BANANA BREAD > BANANA BREAD > Banana Bread Preparation Time: 10 minutes Bake Time: 1 hour 20 minutes Serving Size: 16 slices ½ cup Butter ¾ cup Sugar 2 Eggs 1 tsp Vanilla 3 Bananas, large, mashed 2 cups Rice Flour ¼ cup BiPro, natural unflavored 2 tsp Baking Powder ½ cup Pecans, chopped 1. Preheat oven to 325 F. 2. In a large bowl, cream butter and sugar. Beat in eggs, vanilla and bananas. 3. Stir in rice flour, BiPro and baking powder until moistened. Stir in pecans. 4. Pour into a greased 5 9 inch loaf pan. Bake for 1 hour and 20 minutes. Let cool 10 minutes before removing from pan.
BLUEBERRY MUFFINS > BLUEBERRY MUFFINS > Blueberry Muffins Preparation Time: 10 minutes Bake Time: 25 minutes Serving Size: 12 servings 1 cup Brown Rice Flour ½ cup Potato Starch ½ cup Tapioca Flour ⅓ cup + 1 Tbsp Sugar ¼ cup BiPro, natural unflavored 2½ tsp Baking Powder ¾ tsp Salt ¾ cup Skim Milk ½ cup Canola Oil 2 Eggs ½ tsp Vanilla 1½ cups Blueberries 1. Line muffin tins with paper. Preheat oven to 400 F. 2. Stir together dry ingredients. Make a well in center of mixture and add milk, oil, eggs and vanilla. 3. Stir together just until ingredients are moistened. Gently fold in blueberries. 4. Divide mixture into muffin tins. Bake for 25 minutes.
BROWNIES > BROWNIES > Brownies Preparation Time: 15 minutes Bake Time: 30 minutes Serving Size: 16 servings ¾ cup Sugar 2 Eggs ⅔ cup Vegetable Oil ½ cup Rice Flour ¼ cup Cocoa Powder 2 Tbsp BiPro, natural unflavored ¼ tsp Xanthan Gum ½ cup Walnuts, chopped ⅓ cup Chocolate Chips 1. Preheat oven to 350 F. 2. Beat sugar and eggs until light and fluffy. Gradually add oil, then the dry ingredients. Blend together. 3. Stir in nuts and chocolate chips. 4. Pour into a greased 9-inch square pan. Bake for 30 minutes.
BRAZILIAN CHEESE BREAD > BRAZILIAN CHEESE BREAD > Brazilian Cheese Bread Preparation Time: 50 minutes Bake Time: 20 minutes Serving Size: 12 servings ½ cup Butter (melted) ⅓ cup Milk ⅓ cup Water 1 tsp Salt 2 cups Tapioca Flour 2 Tbsp BiPro, natural unflavored 1 tsp Garlic ⅔ cup Parmesan Cheese 1 Egg 1. Pour butter, water, milk and salt into a large saucepan and place over high heat. 2. When the mixture comes to a boil, remove from heat immediately, and stir in tapioca flour, garlic and BiPro until smooth. 3. Set mixture aside for 30 minutes. 4. Stir in cheese and egg and mix well. 5. Form tablespoon size balls with tapioca floured hands and place on baking sheet. 6. Bake in 375 F oven for 15-20 minutes.
CHOCOLATE CHIP COOKIES > CHOCOLATE CHIP COOKIES > Chocolate Chip Cookies Preparation Time: 10 minutes Bake Time: 8 minutes Serving Size: 24 Cookies ½ cup Brown Sugar ¼ cup Sugar ¼ cup Butter 1 Egg 1 tsp Vanilla 1 cup Rice Flour ⅓ cup Almond Flour 2 Tbsp BiPro ½ tsp Salt 1 tsp Guar Gum ½ tsp Baking Soda 1 cup Chocolate Chips 1. Cream together sugars and butter. Add egg and vanilla and mix well. 2. Add rice flour, almond flour, BiPro, salt, guar gum and baking soda. Mix well. Stir in chocolate chips. 3. Drop by teaspoonful onto cookie sheet. 4. Bake at 350 F for 8-10 minutes.
CHOCOLATE CAKE > CHOCOLATE CAKE > Chocolate Cake Preparation Time: 25 minutes Bake Time: 30 minutes Serving Size: 8 servings 2 Tbsp Vegetable Shortening 2 Tbsp Butter ¾ cup Sugar 2 Eggs ½ tsp Vanilla ¼ cup White Rice Flour ¼ cup Cornstarch 3 Tbsp BiPro, natural unflavored ⅓ cup Cocoa Powder 1¼ tsp Baking Powder ½ tsp Salt ⅓ cup Milk 1. Cream shortening, butter and sugar on low speed for 2 minutes. Scrape bowl. Mix at medium speed for 3 minutes. 2. Add eggs and vanilla and mix well. 3. Mix together rice flour, cornstarch, BiPro, cocoa powder, baking powder and salt. Add alternately with milk, mixing well and scraping bowl after each addition. Mix on medium speed for 2 minutes. 4. Pour batter into a round 8 inch cake pan with only the bottom greased. 5. Bake at 365 F for 30 minutes.

Combine the dry ingredients. 2. Separate egg yolks and whites and beat separately. Blend the egg whites, milk and oil into the egg yolks. 3. Fold the egg mixture into the dry ingredients, mixing just until moistened. 4. Spread into a greased 8 inch square pan and bake at 400 F for 20-25 minutes.

Mix all dry ingredients in a large bowl. Add eggs and stir until combined. 2. Add milk and stir again. (You need to get past the gelatinous, sticky stage, but you shouldn t over mix the pancake batter.) The batter should still have some lumps. 3. Scoop batter onto heated pan or griddle. Cook about 1-1½ minutes, or until bubbles appear on the surface. Turn pancakes and cook 1-1½ minutes more.
