio as it is known in Italy, is a white grape thought to be related to Pinot Noir. Its fruit varies from green to grey and even pink when very ripe. The wines produced can be pale in colour, light, simple and refreshing through to very rich and pale pink in hue.
