chenin Blanc Chenin Blanc (known also as Pineau de la Loire among other names), is a white wine grape variety from the Loire valley of France. Its high acidity means it can be used to make everything from sparkling wines to wellbalanced dessert wines. Chenin Blanc grapes tend to provide a fairly neutral palate for the expression of terroir, vintage and the winemaker's treatment. In cool areas the juice is sweet but high in acid with a fullbodied fruity palate, musky melon aroma, and the potential to age quite well. Nose: Clear with an elegant character of ginger candy Palate: Initially hot up front that gradually fades into a smooth character of pepper and other subtle fruit flavors. pinot gris Pinot gris is a white wine grape variety thought to be a mutant clone of the Pinot noir variety. Though this grape is normally has a grayishblue color (gris meaning "gray" in French), the fruit can range in color from dusty pink, to white, to black. Pinot gris is grown around the globe, with the "spicy" fullbodied Alsatian and lighterbodied, more acidic Italian styles being most widely recognized. The flavors can range from ripe tropical fruit notes of melon and mango to some botrytisinfluenced flavors. Nose: Pleasantly floral, with honeysuckle aromas featuring prominently. Palate: Flavors of tart lemon and juicy tropical fruits provide a nice balance of sweetness and acidity. RIESLING Riesling is a white grape variety which originated in the Rhine region of Germany. This aromatic grape variety displays flowery, almost perfumed aromas, as well as high acidity. Riesling wines are usually varietally pure and are seldom oaked. A highly "terroirexpressive" varietal, Riesling from the Pacific Northwest ranges from dry to sweet, and has a crisp lightness that bodes well for easy drinking. Often there will be an easily detectable peach and mineral complex. Nose: Pleasant aromas of pineapple and candied ginger dominate the nose. Palate: Soft, lingering flavors of apricot and dried fruit provide a gentle sweetness as they coat the mouth. Each of the single varietal vodkas are kept separate until the final step and then evaluated and tasted by our master distiller to determine our ultimate blend.
