It actually does matter and it makes a world of difference that a set yoghurt is stable and creamy just as it does for a stirred yoghurt to be precisely what the end customers expects it to be when they taste it. And it must be the same experience every time. Perfecting structure and consistency in stirred yogurt The premium solution for stirred yogurt Produced with the usual high Palsgaard standards Palsgaard AcidMilk 36 offers a solution for the quality conscious and demanding manufacturer. Extensive tests have been carried out comparing various types of milk solid non fat (msnf) with Palsgaard AcidMilk 36. These all prove that when it comes to both improving the viscosity and mouth-feel as well as preventing syneresis, Palsgaard AcidMilk 36 outperforms all msnf. The optimum dosage is 25-4% less than that of e.g. skimmed milk powder (SMP), which could also make it an economically attractive alternative in the production of stirred yogurt. Palsgaard AcidMilk 36 is used in both stirred yogurt produced from fresh milk as well as in recombined milk and it works equally well in low fat yogurt. Palsgaard AcidMilk 347 provides the stirred yogurt with a very creamy consistency and a rich mouth-feel. Furthermore it offers a viscosity which is more than twice as high as the viscosity obtained with e.g. SMP. The clean label solution Palsgaard AcidMilk 316 is the ideal choice when wanting to produce clean label yogurt. Based exclusively on clean label food ingredients Palsgaard AcidMilk 316 is completely without any E-numbers and still it keeps a firm structure and upholds a smooth and creamy consistency of the stirred yogurt. Keeping yogurt drinks stable The premium solution for yogurt drinks Palsgaard AcidMilk 372 is the natural choice in the production of low msnf yogurt drink with living bacteria as well as long life yogurt drink. With its unique functional properties it protects the proteins against heat denaturation at low ph. At the same time it gives a pleasant mouth-feel in the yogurt drink and assures a uniform product throughout the shelf life period. Yogurt drinks are produced in various ways that demand different functional properties from the stabilizer. For yogurt drinks with different levels of msnf Palsgaard AcidMilk 372 helps obtain the right viscosity and storage stability. Furthermore Palsgaard emulsifier and stabilizer systems are developed to work under different processes and product types e.g. yogurt drink with living bacteria and long life yogurt drink. Cost saving potential Thoroughly tested Palsgaard AcidMilk 372 shows outstanding results and offers a better cost-in-use calculation when comparing to a pectin based recipe. It gives a good stability to both yogurt drinks with living bacteria as well as long life yogurt drinks.
