Summary What s in this Module? This Restaurant Readiness Guide will help you prepare your restaurant for the Module 1 LTO menu which introduces Sizzlin Skillets in addition to continuing our celebrations of New Buttermilk Pancakes. The free-standing menu will highlight 4 popular signature pancake breakfasts while national media will feature a strong value message by promoting $4 a la carte versions of these pancake builds. The a la carte stacks will be line-listed at the bottom of the LTO menu. The media message is designed to drive traffic to our restaurants while the in-store merchandising encourages guests to trade-up to the full breakfast options. Guests will select from the following items on our new double-sided free-standing menu. Side 1: Banana Berry Pancake Breakfast (offered a la carte for $4) Peanut Butter Cup Pancake Breakfast (offered a la carte for $4) Sticky Bun Pancake Breakfast (offered a la carte for $4) Super Blackberry Pancake Breakfast (offered a la carte for $4) Blueberry Pancake Puppies Side 2: Smoky Gouda Chicken & Broccoli Skillet Smoky Gouda Prime Rib & Broccoli Skillet (line listed) Crazy Spicy Skillet (add two eggs option line listed) Wild Alaska Salmon Skillet Our Module 1 Kids Menu will feature the following new item: Jr. Banana Berry Pancake Breakfast Additional merchandising elements will promote core smoothies and an upsell opportunity to add toast or tortillas to any skillet for $0.99. Module 4 to Module 1 Transition Module 4 ends on January 9, however you can discontinue use of the Module 4 POP if inventory of all food SKUs is depleted (after December 31st). In the event that your restaurant runs out of all Module 4 food SKUs, discontinue use of the freestanding menu, stanchion poster and menu sleeve inserts. Module 1 officially begins on January 9th, however restaurants can transition to Module 1 any time after the POP arrives and all employees are trained. Why are we doing this? Our skillet platform has performed favorably in the Module 1 timeframe for the last few years. A number of guests look for value options following the holiday season. Our $4 a la carte stacks of LTO pancake builds and our $2468 Value Menu are sure ways to drive traffic and maintain awareness of our New Buttermilk Pancakes. In addition, the core smoothies, Blueberry Pancake Puppies and the toast/tortilla add-ons make great opportunities to suggestively sell. Test Learnings and Operational Enhancements Smoky Gouda Chicken & Broccoli Skillet Test restaurants did not have any issues telling the gouda sauce and the Pepper Jack Queso apart. Because it is used for only one skillet, the gouda sauce should be held refrigerated and heated to order in most cases even higher volume restaurants. The skillet can be made using one microwave; heat the broccoli and the whole grain rice together, then when those are done cooking, heat the gouda sauce in the same microwave while building the skillet. Blueberry Pancake Puppies New 24 hour hold time previous Pancake Puppies batters made with flavored bits had a hold time of 12 hours Longer hold time will help reduce waste Ranch Dressing Prepped hold time extended to 7 days, refrigerated Skillet Upsells The M1 skillets were designed to equip servers with compelling upsell opportunities: The addition of 2 eggs to the Crazy Spicy Skillet Prime Rib version of the Smoky Gouda Chicken & Broccoli Skillet Toast or tortillas for any skillet These upsells should be suggested when guests order the skillet meals to help build GCA and incidence rates.
