Spiced up by Open House for a Crowd The big buffet: It s as easy as two doahead mains and a grab bag of sides If you re cooking for a crowd, I have three words of advice: open house buffet. Give guests a window of time to drop by, start with a festive cocktail, and fill your biggest table with scrumptious dishes that are mostly make-ahead. The result is an elegant yet low-key party that takes the stress out of entertaining. As a party pro, I ve developed a foolproof strategy for building a crowd-friendly buffet: Start with a couple of main dishes that taste great at room temperature, supplement them with simple sides, and then fill out the table with store-bought extras like spiced or candied mixed nuts, crudité and dip, a cheese platter garnished with fresh and dried fruit. For dessert, ask guests to bring cookies or other bite-size sweets. Festive yet relaxed, this buffet allows you to leave the kitchen. To serve 24, you ll need to double the biscuit and crudité recipes. Tabasco; more to taste 1 2 tsp. ground cloves Kosher salt Fine sea salt Black peppercorns menu timeline One Day Ahead: Make the chutney, buttermilk dip, and horseradish cream Position the buffet table and set with linens, serving platters, utensils, and decorations. Five hours ahead: Make and bake the biscuits. Four hours ahead: Bake the ham. Mix the orange-maple mustard (see note in ham recipe). Three hours ahead: Make the butternilk marinade and prep the for the cucumber salad; refrigerate. Cook the broccoli and prep the gremolata. 90 minutes ahead: Roast the potatoes. Clean and prep the vegetables for the crudité and arrange them on their serving platter. One hour ahead: Marinate the salmon. Remove the cheeses from the refrigerator and arrange them on their serving platter. 30 minutes ahead: Roast the salmon. Put all condiments and mixed nuts in their serving bowls. Just before serving: Salt and dress the cucumber salad. Mix the gremolata with the broccoli. Slice the ham. Platter the salmon.

Pear Sidecar Serves two. 1/2 cup pear brandy (like Poire Williams) 1/4 cup triple sec (like Cointreau) 2 Tbs. fresh lime juice 2 thin strips lime zest) Combine the brandy, triple sec, and lime juice in a cocktail shaker and fill with ice. Shake well and strain into two chilled martini glasses. Twist the lime zest into spirals and drop one in each glass. photo: Scott Philips

Bourbon-Orange-Glazed Ham The glazed ham here makes great sandwiches. To give your guests that option, serve with biscuits (store-bought or homemade), my horseradish cream spread, and orange-maple mustard (for recipe, see leftovers section below). Serves twenty-four. 3/4 cups high-quality orange marmalade 1/4 cup pure maple syrup 1/4 cup whole-grain mustard 1/4 cup bourbon or dark rum 2 Tbs. fresh lemon juice Kosher salt and freshly ground black pepper 1 smoked half-ham, preferably a bone-in butt half (8 to 9 lb.), trimmed of skin and excess fat In a medium bowl, mix the marmalade, maple syrup, mustard, bourbon or rum, and lemon juice. Season to taste with salt and pepper. Position a rack in the lower third of the oven and heat the oven to 325 F. Brush the ham all over with 1/2 cup of the glaze and wrap loosely in foil. Put it on a large rimmed baking sheet and bake until an instant-read thermometer inserted into the center of the ham registers 125 F, 17 to 19 minutes per pound, for a total of 2-1/4 to 2-3/4 hours. (The ham will continue to rise in temperature during the glazing and resting.) Remove the ham from the oven and raise the oven temperature to 425 F. Peel back the foil from the top and sides of the ham; brush the ham with 6 Tbs. of the glaze and return it to the oven. Bake, brushing the ham again after 5 and then 10 minutes, using 6 Tbs. more glaze each time, until the glaze is shiny and golden, about 20 minutes total (keep a close eye on the ham so that the glaze doesn t burn). Remove the ham from the oven and tent loosely with foil. Let rest at least 20 minutes and up to 2 hours before slicing. leftovers Orange-maple mustard: Reserve 3 Tbs. of the marmalade mixture from the Bourbon-Orange-Glazed Ham recipe and mix with 1 cup of grainy mustard.

H e r b - B u t t e r m i l k - M a r i n a t e d with Cucumber Salad S a l m o n The salmon is delicious either warm or at room temperature. Serves twenty-four. For the salmon: 2 cups buttermilk 1/2 cup lightly packed fresh basil leaves, coarsely chopped 1/2 cup lightly packed fresh cilantro leaves, coarsely chopped 1/2 cup thinly sliced scallions (about 6 medium scallions) 1/4 cup white vinegar 2 Tbs. honey 1 Tbs. ground ginger Kosher salt and freshly ground black pepper 2 sides of salmon (3 lb. each), skin and pin bones removed For the cucumber salad: 3 large English cucumbers, cut in half lengthwise, seeded, and sliced crosswise (about 9-1/2 cups) 1 large red onion, cut in half and thinly sliced (about 2 cups) 1 cup pitted Kalamata olives, cut in half 1 cup crumbled feta cheese Kosher salt and freshly ground black pepper Marinate and roast the salmon: In a food processor, combine the buttermilk, basil, cilantro, scallions, vinegar, honey, ginger, 1 tsp. salt, and 1/8 tsp. pepper. Process until smooth, about 30 seconds. Set aside 3/4 cup for the salad. Thirty minutes before roasting the salmon, pour the remaining marinade over the salmon in a large rimmed dish and let sit at room temperature. (For the best texture, don t marinate longer than 30 minutes.) While the salmon is marinating, position a rack in the center of the oven and heat the oven to 400 F. Line a large rimmed baking sheet with foil. When ready to roast the salmon, remove it from the marinade and set on the baking sheet. Bake until just firm to the touch and opaque in the center (use a paring knife to peek), 20 to 25 minutes. Remove from the oven and let rest in the pan for 10 minutes. Make the salad: In a medium bowl, mix the cucumbers, onion, olives, cheese, and 1-1/2 tsp. salt. Toss with the reserved buttermilk dressing and season to taste with more salt and pepper. Serve: Use two large spatulas to carefully move the salmon to a platter. Spoon some of the cucumber salad around the salmon and serve the rest in a bowl on the side. make ahead tips Prep the cucumber salad up to 3 hours ahead, but do not add the salt or dressing until just before serving.

Roasted Fingerling Potatoes If you have trouble finding fingerling potatoes, you can substitute baby red-skin potatoes; just cut any large ones in half. Serves twenty-four. 8 lb. small fingerling potatoes, washed and scrubbed, skin on 3/4 cup extra-virgin olive oil Fine sea salt and freshly ground black pepper 6 Tbs. thinly sliced chives 1/4 cup white truffle oil (optional) Position racks in the top and bottom thirds of the oven and heat the oven to 425 F. Put two large rimmed baking sheets in the hot oven. In a large bowl, toss the potatoes, olive oil, 1-1/2 tsp. salt, and several grinds of pepper. When the pans are hot, divide the potatoes between the pans in a snug single layer (they should sizzle). Roast for 20 minutes, stirring occasionally, and then rotate the pans. Continue to roast, stirring occasionally, until they are browned in spots and tender when pierced with a fork, about 40 minutes longer. Return the potatoes to the large bowl, add the chives and truffle oil, if using, and toss. Season to taste with more salt and pepper and pour onto a serving platter (make sure to pour all the oil in the bowl over the potatoes). Keep warm until ready to serve.

B r o c c o l i w i t h S p i c y G r e m o l a t a Traditional gremolata (garlic, parsley, and lemon zest) is given a spicy twist with the addition of crushed red pepper flakes. Serves twenty-four. 1 cup chopped fresh flat-leaf parsley 1/2 cup extra-virgin olive oil 1/2 cup fresh lemon juice 3 Tbs. finely grated lemon zest 1 Tbs. minced garlic 1 tsp. crushed red pepper flakes; more to taste Kosher salt and freshly ground black pepper 6 lb. fresh broccoli, trimmed and cut into 1/2-inch florets In a large bowl, combine the parsley, olive oil, lemon juice, zest, garlic, pepper flakes, 1/2 tsp. salt, and a few grinds of pepper. Bring a large pot of well-salted water to a boil over high heat. Add half of the broccoli and cook until crisp-tender, about 2 minutes. With a slotted spoon or strainer, transfer the broccoli to a colander, rinse with cold water to stop the cooking, and drain again. Repeat with the remaining broccoli. Add the broccoli to the gremolata and toss to combine. Season to taste with salt and pepper and transfer to a serving bowl. make ahead tips You can prep the gremolata and cook the broccoli up to 3 hours ahead. Do not mix the gremolata or combine it with the broccoli until just before serving, as the lemon juice will eventually cause the broccoli and parsley to turn a dull green.

Flaky Buttermilk Biscuits by Peter Reinhart Yields about ten 2-3/4-inch biscuits or eighteen 2-inch biscuit 8 oz. (1-3/4 cups) unbleached all-purpose flour; more as needed for shaping the dough 1 Tbs. granulated sugar 2-1/4 tsp. baking powder 3/4 tsp. kosher salt 1/4 tsp. baking soda 4 oz. (8 Tbs.) very cold unsalted butter 3/4 cup very cold buttermilk Mix the dough: Heat the oven to 500 F and position a rack in the middle of the oven. Line a rimmed baking sheet with parchment. Put the flour, sugar, baking powder, salt, and baking soda in a large mixing bowl and stir with a whisk to distribute the evenly. Cut the butter into small bits and toss with the flour. With a sharp knife or a bench knife, cut the cold butter crosswise into 1/4-inchthick slices. Stack 3 or 4 slices and cut them into three even strips. Rotate the stack a quarter turn and cut the strips in half. You should create 6 small bits of butter per slice. Toss the butter bits into the bowl with the flour mixture. Continue cutting all the butter in the same manner and adding it to the flour mixture. When all the butter is in the bowl with the flour, use your fingers to separate the butter bits (they tend to stick to each other), coat all the butter pieces with flour, and evenly distribute them throughout the flour mixture. Don t rub the butter too hard with your fingertips or palms, as this will melt the butter. You re just trying to break the butter pieces apart, not blend the butter into the flour. When all the butter is evenly distributed, add the cold buttermilk and stir with a large spoon until all or most of the flour is absorbed by the buttermilk and the dough forms a coarse lump, about 1 minute. Pat and fold the dough: Dust a work surface with flour and dump the dough onto the floured surface, cleaning out the bowl with a spatula or a plastic bowl scraper. Dust the top of the dough and your hands with flour, and press the dough into a 3/4-inch-thick rectangle. Sprinkle a small amount of additional flour on the top of the dough. Fold the dough over on itself in three sections, as if folding a letter (also called a tri-fold). With a bench knife or metal spatula, lift the dough off the counter and dust under it with flour to prevent sticking, if necessary. Dust the top with flour and press the dough out again into a 3/4-inch-thick rectangle and repeat the tri-fold. Repeat this procedure one more time (three times in all). Cut and bake the biscuits: After the third tri-fold, dust under and on top of the dough, if needed, and roll or press the dough into a 1/2-inch-thick oval. Dip a 2-inch or 2-3/4-inch round biscuit cutter in flour and start cutting biscuits, dipping the cutter in flour between each biscuit. Press straight down to cut and lift straight up to remove; twisting the biscuit cutter will seal the sides and interfere with rising. Use a bench knife or spatula to transfer the biscuits to the baking sheet, placing them about 1/2 inch apart. Gently gather any scraps of dough, pat and roll out again, and cut more biscuits from the remaining dough. You can gather and roll the scraps two times total and still get good results (the more times you roll out, the tougher the biscuits will be). Put the baking sheet in the oven and reduce the temperature to 450 F. Bake for 8 minutes; rotate the pan 180 degrees; continue baking until both the tops and bottoms of the biscuits are a rich golden brown and the biscuits have doubled in height, revealing flaky layers on the sides, 4 to 6 minutes more. It s all right if some butter seeps from the biscuits. Remove the pan from the oven and set it on a cooling rack, leaving the biscuits on the pan. Cool the biscuits for at least 3 minutes and serve them hot or warm (they will stay warm for about 20 minutes).

Pineapple-Bourbon Chutney This sweet-tangy condiment provides a wonderful balance to bites of smoky ham, and it s also delightful on its own. Yields about 3 cups. 1 fresh pineapple, peeled, cored, and diced (about 4 cups) 1 large yellow onion, chopped (about 1-1/2 cups) 1 cup packed light brown sugar 3/4 cup apple cider vinegar 1/4 cup bourbon or dark rum 3 Tbs. finely chopped fresh ginger 1 Tbs. lightly packed finely grated lemon zest 1 Tbs. fresh lemon juice 1/2 tsp. ground cloves Kosher salt and freshly ground black pepper In a 4-quart saucepan over medium-high heat, combine all the with 1/4 tsp. salt and a few grinds of pepper. Bring to a boil and reduce the heat to low. Simmer, stirring occasionally, until most of the liquid has evaporated, about 1-1/4 hours. Add more salt and pepper to taste. make ahead tips Horseradish Cream Yields about 2-1/2 cups. This chutney can be made up to 3 days ahead and stored in the refrigerator. 2 cups sour cream 1/2 cup prepared horseradish (or very finely grated fresh horseradish) 2 tsp. white vinegar 1/2 tsp. kosher salt 1/8 tsp. freshly ground black pepper In a medium bowl, mix sour cream, horseradish, vinegar, salt and pepper. Add more horseradish, salt, or pepper to taste. Refrigerate until serving. make ahead tips This spread can be made up to 3 days ahead.

Farmers Market Crudités with Buttermilk Herb Dip by Tony Rosenfeld Though I have listed my own favorite vegetables for these crudités, feel free to go with whatever looks good at the market. Serves twelve as an appetizer. Yields 3 cups dip.
