MEALS IN A JAR DRYING KALE To dry: Remove stems, then wash and pat dry kale leaves. Lay flat, in single layer on double thickness of paper towel and cover with another double paper towel layer. Cook on high in microwave for 1 minute. If paper towel is very damp, replace with dry one and re- layer. Cook for 1 more minute. Turn leaves over and check if done (crunchy). If not, cook in 30 second increments until leaves are crunchy. Remove and let cool. Set aside OLIVE GARDEN ZUPPA TUSCANO (because everyone needs a little more Olive Garden in their food storage!) 1 1/2 cup dehydrated diced potatoes 1/2 c potato flakes 1 tablespoon cornstarch 1/3 cup non-instant dry milk 1 tablespoon dried minced garlic or garlic powder 3 tablespoon dry chicken bouillon 1/4 cup dried minced onion 1/2 teaspoon red pepper flakes (to taste) 1 cup freeze-dried Italian sausage pieces (spicy or regular) 2 large leaves kale (dried in microwave-see video on www. storethisnotthat.com) Layer ingredients in wide mouth quart jar in the following order: 1) 3/4 cup DH potatoes 2) 1/2 of powdered mixture Tap jar gently on counter to level and settle ingredients 3) All of sausage 4) 3/4 cup DH potatoes 5) Remaining powdered mixture Tap jar gently again to make room for the kale. 6) Top with dried kale broken into pieces small enough to just fit into jar. Tape instructions to back of jar and decorate if desired.
FRIENDSHIP BROWNIES (because only real friends give brownies this good!) CREAMY TOMATO BASIL TORTELLINI (because busy nights happen and this is the perfect cure!) heaping 1/2 cup tomato powder 1 t. beef bouillon 1/2 t. oregano 1 t. garlic 3/4 t. basil pinch crushed red pepper 1/4 cup powdered milk 1 T. cornstarch 1 t. sugar 2 t. salt 2 cups dry tortellini (cheapest in the bulk section of Winco) Mix tomato powder, bouillon, oregano, garlic, basil and crushed red pepper together and place in the bottom of 1-quart wide mouth canning jar. Mix powdered milk, cornstarch, sugar and salt and place on top of tomato mixture in jar. Top with dry tortellini. Tape instructions to back of jar and decorate if desired. 2/3 cup sugar 1/2 cup vanilla chips* 1/2 cup semi-sweet chocolate chips* 2/3 cup brown sugar 1/3 cup unsweetened cocoa 3 Tbsp. dry egg powder** 1 cup all-purpose flour 1 tsp. baking soda 1/2 tsp. salt Layer the ingredients in the order given into a widemouth 1 quart canning jar. Pack each layer in place before adding the next ingredient. Tape instructions to back of jar and decorate if desired. *Any mix-ins can be used, just be sure the amount equals one cup. We love crushed brownies, M&M s, Andes chocolates...you get the idea! **If you don t use powdered eggs be sure to omit the water on the instructions for use and instead add. dry ingredients with wet ingredients, beat until ingredients are well incorporated (if you re using powdered eggs they may need to beat for 2-3 minutes until the oil gets worked in). Spread in a greased 9-inch square baking pan. Bake for 34-36 minutes or until a toothpick inserted in the center comes out clean. Cool before cutting. or until tortellinis are soft. Stir occassionally and add water as necessary.
