ABOUT US Our company was established in 1995 with the partnership of five Turkish entrepreneurs and the Moroccan firm Sicopa in the district of Soke, a province of Aydin, Turkey. Soke is located at 110 km away from the Port of Izmir, one of the biggest ports in the country. Our company started its production with Capers in 1995. Sun Dried Tomatoes were added to our product range in 1997, Pepperoncini, in 2001 and Jalapenos, in 2008. Currently Sun Dried Tomatoes, Pepperoncini, Jalapenos and Capers are our four main products for which we are one of the world's leading producers. In the following years Banana Pepper, Giardiniera and Macedonian Pepper were added to our product range based on the recommendations of our Research and Development Divison. In 2001, production started in our new plant which includes cold storage areas, seperate production sites for each product and seperate storage areas for raw materials, auxillary and finished products. Most of our products are locally grown and harvested by contracted farmers under the supervision of our Agricultural Divison. Throughout the production, physical, chemical and microbiological controls of our products occur in our laboratories. We have a microbiology laboratory in our premises. Plus, our firm also cooperates with accredited laboratories and universities in the country and abroad to enhance quality control. CAPERS Caper is the edible bud of the vegetable Cappasis Spinosa, which grows naturally. Capers are classified based on their diameters as indicated below. Small size Capers tend to be more rare and valuable. Lilliput (3-5 mm.) Non-pareille (5-7 mm.) Surfine (7-8 mm.) Capucine (8-9 mm.) Capote (9-11 mm.) Fine (11-12 mm.) Horse (12> mm.) Flower Our Capers are grown both locally and abroad. They are handpicked and transported to our plant for processing. Upon arrival, capers are separated based on their sizes. Capers can be prepared as whole or as paste. Based on customer s request, whole capers can be prepared in brine or in salt whereas Caper Paste is prepared only in brine. E CAPER AST P R E CAP S IN B RINE SALTED CAPERS If caper buds are not picked on time, they blossom into Caperberries. They are harder than Capers and have seeds. Similar to Capers, Capperberries are classified in three groups based on their sizes indicated below; 0-15 mm. 15-18 mm. 18-22 mm. Caperberries can be prepared in brine based on customer s request. SUN-DRIED TOMATOES Our tomatoes are locally grown and are harvested by our contracted farmers in July, August and September. Our Agriculture Divison staff supervises the plantation and the harvest of the tomatoes. Harvested products are sent to our drying fields with in 24 hours. Once they arrive to the drying fields, they are washed, cut and applied sulphuric or salted solution. After this process, they are left to dry under the sun for 5-7 days. Sun-Dried Tomatoes are transported to our production site where they are selected, weighted and packed in standart sacks. They are barcoded in order to ensure traceability and stored in our cold storage areas after the completion quality control data registration. Throughout the processing (from raw material to finished product), physical, chemical and microbiological controls of our Sun-Dried Tomatoes are conducted in our plant s laboratories. Plus, we continuously cooperate with leading accredited laboratories and universities in the country and abroad. PICKLED PEPPERS Our peppers are locally grown and are harvested by our contracted farmers in July, August, September and October. Our Agriculture Division staff supervises the plantation and the harvest of the peppers. Once harvested, peppers are delivered to our production site within 24 hours, where they are washed, selected and placed in fermentation tanks. Even though the selection and fermentation processes are similar, each kind of pepper are prepared on seperate production lines for fermentation. During fermentation, our peppers acid, salt and ph levels as well as their colors and textures are controlled and assessed daily by our Quality Control Divison staff. Once their fermentation is completed, they can be packed as the final product based on customer s request. OTHER PRODUCTS GIARDINIERA Our Giardiniera includes cauliflower, carrot, celery stalk, red pepper, cucumber and Pepperoncini. These vegetables are grown and harvested by our contracted farmers under the supervision of our Agricultural Division. Once they are delivered to our production site, they are processed and stored seperately in fermentation tanks. When they complete their fermentation, they are mixed together and packed in brine based on customer s request. GIARDINIERA Our special mix is prepared based on the recommendations of our Research and Development Division. It includes Capers, diced Sun Dried Tomatoes, spices and oil. Sibas Mix can be served or mixed with homemade breads, salads, cheese and/or pasta to add flavor to the meals. It can also be served as a side dish or an appetizer. SIBAS MI
