The art of fire-roasting meats was born in the 17th century during the colonial period of Brazil. The creators of this unique cooking technique are the Brazilian cowboys, known as Gauchos. This cooking breakthrough tale occurred over 300 years ago, when an unknown Gaucho fire-roasted the first Brazilian churrasco (choo-has-sco) at a camp-side feast. The churrasco (choo-has-sco) tale has many versions, some say that the first fire-roasted meat was beef-ribs, others ribeye, but apart from nuances this unknown Gaucho changed the Brazilian cuisine forever. For this reason we see the authentic art of roasting fresh meat over hot stone coals, perfectly seasoned with rock salt as a mouthwatering metaphor for our culinary voyage to Brazil. As proud Brazilians who love our country s culture, tradition and obviously food, our founders envisioned a place that would take its guests to Brazil through a unique culinary experience. However the only way of actually realizing this vision is by passion and the wine culture apart from the obvious pairing reasons, shares the same passion that us Brazilians do in hospitality. Its classic profile is full-bodied wines with high tannins and noticeable acidity. PETITE SIRAH It is varietal of red wine grape primarily grown in Australia, California, France, and Israel. It is known as Durif and produces tannic wines with a spicy, plummy flavor. P I C A N H A Prime Part of Top Sirloin MALBEC Is a purple grape variety used in making red wine. The grapes tend to have an inky dark color and robust tannins.
