1/ A family business with traditional expertise Founded in 1980 by Francesco Magno, SOLE MIO is still a family company, french leader in woodfired pizzas. Francesco train his hundred of employees to shape pizzas like they would like to eat them: crispy and light dough, a rich and well distributed topping to please eyes and taste buds! Francesco has developed his company thanks to its traditional expertise and the constant quality of his products: naturals and gourmet ingredients, prepared by hand (french wheat flour, french raw mushrooms, french or italian tomato ) without: preservative, additive, food coloring frozen pizzas; cooked over a wood fire (beech and ash) to give an inimitable flavor! A combination of simple and high-quality ingredients to propose the best pizza and answer to your needs: conventional or from organic farming. 2 / An efficient production tool Kneading machine, wood oven heated to 600, deep-freezing at -18, more than 15,000 m² covered workshop, storage of more 4 000 pallets of finished products... SOLE MIO is equipped with 6 modern production lines, 90 000 pizzas are produced per day over 8 hours (or 40 tons of finished products). Its teams is regularly trained in quality and food safety, in order to master its production of frozen pizzas cooked over a wood fire. Garmishing, baking, passing throught one of the 3 deep-freezing tunnels, packing Each step of production is very quick in order to ensure quality and safety of all fabrications. The proof: time between the exit of the dough from the kneading machine and the entrance in the deep-freezing tunnel is only 4 minutes! From Kneading to packaging, every step of the manufacturing process is controlled and, of course, the cold chain is respected. SOLE MIO pizzas meet all the sensory and nutritional requirements of its customers, but also the legal and regulatory requirements about food safety. 3 / A large range of products SOLE MIO sells its frozen pizzas cooked over a wood fire under its own brands "SOLE MIO" and "LA PIZZA DU MOULIN" but mainly under private labels from the most famous distributors. Since its creation, SOLE MIO uses natural ingredients and perpetuates the traditional fabrication of pizzas with authentic taste. That is why the company obtained the organic certification in 2005 and has developed the production of organic pizzas. As a pioneer, SOLE MIO realized the first frozen organic pizza cooked over a wood fire in order to fulfill the customers needs.
