D.O. VALDEORRAS WINE: RED WINE: VARIETIES Godello, Palomino, Doña Blanca Mencia; Garnacha, Cabernet Sau-vignon, Gran Negro, Merenzao, Albarello, Tempranillo, Negreda The D.O. Valdeorras covers 2700 hectares of planted vineyard surface and 1358 hectares of vineyards in production. It has 18 wineries. Valdeorras, county located in the south-western part of the province of Ourense, is the natural gateway to Galicia. It is shaped band a deep, bright and fertile valley through which, between landscapes of granite and slate quietly runs the river Sil. The small D.O. Valdeorras is located to the East of Galicia, extending from East to West flanked band mountain ranges; water source is the river Sil. The vines grow on the slopes of the mountains, the villages are situated below in the valley. Traditionally known for its wines, Valdeorras has made during the past thirty years a great effort to recover indigenous varieties, in particular Godello and Mencía and to produce wines with their own personality. Thus, the spectacular new generation of white wines that is emerging in recent times comes from the most modern technology applied by the pioneers of the area wineries. With the aim of enhancing the quality, the regulatory Board aims to distinguish two types of wines: wines that incorporate more then 80% of the local varieties (whether or not varietal) are called Valdeorras superior ; and wines which include a smaller percentage, which are called Valdeorras. 5 5

RIBEIRO WINE: VARIETIES Trajadura (Treixadura); Torrontés; Albariño; Albilla; Godello;Loureira; Macabeo; Palomino RED WINE: Sousón; Brancellao; Caiño; Ferrón; Mencía; Garnacha Tinta; Tempranillo Just as it happens in most of the Galician wine regions, all the major wineries and many of the smaller ones have the latest technology of pressing and filtering. In addition, the detailed vintage analysis carried out by the main cooperative, the largest producer of wine in Galicia, is helping to produce new Ribeiros. The good wines of the Ribeiro region are young and transparent and are prepared with indigenous varieties; they own a marked personality, that makes them incomparable. The white wines of the ribeiro region, which represent more than 80% of the production, are internationally recognized as one of the best whites; this is the fruit of the wise combinations of the indigenous grapes. Red wines are made with reintroduced local grapes that have returned at the hands of the more pioneer wineries. Grapes widely used include Grenache and Mencía, while Treixadura and Loureira varieties are used to make other types of red wine. Palomino and Garnacha are used for young red wines. The ribeiro whites are very solid wines that we associate almost without thinking to seafood and fish. Ribeiro wine is the natural companion of Galician kitchen and any current kitchen who knows how to combine respect for the traditional flavours and curiosity for what's new. The taste is long and elegant, with a fresh and fruity aftertaste. ADITIONAL INFORMATION ELABORATION The grapes are harvested manually, applying the utmost care, during the second week of September; the grapes are then carefully selected. The yolk must is obtained by draining in the press it is subjected to a static racking light and subsequently fermented in tanks of stainless steel. RIAS BAIXAS WINE: VARIETIES Albariño, Loureira Blanca, Treixadura, Caiño Blanca, Torrontés and Godello RED WINE: Caiño Tinto, Espadeiro, Loureira Tinta, Sousón, Mencía and Brancellao Rías Baixas is a Spanish Denominación de Origen (DO) (Denominación de Orixe in Galician) for wines located in the province of Pontevedra and the south of the province of A Coruña in the autonomous community of Galicia, Spain. It is renowned for its white wines made from the Albariño grape variety. The regulatory Council (Consejo Regulador) of the Rias Baixas DO currently authorises twelve different grape varieties, though Albariño represents over 90% of all vines planted. Authorised white grapes: Albariño, Loureira Blanca, Treixadura, Caiño- Blanca, Torrontés and Godello Authorised red varieties: Caiño Tinto, Espadeiro, Loureira Tinta, Sousón, Mencía and Brancellao The vines are trained along granite posts (called parrales) and wires so as to protect them from humidity and to maximise their exposure to the sun in summer. Over 90% of the wines produced are white, predominantly using the Albariño grape variety. 12

RIBEIRA SACRA WINE: VARIETIES Loureira, Treixadura, Godello, Dona Blanca, Albariño, Torrontés RED WINE: Mencía, Brancellao y Merenzao Ribeira Sacra is a Spanish Denominación de Origen (DO) (Denominación de Orixe in Galician) for wines located in the south of the province of Lugo and in the north of the province of Ourense, in Galicia, Spain. It extends over the territories of 17 different municipalities that conform a zone and entity called Ribeira Sacra, which could be translated as "Sacred Shore". The vineyards are planted on the steep slopes of the valleys and canyons of the rivers Miño and Sil. The area acquired official Denominación de Origen status in 1997. Three types of varietal wine are produced: red Mencía, white Albariño and white Godello. The vineyards are planted on terraces (known as bancadas) in the narrow valleys of the rivers and are characterised by the production of grapes with a very concentrated flavour. The terraces are usually very small, making it impossible to mechanise the vineyard activities, such as pruning and harvesting. Access is often very difficult and sometimes only possible from the river. 18

CIGALES WINE: Verdejo, Albillo varieties RED WINE: Tempranillo, Garnacha Tinta, Garnacha Gris Cigales is a Spanish Denominación de Origen (DO) for wines located to the north of Valladolid (Castile and León, Spain) along both banks of the River Pisuerga. It includes several municipalities, including Valladolid itself, Dueñas, Cabezón de Pisuerga, Cigales, Corcos del Valle, Cubillas de Santa Marta, Fuensaldaña, Mucientes, Quintanilla de Trigueros, San Martín de Valvení, Trigueros del Valle and Valoria la Buena. The DO has an extension of 574 km² and is at an altitude of 750 m above sea level. It is a relatively recent DO, having been created in 1991. Like other DOs in the region, Cigales supplied Valladolid and other cities with wine during the Middle Ages. While Toro supplied red wine and Rueda white wine, Cigales specialised in clarets and rosés. These wines were made until recently in underground cellars, which were often shared by small wine-makers (bodegueros) and which were excavated to depths of over 10 m.. 21

RIBERA DEL DUERO WINE VARIETIES RED WINE Tempranillo, Cabernet Sauvignon, Merlot, Malbec Ribera del Duero is a Spanish Denominación de Origen (DO) located in the country's northern plateau and is one of eleven 'quality wine' regions within the autonomous community of Castile and León It is also one of several recognised wine-producing regions to be found along the course of the Duero river. The region is characterised by a largely flat, rocky terrain and is centred on the town of Aranda de Duero, although the most famous vineyards surround Peñafiel and Roa de Duero to the west, where the regional regulatory council or Consejo Regulador for the denominación is based. Wines produced in the Ribera del Duero DO derive almost exclusively from red grapes. The Albillo grape is the only white variety grown, white wines being mostly destined for local consumption. The vast majority of production is dedicated to Tinto Fino (the local name for Tempranillo), the dominant red varietal in the northern half of the Spanish peninsula. The alcoholic fermentation process looks for the original aromas of the grape and terroir. Sandy soil with high proportion of boulders that keep the Sun's heat and improve maturation. The argillaceous subsoil provides moisture during the summer. Microclimate - the altitude is 750 meters - which guarantees in summer a great thermal difference between the day and the night (35 and 10 ). This makes the wines more aromatic and round Verdejo Sauron shows varietal aromas of connotas fennel and mint on a basis of tropical fruits. It stands out for its freshness. ELABO RATION VIÑEDO TA- STING SANZO FRIZZANTE Fermentation in isobaric tanks in order to maintain the natural carbon from sugar processing. During fermentation, yeast is used. We stop the fermentation when the sugar reaches 24 grams which leads to a fresh acidity and a low content of alcohol in the wine. After fermentation it is stabilized in the same tank to keep the natural carbon. A vineyard that produces the verdejo variety of Castilla y León.
