Which means you should take it out of the fridge 45 minutes before serving. The art of ENTERTAINING ENTERTAINING 5 good ideas for hosts... and 5 for guests FOR THE HOST 1 2 3 4 5 To make sure you know what platters to order, ask your guests in advance whether they have any allergies or dietary restrictions. Plan the number of sittings for your guests well in advance. Don t serve too many canapés or appetizers at cocktail hour if you have a large buffet planned. Make sure you have plenty of plates, so you don t have to spend the evening in the kitchen washing dishes. Serve coffee, tea and sparkling water to end the evening on a delicious note. FOR GUESTS 1 2 3 4 5 It s a good idea to arrive a bit later than expected, to allow your host extra time to get ready. Bring a small bread and butter gift, such as a bouquet of flowers, a bottle of wine or a box of chocolates. Propose a toast to your host! This formal thank-you is sure to be appreciated, especially after an enjoyable evening that s clearly taken a lot of preparation. Try to avoid looking at your phone. Your hosts will be grateful. If the food is good, say so! A sincere compliment is always appreciated. WINE AND FOOD PAIRINGS COLD CUTS A light red wine, such as a Beaujolais, makes an excellent match with cold cuts and deli meats. CHEESE Red wine is often recommended, but white wine can be delicious with cheese especially soft ripened varieties and goat cheese. POULTRY Feel free to try a light red wine such as Pinot noir to vary the flavours, instead of the ever-present white wine. SMOKED FISH Opt for a Chardonnay with a light woody note ideal with smoked salmon. PORK The full-bodied notes of a Côtes-du-Rhones or a New World wine are simply heavenly with pork.
