page 2 Producer : Domaine Jean Grivot Domaine Jean Grivot has long been established as one of Vosne-Romanée's best producers, and they have been bottling their own wines since before the war. The domaine is today run by Jean Grivot's son Etienne with his wife Marienne and daughter Mathilde. Etienne took over from his father in 1990 and is the fifth generation of his family to run the domaine. Since Etienne took charge and began to apply his assiduous attention to detail in the vineyards and winery the domaine has changed to a more concentrated style from lower yields than in the past. For Etienne improvements can always be made in all areas and his diligence has seen the reputation of the domaine return to an upward curve. Vines have been densely planted to increase competition which results in less fruit and deeper roots. He thins the canopy very specifically depending on the aspect of the slopes but avoiding the southern side, and green harvests to increase fruit quality at picking. The harvest is done by hand and the bunches are generally 95% destemmed save for some experimentation or if vintage conditions demand otherwise, and natural yeasts are responsible for the fermentation process during which Etienne does not like to punch down the cap when the fermentation begins, as many other winemakers do, instead pumping over once everything is well underway. All the wines go into barrels from several different sources to avoid the predominance of flavour from any single source. The domaine's 15 hectares include parcels in Vosne-Romanée, Nuits-Saint-Georges, Clos de Vougeot, Echézeaux and Richebourg. This is certainly a winery that is not resting on its laurels.

page 4 Producer : Domaine Camus Bruchon Luc Camus runs this family domaine of 7.53 ha of principally Savigny, comprising two premiers crus, two village wines, some Bourgognes as well as some Beaune and Pommard. It is remarkable for the high average age of the vines. Luc s succession occurred in difficult circumstances, following the untimely death of his father in 1961, when Luc was only 12 years old. He took over the domaine in 1971, and although forced to accept the burdens of responsibility at an early age, Luc has had the strength of character to carry them cheerfully and successfully. He has boundless energy, directed by a keen natural intelligence and expressed in a charming manner at once relaxed, serious and vigorous. Even by comparison with other outstanding Côte d Or producers he is animated, highly motivated (as he says, C est la motivation qui fait tout ), passionate and vibrant. He is committed to producing wines of the highest possible quality for the terroir and the vintage. With that ideal in mind, he devotes great attention to detail at every stage, relishing even the most physical tasks in the vineyard and winery. The domaine s heart is in the commune of Savigny-lès-Beaune. On account of its baffling diversity of exposures, soils and subsoils, this has been described as the most divided vignoble in Burgundy. The best sites for red wines are on the opposite hillsides rising up from the River Rhoin and the valley of Fontaine-Froide which shelters the village of Savigny-lès-Beaune itself. Those on the Pernand-Vergelesses side, on the slopes of the charmingly named Bois de Noël, face south and south-east, the soils being gravelly, sandy marl. Those on the Beaune side, on the slopes of Mont Battois, face east and north-east, the soil being more sandy and less stony. Domaine Camus-Bruchon has holdings in prime sites on both sides of the valley adjacent premiers crus Aux Gravains and Les Lavières and village Aux Grands Liards on the Pernand-Vergelesses side, premier cru Les Narbantons on the Beaune side.

page 6 Domaine Alain Burguet Gevrey-Chambertin Mes Favorites Vieilles Vignes 2005 Opulent is the word to describe this dense and velvet-textured Burgundy. Made from low yields of late-harvested grapes coming from about 20 parcels of vines over 60 years of age. He also has a négociant business, started in 2003. 2009 was his last vintage: the 2010 was made by his sons Jean-Luc and Eric. His style of wine has evolved over the years. It began as rich and concentrated but quite chunky, needing a few years to round off the hard edges. But the wines have become richer and more sophisticated over the years. From 2005 he decided to pick much later to obtain softer, sweeter tannins and now he is one of the last to harvest in the commune. The late picking and low yields now results in an opulent style, but supported by good structure. Further sophistication is due to his investment in a high quality vibrating sorting table. By removing all the less than perfect fruit, bunches that have remained a little green in parts or have some rot, the quality of the raw material is improved. The vibrating action gets rid of dew, soil and other debris, and any insects.

page 8 Producer : Maison Louis Jadot Louis Jadot are, with Joseph Drouhin, Faiveley and Bouchard Père et Fils, the leading négociants of Burgundy. They also have substantial vineyard holdings, split between Louis Jadot itself, Les Héritiers de Louis Jadot and Domaine André Gagey, and long-term rental agreements, such as that with the Duc de Magenta, adding up to about 60ha in the Côte d Or. Further holdings are in Beaujolais, Château des Jacques, and Pouilly-Fuissé, where they own Domaine Ferret. Louis Jadot is considered by many to have one of the finest winemaking reputations in Burgundy. For red wines, temperature control is eschewed, allowing fermentation to start of its own accord, and letting the temperature during the process rise without intervention (in most cellars, this is generally capped at about 32?C). Even so, the length of maceration is still long, often taking three weeks or more. The result is a rich and powerful style of red Burgundy, even in lighter appellations, which demands and repays keeping. When creating its white wines, the company frequently part-blocks the malolactic fermentation to retain higher acidity. In less favourable years, contrary to normal practice, a little more new oak is used. However, the main aim for both reds and whites is to use as little oak as possible in order to let the terroir and the vintage do the talking. Jacques Lardière became the company s winemaker in 1970, and only retired in 2013. An able and charismatic winemaker, he produced wines of high quality with a distinct personality, and valued the less expensive village wines as highly as he did the grands crus. Since 2010, he has been assisted by Frédéric Barnier, who was named as his replacement upon Jacques retirement, though Jacques remains at the company in an advisory role. Maison Louis Jadot s headquarters are located in the heart of Beaune. The most beautiful of its three cellars, used to store its older wines and for hosting special events, is situated in the Couvent des Jacobins, which dates back to 1477.

page 9 Domaine de Montille, Pommard Premier Cru Rugiens 2004 A patch of ruddy, iron rich soil gives this cru its name and character. The 2004 is delightful now, but there is still time in hand for this excellent red Burgundy. Its effortless elegance and length of flavour are of grand cru quality. Decant an hour before serving. page 10 Producer : Domaine de Montille Domaine de Montille makes some of Burgundy s most exquisite wines, elegant, understated gems which possess haunting perfume and impressive length of flavour. They require and repay keeping to show their very best. Under the late Hubert de Montille (who came to wider prominence defending the terroir of Burgundy in the film Mondovino) the estate was famous for very fine, unchaptalised wines which could be somewhat austere when young. Hubert s son, Etienne, took over the running of the estate in 2001, quitting his banking career which had led him abroad and then to Paris, to return to the family domaine in Volnay. Etienne is smart and energetic and has thoughtfully moved the family business along, looking particularly at three issues; ripeness, yields and extraction. Whilst Etienne s wines are less austere in youth than his father s, they have lost none of the innate elegance and purity associated with the domaine. Etienne has doubled the size of the domaine, which now has 17 hectares, with the addition to the long standing holdings in Volnays and Pommard of some Beaune premiers crus, Corton-Charlemagne and the Puligny-Montrachet premier cru Les Caillerets. More recently, he has ventured into the the Cote de Nuits with acquisitions in Clos de Vougeot and the Vosne-Romanée premier cru of Malconsorts. The new acreage necessitated bigger premises and the perfect cellar has been found in Meursault. Old, deep and well ventilated it is the ideal space for the unhurried maturation the wines of de Montille need. The estate is certified organic and is now farming biodynamically, illustrating their enormous respect for the environment. In the winery, Etienne will chaptalise a little if necessary and a decision is made each year as to whether to include stems or not. He is an advocate of whole bunch fermentation when the stems are ripe, believing the technique gives more floral character to the wines and a more complex mix of tannins. The wines are bottled after 14-18 months in barrel. Etienne shares his father s abhorrence of excessive new wood, using none in the regional and village wines, and about 20-30% for premiers and grands crus.

page 11 Domaine Maume Mazis-Chambertin Grand Cru 2004 That a Gevrey grand cru could be more biddable than some of the premiers from the same commune and vintage owes much to the deceptively smooth Maume style. Beneath it lies concentrated fruit, redolent of crisp Kentish strawberries and ripe cherries, held together by gently insistent tannins. The Canadian Moray Tawse bought Domaine Maume in 2013, installing Pascal Marchand as manager and Englishman Mark Fincham as wine maker, though Bertrand Maume is still advising. The name has gone through several changes on the label, for example Domaine Maume Tawse, but apparently from the 2015 vintage will become Domaine Tawse Perhaps the reason why they offer such exceptional value for money is because of their size. The domaine has only 5 hectares and so is easily overlooked and has not achieved the exposure it deserves. It has a sprinkling of excellent vineyards at all quality levels including grands crus Mazis-Chambertin and Mazoyères-Chambertin, premiers crus Lavaux-St.Jacques and Champeaux, and at village level two lovely lieux-dits, named sites, Pallud and Etelois. As ever, what sets them apart is the quality of work in the vineyard, and the significant age of the vineyards, which produces concentrated and healthy grapes. Moray Tawse has invested in the vineyards, improved the trellising and is working towards Biodynamic accreditation. In the cellar, they mature their wines for a relatively long period, 18-20 months in barrel, producing a soft and rich-tasting style of Gevrey.
