Maule Valley The area is located 250 km (155 mi) south of Santiago, Chile s capital city, and forms part of the Central Valley region. It is one of the largest wine growing regions in Chile and it is also one of the country s oldest and most diverse valleys. SANTIAGO The size of the region permits a range of distinct microclimates suitable for both red and white wines, though it is best known for its powerful Cabernet Sauvignon and aromatic and spicy Carmenere wines. Rich and volcanic soils predominate in the area, although certain parts of the valley have varying soil types, like the Empedrado area which is dominated by slate soils. Cold soaking for 4-6 hours before gentle pressing. Settling for 24 hours, racked off its heavy lees before being inoculated with special selected yeast strains. Temperature controlled fermentation at 16-18 C for 18-20 days. Left on its fine lees for 4 months to enhance volume and richness. Clarified and filtrated before bottling in late spring. Brilliant pale lemon color. Intense youthful aromas reminiscent of green apples, fresh cut grass, gooseberries, and hints of elderflowers and mineral. The palate is refreshing with charming gooseberry fruit and hints of minerality, giving a perfect harmonious balance. The finish intensely filled with charming fruit with a mouthwatering acidity. Gentle whole cluster pressing. Settling for 24 hours, racked off its heavy lees before being inoculated with special selected yeast strains. Temperature controlled fermentation at 14-16 C for 18-20 days 20% in 2nd hand French oak barrels and 80% in Stainless stell tanks. The wine did not undergo malolactic fermentation in order to preserve maximum varietal character. Clarified and filtrated before bottling in June 2016. Brilliant pale lemon color with golden rim. Intense youthful aromas reminiscent of pineapple, papaya, peaches with hints of vanilla, and honey. The palate is dominated by refreshing fruit, layered texture with pleasant concentration and with harmonious balanced lingering sweetness and mouthwatering acidity. Maule Valley Cabernet Sauvignon 18-25 years old 6 months 100% French Oak Barrels of 225L Viña Macetero-Single Vineyard Sitting on the foothills of the Andes mountain range in a village San Clemente Grapes were gently hand harvested. After de-stemming and crushing, the grapes were cold soaked at 5ºC for 48 hours. Inoculation with special selected yeast strains, temperature controlled fermentation beginning at 20-22ºC and finishing at 25-26ºC in stainless steel tanks for 12-15 days. After malolactic fermentation the wine was racked into 2 year old French oak barrels of 225L where it aged for 6 months before bottling. Deep ruby red with violet rim. Pronounced fruity aromas reminiscent of black currant, black cherries, chocolate with notes of toast, black pepper and cigar box. The wine is full bodied, has ripe supple tannins with lots of juice fruit. The finish is long and lingering. Pronounced fruity aromas of black berry fruits, cherries, spicy black pepper, chocolate and tobacco. Bio Bio Valley The Bío Bío Valley wine region is located in the province and region of the same name. One of Chile s southern wine regions, it has become known for its crisp, aromatic wines. SANTIAGO The region is located at a latitude of 36 S, similar to southern Spain and Monterey in California. The majority of its vineyards lie between 50 and 200m (150 ft and 600 ft) above sea level with a moderate Mediterranean climate. It receives 1,275 mm (50.2 in) of rain per year, among the highest of all Chilean wine valleys, although winds prevent excessive humidity - a phenomenon that can also be observed in northern France. Bright attractive red colour. Intense fruit showing strawberries, hints of cassis and delicate sweet spice.
