The Daiquiri Conceived c.1890s by Jennings Cox, an American mining engineer staying in Cuba this is the perfect cocktail to illustrate rum s individual style and the influences it has on the most basic of ingredients (his original recipe is shown opposite). This is shown best in our house Daiquiris (numbered 1 5), for which we have chosen the Havana Club rums the quintessential light Cuban rum! For all our Daiquiris, we use only the best Persian limes (freshly squeezed daily), and make our own sugar syrup, normally to a 1:1 ratio. We have experimented with various rums and ratios of sugar syrup to come up with a collection of the best rum Daiquiris from all over the Caribbean and the Americas! JAMAICAN SPICED DAIQUIRI : 11.00 Appleton V/X rum shaken with lime, cloves syrup and egg white served straight up and sprinkled with toasted cinnamon. BRITISH DAIQUIRI : 11.00 Pusser s Navy Blue rum and Kam & Sons British aperitif shaken with lime juice, sugar syrup, fresh pineapple and mint. LA BRUJA DAIQUIRI : 11.00 Brugal Anejo rum, Martini China, Angostura bitters and a dash of absinthe. Champagne & Sparkling BELLINI : 12.00 Fresh peach puree and Prosecco married in this frappe cocktail. Invented by Giuseppe Cipriani in 1948 at Harry s Bar in Venice. Named after the painter, Giovanni Bellini, who had an exhibition in Venice at the time. CLASSIC CHAMPAGNE COCKTAIL : 15.00 An Angostura soaked sugar cube, laced with Cognac and charged with Champagne. FRENCH 75 : 14.00 Tanqueray gin and Maraschino liqueur, stirred with lemon juice and sugar syrup, charged with Champagne. Named after the French 75-millimeter guns, this Champagne cocktail was created during the first World War by American army officers. The original recipe called for gin, calvados and absinthe (now illegal in the United States). RUSSIAN SPRING PUNCH : 14.00 Zorokovic vodka and berries liqueur shaken with lemon juice, sugar and fresh raspberries, topped up with sparkling wine. BITTER BOBBLE : 14.00 Kamm & Sons British Aperitif, No 3 Gin and Campari shaken with lemon juice and sugar all topped-up with sparkling wine. RUMMY SPARKLING PUNCH : 28.00 Pusser s Navy Blue Rum and Brugal Anejo shaken with peach liqueur, lemon juice, sugar and Maraschino Liqueur all topped up with sparkling wine. SERVES 2/3-16-
