Features and Functions Compact and inexpensive, the Spark 300 and Spark 600 are patent protected Australian designs by Spark in Melbourne for brewing companies producing small batches of high quality beer easily, precisely and repeatedly, or for venues that want to brew on site. The two models produce 6 keg or 12 keg batches and their control system allows integrated control of brewing, fermentation, carbonation and serving via touch screen or mobile device. The brewhouse makes a stunning visual centre piece and can be supplied as part of a seamless, complete brewing system with a fermentation cellar, chiller and a mill, all designed and built to the mandatory Australian safety standards for pressure vessels and electrical equipment. Design, materials and fabrication quality are superb, with integrated clean in place spray balls making meticulous sanitation super easy. The 2 vessel brewing system features a lower electric heating jacketed Mash Kettle and an upper Lauter Tun. The mash can be heated and after mash out, the mash slurry is pumped up to the Lauter tun so the first running can drop by gravity back to the kettle. Sparge water is heated by a heat exchanger integrated into the heating jacket to avoid the need for a separate Hot Liquor Tun, saving space and money. The control system maintains the chosen sparge temperature by controlling the pump speed and element power during Lautering. Grain out into a box is easy and ergonomic due to the arrangement of the vessels. Boil and hopping proceed in the lower vessel, with an optional kettle flue condenser available to condense vapor and drop it to drain, rather than vent it to atmosphere. After the boil, the hopped wort is whirlpooled through the machine s shell and tube heat exchanger, which can provide cooling to allow precise control of the whirlpool temperature for hopping at slightly lower temperatures to retain light hop oil fractions for improved aroma and flavour. The wort can be whirlpool cooled down to pitching temperature within the closed lower vessel, then accurate and sanitary oxygenation is made easy with the included O2 assembly. As the whirlpool of the hopped, cooled, oxygenated wort slows down, the protein break and hop material drop to form a neat pile in the centre of the vessel, allow a gentle transfer of bright wort from the perimeter of the vessel out to fermenter. With a production lead time of 14 weeks, Spark can provide unsecured equipment finance that requires no personal guarantees or extra collateral, with a 10% deposit and repayment via an operating lease over 4 or 5 years. Importantly, repayments are delayed for 5 months after deposit, to allow manufacture, installation and commissioning of the system beer is flowing and the business has revenue before repayments commence. My Spark 5hL pilot system is exactly what I wanted the beers I develop on it are well received in the taproom here and then graduate to the production system, like the Brown Ale people were raving about it, stopping us in the street to ask about it. After the roaring success of their original Croydon venue, the team at The Public Brewery have built a Cellar Door venue as part of the large scale Ringwood Shopping Centre redevelopment. To keep up with beer demand, they have installed a Spark 15hL brewhouse with a 180hL fermentation cellar at Rob Dolan s winery where they are in the process of fitting out an event space for celebrations that has a clear view of the brewery.
