CHAMPAGNE I drink it when I m happy and when I m sad. Sometimes I drink it when I m alone. When I have company I consider it obligatory. I trifle with it if I m not hungry and drink it when I am. Otherwise, I never touch it unless I m thirsty Lilly Bollinger With a storied history, champagne is produced at the limits of modern viticulture and is more a result of a process than a place. The method champenoise is precisely how champagne gets it bubbles, and combined with a marginal climate and a unique chalky soil the results can be stunning. I have always been a believer that any meal worth remembering starts with bubbles I hope you feel the same way. 100 ayala, brut rose majeur, ay, nv 110 104 godme pere et fils, blanc de noirs, verzenay nv 111 105 laurent-perrier, cuvee rose, brut, tours-sur-marne nv 140 106 laurent-perrier, grand siècle, brut, tours-sur-marne nv 240 107 le mesnil, grand cru, blanc de blancs, le mesnil sur oger, france, nv 93 108 nicholas feuillatte, cuvee gastronomie, brut reserve, chouilly nv 86 109 perrier jouet, grand brut, epernay nv 88 110 perrier jouet, belle epoque, brut rose, epernay 2006 410 111 pierre peters, cuvee de reserve, blanc de blancs, le mesnil sur oger nv 120 112 roses de jeanne, cote de val vilaine blanc de noirs, celles-sur-ource 2012 110 113 roses de jeanne, la haute lemble blanc de blancs, celles-sur-ource 2011 164 OTHER BUBBLES Some are made just like their French cousins, while others are made in the local tradition. 118 chapel down, brut, kent, england nv 87 119 cleto chiarli, brut de noir, rose, emilia-romagna, italy nv 45 120 clos du moulin aux moines, bulles du moulin, aligote, france 2015 67 121 louis bouillot, perle d aurore, rose, cremant de bourgogne, france nv 56 3

DOMESTIC WHITE Chardonnay certainly one of the most planted grapes in the world, chardonnay has as many expressions as there are countries that grow it. California is known for a richer, riper style though now we are seeing more restraint and elegance brought into the forefront 201 alexana winery, revana vineyard, willamette valley, or 2013 77 202 chateau ste. michelle, canoe ridge estate, horse heaven hills, wa 2014 52 203 foxglove, central coast, ca 2014 40 204 failla, sonoma coast, ca 2014 83 206 hartford court, russian river valley, ca 2015 67 207 mount eden, estate, santa cruz mountains, ca 2012 135 210 o shaughnessy, oakville, ca 2013 115 211 peter michael, ma belle fille, knights valley, sonoma county, ca 2014 190 212 poe, ferrington vineyard, anderson valley, ca 2013 102 213 presqu ile, santa maria valley, ca 2012 85 214 ramey wine cellars, sonoma coast, ca 2014 89 216 sanguis, uncloudy day, santa maria valley, ca 2009 130 217 st. innocent, freedom hill vineyard, willamette valley, or 2014 60 218 varner, bee block, spring ridge vineyard, santa cruz mountains, ca 2013 109 Sauvignon Blanc While planted all over the world, California has two unique expressions, toasted in oak with richer flavors or a cleaner, lighter more tropical interpretation 228 avennia, sauvignon blanc, oliane, yakima valley, wa 2014 64 231 cliff lede, napa valley 2015 70 232 frith, napa valley, ca 2014 66 233 groth, napa valley, ca 2015 56 Interesting whites from classic Rhone whites like Marsanne and Roussanne to Gewürztraminer and everything in between, the following are domestic interpretations of some less travelled varietals 242 donkey and goat, grenache blanc, el dorado, ca 2014 70 245 scholium project, verdelho, naucratic, lost slough vineyard, clarksburg, ca 2013 66 4

FRENCH WHITE THE LOIRE VALLEY based around the longest river in France, the Loire valley is an enchanting place that has been largely untouched by time the wines are much the same as they were a century ago. With a focus on acidity these wines are meant for the table. The valley offers as diverse a selection as anywhere in the world and we have gathered a focused expression of the best each area has to offer. Sauvignon Blanc the grape thrives on the chalky mineral soils of the eastern Loire, and in certain places you find pockets of flint, locally called silex, that help lend the grape its most unique expression in the world. 301 bailly reverdy, les pierrier de la chapelle, sancerre 2015 58 302 gerard boulay, sancerre 2016 63 303 la doucette, pouilly-fume 2014 93 Chenin Blanc not as racy as Sauvignon Blanc, Chenin finds its most noble representation on the Loire, sometimes with just a hint of sweetness to tame it s driving acidity. 307 chateau de breze, saumur 2016 48 309 domaine vigneau-chevreau, vouvray sec cuvee silex 2015 51 ALSACE heavily influenced by the Vosges mountains, this is the sunniest area in all of France. The sunlight helps mitigate the northern climate and provides a unique influence on the grapes that thrive here. Riesling acid driven with bright, lifted aromatics these tend to be drier than their German counterparts. 321 marcel deiss 2013 61 322 domaine zind-humbrecht 2015 65 Pinot Gris a richer, fuller expression of the Pinot Grigio grape than it s more commonly known Italian interpretation. 325 cave de ribeauville 2014 47 5

FRENCH WHITE BURGUNDY perhaps the most sought after whites in all the world, the only grape is chardonnay, but nowhere else is there so much diversity in one grape. From Chablis to the Macon the differences are staggering but the grape remains the same. Chablis a place, not a grape (the grape is Chardonnay), dominated by a unique soil here known as kimmeridgian marl which is composed of limestone and sea fossils. These wines are laser focused and generally not heavily oaked. 331 domaine gueguen, vosgros 1er cru 2015 72 332 william fevre, champs royaux 2015 56 Cote d or literally the golden slope, these are the most storied vineyards of Burgundy, and while they are still planted to chardonnay the wines tend to carry more new oak, are more floral and citrus-driven than Chablis, with added weight and body. 333 domaine des croix, corton-charlemagne grand cru 2014 264 334 hubert lamy, clos du meix, saint-aubin 1er cru 2014 130 335 jean-philippe fichet, auxey-duresses 2015 105 336 jean-philippe fichet, les chevalieres, meursault 2014 150 337 jean-philippe fichet, meursault 2015 139 Cote Chalonnaise/Maconnaise just south of the cote d or, the hills are more rolling here and the limestone is not as prevalent. The wines tend to be more fruit forward and more approachable than some from the cote d or. 341 domaine a. et p. villaine, les clous aime, cote chalonnaise 2014 76 342 closerie des alisiers, macon milly lamartine 2015 44 Bourgogne Blanc though technically these wines can come from anywhere in Burgundy, often times they are the younger vines of top producers from the above regions. 346 domaine herve azo 2014 44 347 henri boillot 2015 77 348 olivier leflaive, les setilles 2014 61 6

INTERNATIONAL WHITES GERMANY as far north as viticulture is possible, only long days and the mitigating effect of major rivers make great wine possible here. While there are many grapes grown, Riesling is king. With plenty of lift and a range of sweetness levels, these are some of the most food-friendly wines in the world. Listed from driest to sweetest. 351 von hovel, kabinett, scharzhofberg, saar 2013 53 352 robert weil, kabinett, rheingau 2014 63 353 carl loewen, spatlese, laurentiuslay, mosel 2013 66 354 dr. loosen, spatlese, urziger wurtzgarten, fischerei, mosel 2014 68 SLOVAKIA this up and coming wine region is most noted for both their dry and sweet wines with stony minerality and racy acidity. It is known for its Riesling and Tokaji making it a solid competitor to it s German and Hungarian neighbors. 358 chateau bela, dry riesling, juznoslovenska, slovakia 2015 49 ITALY with more indigenous varietals than any other country, there are a wealth of options available. These range from cool climate whites like Friulano in the north to their riper cousins like Falanghina in the south. 360 vermentino, la spinetta, tuscany 2015 53 361 erbaluce, cantina del signore, riflessi, caluso 2015 47 362 falanghina, terredora di paola, corte di giso, campania 2015 48 364 grecanico, cos, pithos bianco, sicily 2013 80 366 pinot bianco, agricola querciabella, batar, tuscany 2012 140 367 white blend, paolo bea, santa chiara, umbria 2010 77 SOUTH AFRICA/OCEANIA these new world whites are all transplants from old world locations. They tend to have more fruit, body and are perhaps less austere than their old world counterparts. 370 chardonnay, hamilton russel vineyards, hemel-en-aarde valley, south africa 2016 75 372 sauvignon blanc, greywacke, marlborough, new zealand 2015 54 373 semillon, brokenwood, hunter valley, australia 2015 52 7

INTERNATIONAL WHITES SPAIN though these grapes are indigenous to Europe, Spanish whites often have enough fruit to masquerade as new world wines. With clean, crisp, focused flavors these are a great lighter bodied alternative. 382 albarino, pazo senorans, rias baixas 2014 60 383 albillo, bernabeleva, navaherreros blanco, vinos de madrid 2014 60 384 godello, rafael palacios, as sortes, val do bibei 2013 77 385 verdejo, ossian, castilla y leon 2010 80 SLOVENIA this neighbor of Friuli offers wines that share very similar profiles as their Italian cousins. 386 ribolla gialla, movia lunar, goriska brda, primorje 2008 74 ROSES 396 domaines bunan, moulin des costs, bandol fr 2016 65 397 villa des anges, pays d oc, languedoc, fr 2016 40 8

DOMESTIC RED, CALIFORNIA Pinot noir a finicky grape, Pinot Noir is very particular about where it s grown. Driven by red fruit and lifted florality, there are range of styles produced in the United States, some are more structured than others with a varying range of oak influence as well. Russian River Valley California dominated by goldridge loam soils and located in a cool pocket of Sonoma, the wines from Russian River tend to be more delicate and floral. 401 cirq, tree house 2013 210 402 emeritus, hallberg ranch 2013 87 403 mossback 2014 50 Sonoma Coast, California the most rural appellation in Sonoma, many of these vineyards are located in the clouds, and the wines show a more brooding, structured character. 405 anthill farms, campbell ranch vineyard, sonoma coast 2014 103 406 b. kosuge, hirsch vineyard, sonoma coast 2011 119 407 failla, Sonoma coast 2014 75 409 kosta browne, gap s crown vineyard 2014 230 410 kosta browne, sonoma coast 2013 131 411 kutch 2013 95 412 kutch, falstaff, sonoma coast 2012 110 413 patz & hall 2014 98 415 rickshaw 2014 44 The rest of California ranging from the cooler climates of Anderson valley in the north to the warmer pockets of the Santa Lucia Highlands, the styles range from delicate and bright to round and velvety. 420 anthill farms, anderson valley 2014 80 421 banshee, sonoma county 2014 57 422 chanin, bien nacido vineyard, santa maria valley 2012 108 423 cuvaison, carneros 2013 82 425 lompoc wine company, santa rita hills 2014 66 426 neely, upper picnic block, spring ridge vineyard, santa cruz mountains 2011 93 428 sandhi, santa rita hills 2012 85 9

DOMESTIC RED, PACIFIC NORTHWEST Willamette Valley, Oregon influenced by both California and burgundy, Pinot Noir from Willamette is distinctly earthier than its California cousins, while perhaps less austere than Burgundy.
